PICKLED STRAWBERRIES

Hello friends. Today I’ll be making a special pickle from a very special ingredient, strawberries. This is a recipe I cooked up in my mind after seeing lots of ripe strawberries in my kitchen. I have made another recipe from these, strawberry chutney but I wanted to utilize all of them. So this idea came to my mind to mix raisins in them and bang, came out this tasty, successful recipe. It can be best had with stuffed paranthas, pooris, tandoori rotis. I really loved this accidental recipe and I surely think you too will. So the recipe is as follows:—-

Ingredients:-

  1. Strawberry-250 gms
  2. Raisins-A handful
  3. Black and White Salt-According to taste
  4. Black Mustard Powder-1 tbsp
  5. Red Chilly Powder-1 tsp
  6. Pickle Masala-1 tsp
  7. Roasted and Powdered Cumin-1/2 tsp
  8. White Vinegar-2 tbsp

For the tempering or tadka:-

  1. Five Spice-1 tsp
  2. Asafoetida- A pinch
  3. Fortune Vegetable Oil-1 tbsp

STEPS

Step 1

Wash, cut and dry the strawberries into medium-sized pieces.

Take a wok. Add oil, five spice, and asafoetida to it. When it browns add the strawberries and raisins and stir for one minute.

Step 3

Now add all the remaining ingredients, both the salts, black mustard powder, red chilly powder, pickle masala and roasted cumin powder and then switch the gas off. Next, add some vinegar to it.

Store the pickle in a jar and use it from the next day of making. The proportion of the masalas must be adequate in the pickle.

Strawberry Chutney

STRAWBERRY CHUTNEY

Hello friends and welcome back. Today, I was wondering about the strawberries I had in my kitchen and what could be done with them when creativity struck me well and I decided to come up with a unique combination chutney, that of strawberries, apple, and mint, giving it a very refreshing touch, which on experimenting came out just very fine. So I decided to share it with you all. It’s a simple not too sweet and a bit tangy chutney which you can use in a multipurpose way as a spread, a dip, a chutney which in any manner will taste great. It has the freshness and taste that will surely impress you well. So friends do try making this quick chutney in your kitchens. Now let’s start with its making—-

Ingredients:

  1. Ripe Strawberry-250 gms
  2. Apple-1/2 of 1
  3. Green Chilly-1
  4. Mint-5 leaves
  5. Black Salt and White Salt- According to taste
  6. Sugar or Sugar free-1/2 tsp,3 pellets
  7. Lemon Juice-1 tsp

Step 1

Step 2

Put the above ingredients along with mint in a chutney jar and grind to a smooth paste.

Step 3

Take out the chutney in a bowl. Add the black and white salt, sugar or sugar-free and lemon juice and mix it up well.

Potato Rajma And Keema Tikki Burger

POTATO RAJMA AND KEEMA TIKKI BURGER

Hello and welcome back friends to my food corner again. In one of my earlier blogs, I have prepared a burger recipe similar to this one the only difference being that in that blog I had used basa fish patties and in this one, I have made patties from potato, kidney beans, and chicken keema. Both of the burgers were super and I hope you too have liked them. Burger is a super fun, instant fast food recipe which is healthy, tasty and the most important thing is its made instantly. You can count on this recipe when you are very busy to cook up meals or when you are having other works in hand. So let’s make the burgers—–

Ingredients:-

  1. Burger Buns-2
  2. Chicken Keema-100 gms
  3. Potato(boiled)-1
  4. Rajma or Kidney Beans-50 gms
  5. Onion-1
  6. Ginger-Garlic Paste-1 tsp
  7. Dry Mango Powder-1 tsp
  8. Cumin Powder-1 tsp
  9. Turmeric Powder-1 tsp
  10. Red Chilly Powder-1 tsp
  11. Garam Masala- 1tsp
  12. Lettuce-2 leaves
  13. Cucumber and Carrot spread-2 tbsp
  14. Peri Peri Dip-1 tbsp
  15. Mayonnaise-2 tsp
  16. Tomato ketchup-1 tsp
  17. Green Chilly Sauce-1 tsp
  18. Raisins-1 tsp
  19. Egg-2
  20. Gram Flour(for binding)-1 tbsp
  21. Green Chillies(finely chopped)-2
  22. Vegetable Oil-2 tsp

STEPS

Step 1

Boil the potato and the rajma. Mash them together. Beat the eggs in a bowl. Finely chop the onions and green chilies.

IMG_4625.jpgTo prepare the keema tikki, take a pan, add vegetable oil to it. Add the finely chopped onions and green chilies, fry for one minute. Add the ginger-garlic paste and beaten egg and fry again for two minutes. Next add the turmeric powder, red chilly powder, cumin powder, dry mango powder, chaat masala, garam masala and saute them. Now add the keema, mint leaves and gram flour and saute for five minutes. Next mix in the potato-rajma mixture in the pan.Fry everything together again. The addition of beaten eggs and gram flour helps in binding the mixture well. Lastly, sprinkle some raisins.

Step 2

Make patties out of the batter. And shallow fry them. To make the burger cut out the burger buns in half. Apply the cucumber carrot sandwich spread, mayonnaise on one of the buns and the peri peri garlic dip on the other. Place the lettuce leaf and then put the keema tikki on each of them. Add the tomato and onion cut into rounds earlier. You may also add cheese to the burgers but here I have not done so. Also, add tomato ketchup if you wish to.

Our yummy Potato Rajma and Keema Tikki Burger is done. Enjoy it as a snack along with some french fries and a fruit juice of your choice.

Beans And Strawberry Pickle

BEANS AND STRAWBERRY PICKLE

Hi, my dear buddies. Today’s recipe is an experimental twist which came to my mind today. This combination is really very stylish and unique and too tasty to come true. It can be had with chapatis, naans, bread and anything you wish to. It is a sweet-tangy combination of a fruit and a veggie and is really awesome and easily made. Do make it and enjoy this wonderful pickle, it really can be your treat to happiness.

Ingredients:-

  1. French Beans- 250 gms
  2. Strawberry-150 gms
  3. Salt-According to taste
  4. Turmeric Powder-1 tsp
  5. Red Chilly Powder-1 tsp
  6. Yellow Mustard Powder-1 tbsp
  7. Achaar Masala-1 tsp
  8. Asafoetida-1/2 tsp
  9. Five Spices-1/2 tsp
  10. Roasted Five Spices Powder-1/2 tsp
  11. Fortune Mustard Oil-2 tbsp
  12. Sugar or Sugarfree- 1/2 tsp
  13. Vinegar-2 tbsp

Wash and cut the strawberries and french beans. Blanch only beans.

Step 2

Take a pan. Add mustard oil, five spices, and asafoetida. Now add the blanched beans and fry for 2 minutes on high flame. Add the strawberries and fry it too. Next add the masalas, salt, turmeric powder, red chilly powder, yellow mustard powder, achaar masala, roasted five spices powder, sugar or sugar-free and switch off the gas. Lastly, add the vinegar and store in a jar.

DSC01185.JPGOur Beans and Strawberry pickle is ready. It is an instant pickle and can be used as it gets made. It is a slightly sweet and salty pickle and is sure to delight your taste.

Potato Sambhar

 POTATO SAMBHAR

Hello everyone. Welcome to my cooking corner again. People like to eat, enjoy and learn different cuisines from the world over which are made everywhere. In India also many cuisines are famous but South Indian delicacies have a special place in all households in here. We make South Indian varieties like idlis, dosai, medu vadas very frequently in our breakfast menu and children too like them a lot. And when we make these mentioned items we have to complete with sambhar and coconut chutney. Sambhar can be made in many ways, some of them being the mixed vegetable sambhar, onion sambhar, garlic tamarind sambhar and tomato sambhar. But today I will be making a different version of the regular veggie sambhar recipe replacing the veggies with our very common veggie ingredient of every kitchen, potatoes. It is really very handy and is all complete with a super taste and tangy twist. So do make it in your homes and let me know how it turned out to be. The recipe is as follows—-

Ingredients:-For the Potato Sambhar—

  1. Split Pigeon Pea’s dal- 200 gms
  2. Potatoes(boiled)-1
  3. Sambhar Masala-2 tbsp
  4. Turmeric Powder-1 tsp
  5. Red Chilly Powder-1 tsp
  6. Tomato-1
  7. Green Chillies-2
  8. Tamarind Paste-1 tsp
  9. Salt-According to taste

For the tadka:

  1. Black Mustard-1 tsp
  2. Curry Leaves-5-6
  3. Asafoetida-A pinch
  4. Vegetable Oil-1 tbsp

Wash the dal and pressure cook it with water, salt, and turmeric powder till done. Boil and peel the potatoes and mash them. Chop the tomato, green chilies. Cut the onions roughly and blanch them.

Step 2

DSC01160Take a kadhai and add vegetable oil. Add the black mustard, curry leaves, asafoetida and on spluttering add the roughly chopped blanched onions. Fry it and then add the chopped tomato and red chilly powder and fry it for five minutes. Next, add the mashed potatoes and fry it well for four minutes and add the dal to it. Also, add the tamarind paste. Add the sambhar masala and let it simmer on medium flame for ten minutes.

Our Potato Sambhar is ready to be served with steamed idlis and coconut chutney.

Coconut Chutney

Ingredients:

  1. Coconut-200gms
  2. Split Bengal Gram-100 gms
  3. Green Chillies-2
  4. Fresh Curd-1 tbsp
  5. Salt-According to taste

For the tadka:

  1. Black Mustard-1 tsp
  2. Curry Leaves-3-4
  3. Asafoetida-A pinch
  4. Vegetable Oil-1 tsp

STEPS

Step 1

Cut the coconut into small pieces. Roast the Bengal gram or chana dal. Chop the green chilies and fresh coriander.

Step 2

Grind the coconut with roasted dal and green chilies. Take out in a bowl. Add the salt and fresh curd.

Step 3

Temper the chutney by adding some oil in a pan. To it add the black mustard, curry leaves, and asafoetida and let it splutter. Pour this tempering in the chutney.

Our Coconut Chutney is done. Garnish it with chopped fresh coriander.

Spicy Fish Bhel

SPICY FISH BHEL

Hi, friends welcome back. Today I want to share a bhel recipe with you. In Delhi, chaats and bhel are very popular and are readily available in any season at any food joints in the city. Delhi is a famous food destination in India and out of its famous dishes, one that instantly comes to mind is a Bhel and there are varieties of them which are made here and enjoyed by everyone. Who does not like to enjoy a sweet-tangy, spicy bhel and have all the fun? Today I have made a bhel with fried fish strips and you too can try it at home. So let’s start with making our Spicy Fish Bhel

Ingredients:-

  1. Fish fillet(any kind)-50 gms
  2. Beaten Rice -100gms
  3. Sweet Corn Kernels-2 tbsp
  4. Cashews and Raisins-3 each
  5. Potato(boiled)-1
  6. Croutons(fried or roasted)-3-4
  7. Apple(cubed)-1/2 of 1
  8. Coconut(diced and raw)-5 small pieces
  9. Besan Sev-1 tbsp
  10. White and Black Salt-A pinch
  11. Black Pepper-A pinch
  12. Green Chillies-1
  13. Chilly Flakes-1 tsp
  14. Lemon Juice-1 tsp
  15. Chopped fresh coriander-A small bunch
  16. Green and Red Chutney-optional

Cut the fish fillet into long strips and marinate with salt turmeric and red chilly powder. Fry them until golden brown. Take a pan, add some butter and toss the sweet corn into it for two-three minutes. Roast the cashews. Chop the apples into small pieces along with fresh coriander and green chilies. Chop the coconut into long strips. Boil the potato, peel it and cut it into small cubes and fry them until browned.

Step 2

Now take a pan and add oil. Fry or roast the beaten rice. Make the croutons.

Now we will make our bhel. For that, take a bowl. Add all the above-prepared ingredients and sprinkle some white and black salt, pepper powder, red chilly flakes, besan sev, chaat masala to it and toss everything well. Add the lemon juice too. You can add some green and red chutney also which I have not added here.

Our Spicy Fish Bhel is ready. Serve it as a brunch idea and enjoy it with hot tea or any other beverage.
