Tangy Raw Mango Chutney

TANGY RAW MANGO CHUTNEY

Hello, and welcome friends, once again. Today I’m sharing a super easy, tangy, tasty chutney made from raw mango. It’s a summer delight and goes well with your lunch and dinner platters. Hope you like it. So let’s start—

Ingredients:

  1. Raw Mangoes – 3.
  2. Whole Coriander – 1 tsp.
  3. Five Spices – 1 tsp.
  4. Dry Red Chillies – 1.
  5. Salt – According to taste.
  6. Sugar – 1 tsp.
  7. Edible Oil(any oil can be used) – 1/2 tsp.
  8. Coriander or Mint leaves – Optional.

STEPS.

Wash, wipe and scrape the mangoes. Now cut them out.

Step 2

Roast the spices in a pan.

Step 3

Grind the mango pieces along with the roasted spices to a fine paste.

Step 4

Now mix in salt and sugar and then lastly your oil. In this chutney, you can use any oil. Take it out in a bowl.

Note Point:-You can add some coriander or mint also while grinding the chutney to get an even better flavor!

Oil-Free Fish

OIL-FREE FISH

Hello friends, welcome back. Today I’ll share a simple recipe of oil-free fish curry with veggies which is really healthy and super easy to prepare. It is a great recipe for me, I hope you like it too. The recipe is as follows:-

Ingredients:

  1. Fish(any fish can be used, small or big ) – 4 pieces.
  2. Okra – 1/2 bowl.
  3. Mustard and Cumin Paste – 4 tbsp.
  4. Turmeric Powder – 1 tsp.
  5. Red Chilly Powder – 1 tsp.
  6. Garlic Paste – 2 tsp.
  7. Tomato Puree – 2 tbsp.
  8. Dry Mango Powder – 2 tsp.

For Tempering:-1.Five Spice -1 tsp

Bay Leaf -1

STEPS

Step 1 

Wash the fish. Rub some salt, turmeric powder and garlic paste on them. Now roast the pieces on a non-stick pan without even one drop of oil. Similarly cut the okra and roast it in a non-stick pan, here again, without any oil.

Step 2

Take a kadhai and add the five spice in it along with the bay leaf. When it splutters add the garlic paste and red chilly powder and then add the tomato puree. Now add the mustard and cumin paste in it. After two minutes, add the water for the gravy. Now stir in the roasted okra and roasted fish and then mix in some dry mango powder. Add salt lastly according to taste. Cover and cook the dish on a medium flame for two-three minutes. Here I have used okra as my choice of veggie in combination to which you can use others too like aubergine, potato, cauliflower, radish, carrot, and broccoli. Finally, garnish with cilantro.

IMG_3050.JPGOur Oil-Free Fish is ready. It’s a healthy recipe good for diabetics and cholesterol patients and for other health freaks also. In this recipe, I haven’t used even one drop of oil but it will not affect its taste in the least. The curry gravy should not be very thick. It is a great dish complete with taste and health and can be best had with steamed rice, onion, cucumber, tomato, lemon salad and some curd.

Fish Fritters

FISH FRITTERS

Hello and welcome dear friends again. Today I’ll be sharing a snack recipe of fish fritters which is very crispy, crunchy, super tasty and its making too is fun. Kids and everyone else are going to like it well. And I hope it makes into your choice list too. So let’s start with making it—

Ingredients:-

  1. Boneless Fish Fillet(cut into thin strips)-150 gms.
  2. Gram Flour – 200 gms.
  3. Semolina – 50 gms.
  4. Ginger -Garlic Paste – 1 tsp.
  5. Nigella seeds -1/2 tsp.
  6. Turmeric Powder – 1 tsp.
  7. Red Chilly Powder – 1 tsp.
  8. Cumin Powder – 1/2 tsp
  9. Garam Masala Powder- 1 tsp.
  10. Dry Mango Powder or Amchoor Powder – 1 tsp.
  11. Salt – According to taste.

For Sprinkling:-Chaat Masala.

For Serving:-Schezuan Sauce.

STEPS

Step 1

Wash and cut the boneless fish fillets in strips. Now sprinkle a pinch of salt over them.

Step 2 

Take a bowl and add gram flour and semolina in the given amounts in it. Next add the nigella seeds, turmeric powder, red chilly powder, cumin powder,garam masala, dry mango powder, salt and ginger-garlic paste and using water make a thick batter of it.

Now heat a kadhai and add oil to it. When it is hot enough take the fish strips and coat them in the above batter and drop them one by one in the oil.Fry the strips till golden brown and drain on a tissue paper.

Our Fish Fritters are ready.

Sprinkle some chaat masala over them and serve with schezuan sauce or any other dip of your choice.

Corn,Panir And Cabbage Mini Triangles

CORN, PANIR AND CABBAGE MINI TRIANGLES

Hello dear friends.Welcome to my cooking corner once again. Today I’ll be sharing an evening snacks recipe of corn, panir and cabbage mini triangles which are super crispy and with a fresh crunch to them which can be had with tea or coffee and really will make moods better. A fun idea for picnics, parties, get-togethers and the like. Let’s start with its making—-

Ingredients:

For the wraps:-

  1. Refined Flour(Maida) – 300 gms.
  2. Salt – A pinch.
  3. Water – For kneading.
  4. Vegetable Oil – 1 tbsp.

For the filling:-

  1. Cabbage – 150 gms.
  2. Panir – 50 gms.
  3. Corn kernels – 3 tbsp.
  4. Ginger(grated)- 1/2 tsp.
  5. Garam Masala – 1 tsp.
  6. Maggi Masala – 1 pkt.
  7. Dry Mango Powder – 1/2 tsp.
  8. Salt – According to taste.

STEPS.

Step 1 

Firstly take the refined flour in a bowl and mix a pinch of salt and vegetable oil in it. Then knead it using water to make a pliable dough.

Step 2

To make the triangle filling chop the cabbage very finely. Cut the panir into very small cubes. Boil the corn kernels. Now take a bowl and add the chopped cabbage into it along with the panir and add some corn kernels to it. Add salt,garam masala, grated ginger, Maggi masala, dry mango powder to it. Now mix everything well.

Step 3

Now make a small tortilla from the dough using a rolling pin and cut it into halves using a butter knife. Take one portion of the cut tortilla and fill it with some of the filling and then give it a mini samosa shape and seal it well by using some water. Make all the triangles in the same way. You can change the shape of the triangles also and give it the shape you want.

Step 4 

Now heat oil in a kadhai and when its quite hot drop the mini triangles one by one in the oil and fry them till golden browned. Take them out and drain the excess oil on a tissue paper.

Our Corn Panir And Cabbage Mini Triangles are ready. Serve them with Thai sweet chilly sauce,peri-peri hummus or mayonnaise.

Potato and Keema Tikkis

POTATO AND KEEMA TIKKIS

Hello friends. Today I’ll be sharing with you a tikki recipe made with chicken keema and potatoes which is perfect as evening snack quite tasty and spicy. I like this recipe a lot and is great for weekend surprises to be had with friends and family. So let’s start with making it—-

Ingredients:-

For the tikkis:

  1. Potato – 4.

To prepare keema fry:

  1. Chicken Keema – 100 gms.
  2. Onions(finely choped) – 1.
  3. Ginger – Garlic paste – 1 tsp.
  4. Tomato Puree – 1 tbsp.
  5. Cumin Powder – 1 tsp.
  6. Red Chilly Powder – 1 tsp.
  7. Turmeric Powder – 1 tsp.
  8. Asafoetida – A pinch.
  9. Garam Masala – 2 tsp.
  10. Cashews and Raisins – A handful.
  11. Cumin – A pinch.
  12. Vegetable Oil – For shallow frying.
  13. Mint Leaves – 3-4.
  14. Salt – According to taste.

For Garnishing: Coriander Leaves.

STEPS

Step 1 

To make the keema fry, take a pan and add 1 tsp of vegetable oil along with a sprinkling of cumin to it. When the cumin crackles add a pinch of asafoetida and finely chopped onions. Fry it till half done and then add the remaining ingredients- Cumin powder, red chilly powder, turmeric powder,garam masala,ginger-garlic paste, salt and the dry fruits mentioned above. Now add 2 tbsp of tomato puree and fry it all for two minutes. Next, add the chicken keema and mint leaves and adding some water fry all again for five minutes till the water dries up. The keema fry is ready. Let it cool.

Step 2

Boil 4 potatoes, deskin and mash them along with some freshly chopped coriander leaves. Mix the mashed potatoes in the keema fry and make tikkis out of them in any shape you want.

Step 3

Shallow fry the tikkis by coating them in some cornflour or gram flour and serve them with green chutney and onion rings.

Shallow Fried Gram Flour Patties In Onion Gravy

SHALLOW FRIED GRAM FLOUR PATTIES IN ONION GRAVY

Hello and welcome dear buddies. Today I’ll share a curry recipe of gram flour patties in a gravy of onion. It’s spicy and has a special taste to it. It is a unique dish best had in lunch with steamed rice and fried poppadums. I like this dish inspired by Rajasthani cuisine. So let’s start with its making—

Ingredients:-For the patties.

  1. Gram Flour – 250 gms.
  2. Salt – According to taste.
  3. Turmeric powder – 1 tsp.
  4. Red Chilly powder – 1 tsp.
  5. Garam Masala – 1 tsp.
  6. Asafoetida or Hing – 2 tsp.
  7. Cumin – 1 tsp.
  8. Vegetable Oil – 2 tsp.

For the gravy:-

  1. Onions – 2.
  2. Ginger-Garlic Paste – 1 tsp.
  3. Turmeric powder – 1 tsp.
  4. Red Chilly Powder – 1 tsp.
  5. Curry leaves – 1-2.
  6. Coriander Powder – 1 tsp.
  7. Cumin Powder – 1 tsp.
  8. Garam Masala – 2 tsp.
  9.  Subzi Masala – 1 tsp.
  10. Tomato Puree – 2 tbsp.
  11. Vegetable oil – 2 tbsp.
  12. Salt – According to taste.

STEPS.

Step 1

To make the patties, take a bowl and add the gram flour in it. Now add cumin, turmeric powder, red chilly powder, asafoetida,garam masala and salt to it and make a batter, neither too thin nor too thick from it.

Now take a heavy bottomed vessel and add 1 tsp of oil and spread the oil all over the vessel. Now pour the batter into it and let it cook on low flame for two minutes. The batter will solidify and become thick gradually. Now take a plate and spread little oil over it, spread the batter in it and press it downwards with the palm of your hand and let it dry for two minutes. Now cut out any shape from it. Keep the patties aside.

Step 3

Now shallow fry these gram flour patties in a non-stick pan until golden browned. Keep aside.

Step 4

In a vessel add 1 tsp of oil and some curry leaves. Now grind the onion to a paste. Next add coriander powder, cumin powder, turmeric powder, red chilly powder, sabzi masala,garam masala, tomato puree and fry it for two minutes. Now add the onion and ginger-garlic paste and fry again. When the masalas are done add some water to the masala mix to make the gravy. It should boil for three minutes. Now add the shallow fried patties and switch off the gas.

Garnish it with some cilantro and some fresh cream, though the second ingredient is optional.

Our Gram Flour Patties In Onion Gravy is ready. Serve it with steamed rice, chapati and along with lunch and dinner platters.

Basa Burgers

BASA BURGERS

Hello dear friends, welcome back. Today I am going to share with you a great idea of making burgers with a creative twist to it by using basa fish patties in it. It is delicious, wholesome and truly satisfying and is a great snack idea to be had, according to me, anytime and everytime. So let’s start with its making—

Ingredients:

For the burgers:

  1. Burger Buns – 4.
  2.  Carrot and cucumber no fat sandwich spread. (you can use mayonnaise also).
  3. Hummus.
  4. Salt – According to need.
  5. Cucumber and Tomato – 1 piece each per burger.
  6. Lettuce Leaves(fresh) – 2.

For frying the fish fillets:-

  1.  Basa Fish Fillets-2.
  2. Split Gram Flour – 1 cup.
  3. Red Chilly Powder – 1 tsp.
  4. Garam Masala – 1 tsp.
  5. Ginger-Garlic paste – 1/2 tsp.
  6. Turmeric powder – 1 tsp.
  7. Britannia cheese singles – 2.
  8. Oregano.
  9. Chaat Masala.
  10. Salt-According to taste.

STEPS.

Step 1 

Firstly I will fry the fish fillets. To make the fish fry, take a bowl and put the gram flour in it. In it, we will add the remaining ingredients like salt, turmeric powder, red chilly powder,ginger-garlic paste,garam masala and make a thick batter out of it using some water.

Step 2 

Now take the fillets and dip them in this batter and shallow fry them till golden brown.

Step 3 

To make our burgers, take one bun and spread some carrot and cucumber spread onto it. Next spread some hummus onto it. You can use mayonnaise or other kinds of hummus also, it’s according to your wish. Now place a cheese single on the bun and then put one of the fried fish pieces onto it. Lastly, end it by placing a lettuce leaf, then cut cucumber, tomato, and onions and sprinkle some oregano and chaat masala.

Our Basa Fish Burgers are ready in the blink of an eye. They are instant, handy, tasty and wholesome.
