Oil-Free Sesame Chicken

OIL-FREE SESAME CHICKEN

Hello, friends welcome to my corner again. Today I’ll be sharing a very flavorful and delighting recipe of chicken curry made with a slight twist in the regular ingredients of making it. I had just a bowl of chicken left today and I was having some toasted and salted almonds while going through my refrigerator and so I decided to make this curry adding some sesame too. It turned out great and my family enjoyed it with plain chapatis and some salad. I decided to share it with you all and I hope you will like it well because it is really not disappointing at all. So let’s start making it—–

Ingredients:

  1. Chicken(curry-cut)-250 gms
  2. Onions-3
  3. Green Chillies-2
  4. Ginger-Garlic Paste-1 tsp
  5. Curd-1 tbsp
  6. Tomato Puree-2 tsp
  7. Turmeric Powder-1 tsp
  8. Red Chilly Powder-1 tsp
  9. Cumin Powder-1 tsp
  10. Chicken Masala-1/2 tsp
  11. Garam Masala-1/2 tsp
  12. Cumin-1 tsp
  13. Salt-According to taste

To be ground into a paste—-

  1. Walnuts-2
  2. Almonds-2
  3. White Sesame-1tbsp

STEPS

Step 1

IMG-5092.JPGWash the chicken. Chop the onions, green chilies roughly. Grind the masalas to be made into a paste.

Step 2

Take a kadhai.  We will not add any oil in here as we are making it oil-free. Add the chopped onions and green chilies. Fry them till half browned. Now add the ginger-garlic paste, fry it for two minutes. Then add the tomato puree. Fry for a minute. Now add the dry masalas, salt, turmeric powder, red chilly powder, cumin powder, chicken masala, garam masala, and curd and fry them for five minutes. Now add the ground masala paste and fry everything again for two minutes. When the masalas are half-fried add some water and the chicken and cook it till chicken is done.

IMG-5088.JPGOur Oil-free Sesame Chicken is done. Garnish with kasuri methi and fresh cream. Serve it with steamed rice, tandoori rotis, naan, wheat chapatis or anything you like. It is the healthiest version of curried chicken being packed with hundred percent taste and health. So do make it surely and enjoy.

Mashed Green Peas And Potato Curry

MASHED GREEN PEAS AND POTATO CURRY

Hello friends. If someday, you get bored by the regular preparation of your lunch and dinner platters of rice, dal chapatis and subzis or when you want to go creative and healthy, the hassle-free way then you can make this Bihari style traditional green peas curry which is easy to make,very tasty and a definite good change for your boredom. So let’s try it. The recipe is as follows:—-

Ingredients:-

  1. Green Peas-250 gms
  2. Potatoes-1(big)
  3. Onions-2
  4. Green Chillies-2
  5. Turmeric Powder-1 tsp
  6. Red Chilly Powder-1 tsp
  7. Coriander-Cumin Powder-1 tsp
  8. Kitchen King Masala-1 tsp
  9. Garam Masala-1 tsp
  10. Tomato Puree-2 tbsp
  11. Dry Mango Powder or Amchoor Powder-1 tsp
  12. Kasuri Methi-1/2 tsp
  13. Salt-According to taste
  14. Cilantro-For Garnishing

For the tempering or tadka—-

  1. Cumin- 1 tsp
  2. Asafoetida-A pinch
  3. Vegetable Oil-1 tbsp

STEPS

Step 1

IMG-5081.JPGFirstly pound the green peas in a masher till half mashed. Chop the onions and green chilies and the cilantro. Boil the potatoes and cut them into cubes.

Step 2

Take a kadhai. Add some vegetable oil, cumin, and asafoetida to it. When it splutters, add the chopped onions and green chilies to it. Half-fry the onions and then add the masalas namely salt, turmeric powder, red chilly powder,coriander-cumin powder, kitchen king masala, garam masala and fry for two minutes. Now add the tomato puree kasuri methi and dry mango powder or amchoor powder and fry again for two minutes. Now add the half-mashed peas and boiled potatoes and water to make the gravy. Boil the gravy for five minutes. Lastly, add the freshly chopped coriander.

Rice Flour And Split Black Gram Pancake

RICE FLOUR AND SPLIT BLACK GRAM PANCAKE

Hi friends. Today I’ll be sharing an easy to make and tasty to eat snack or breakfast recipe which I am sure will be liked by you all. It is a salty pancake made by mixing rice flour with the ground split black gram or chana dal along with onions, green chilies, and light seasonings. It is tastier, crunchier and can be had with peas curry or chutneys. You can try it as a morning breakfast idea or as a snacky pack and enjoy making and eating it both. So let’s start with the making of Rice Flour and Split Black Gram Pancakes:—

Ingredients:-

  1. Rice Flour-200 gms
  2. Split Black Gram-100 gms
  3. Onion-1
  4. Green Chillies-2
  5. Cumin-1 tsp
  6. Asafoetida-A pinch
  7. Coriander-Cumin Powder-1 tsp each
  8. Red Chilly Powder-1 tsp
  9. Garam Masala-1 tsp
  10. Turmeric Powder-1/2 tsp
  11. Dry Mango or Amchoor Powder-1 tsp
  12. Salt-According to taste
  13. Coriander Leaves-For Garnishing

STEPS

Step 1

Soak the Split Black Gram overnight. Grind it slightly coarsely the next morning. Chop the onion, green chilies and coriander leaves finely.

Step 2

Take a bowl and add to it the ground dal, the rice flour, asafoetida, cumin, salt, turmeric powder, red chilly powder,coriander-cumin powder,garam masala, dry mango powder, chopped onion, green chilies and lastly coriander leaves.

IMG-5061.JPGMix everything nicely adding some water to make a thick batter out of it.

Step 4

Heat a non-stick pan and grease it with some oil. Now take small dollops of the batter with a ladle and spread it on the pan making small dosai-like pancakes out of it.

Step 5

Fry it well on both sides till golden browned. Take out on a tissue paper.

Our Rice  Flour And Split Black Gram Pancakes are done. Serve them with green and red chutneys(the recipe of which has been shared in another blog).

Chicken And Vegetable Stew

CHICKEN AND VEGETABLE STEW

Hello, friends welcome again. Today I did something different from making authentic Indian dishes, rather I decided to make a Thai-inspired dish of chicken and vegetable stew. Its a real comfort food of old-school idea and is truly wholesome, creamy and flavorful. It will really let you taste the magic of Thailand and is made too quick to believe it. With just the right set of ingredients and mild spice seasonings, it will give you a wonderful eating experience quite memorable and fun. So let’s start making it—-

Ingredients:–

  1. Chicken(boneless)-250 gms
  2. French Beans-200 gms
  3. Carrot-150 gms
  4. Potato-1 (big)
  5. Onion-1(big)
  6. Broccoli-150 gms
  7. Mushroom-150 gms
  8. Ginger-Julienned
  9. Coconut Milk-4 cups
  10. Oregano- 1/2 tsp
  11. Black Pepper-1/2 tsp
  12. Red Chilly Flakes-1/2 tsp
  13. Salt-According to taste
  14. Chicken Stock-5 cups
  15. Fresh Cream-For Garnish

STEPS

Step 1

IMG-5051.JPGWash, cut and blanch the vegetables and chicken in chicken stock till half done.

Step 2

Now in the same utensil add the coconut milk and boil for three minutes or till done.

Step 3

IMG-5054.JPGNext add the seasonings, salt, black pepper, oregano, red chilly flakes and boil again for ten minutes.

Our Chicken And Vegetable Stew is done. Garnish with fresh cream and cilantro. You can add green peas too to the dish but it is optional.

Raw Papaya And Mango Salad

RAW PAPAYA AND MANGO SALAD

Hello and welcome dear buddies. Today let’s make a salad to beat the summer heat with raw papaya and raw mango and lots of good taste and health. It will be a super fun snack too as you can enjoy it any time of the day and never get bored. It is all packed with fresh ingredients, light seasonings and super feels to make your lazy summer afternoon or any moment enthusiastic and super. So let’s start—–

Ingredients:-

  1. Raw Papaya -1
  2. Raw Mango -1
  3. Radish – 1/2 of 1
  4. Green Apple – 1/2 of 1
  5. Cucumber -1/2 of 1
  6. Tomato -1
  7. Roasted And Crushed Peanuts or Pistachios -1 tbsp
  8. Salad Oil -1 tbsp
  9. Salt – According to taste
  10. Roasted and Ground Cumin Powder -1/2 tsp
  11. Black or Yellow Mustard Powder -1 tsp
  12. Chopped Cilantro or any other herb- A handful
  13. For the dressing:-Lemon Juice, Pepper, and Honey Mix -1 tbsp

For the tempering:

  1. Black Mustard Seeds -1 tsp
  2. Asafoetida -A pinch
  3. Green Chillies -2
  4. Ginger and Garlic Juliennes -1 tsp each

STEPS

Step 1

Scrape and cut the raw papaya, raw mango and other ingredients in juliennes.

Step 2

Make a dressing of lemon juice, honey, and black pepper. If you don’t have lemon juice you can substitute it with white vinegar.

Step 3

IMG-5041.JPGRoast the ginger and garlic juliennes, asafoetida, along with green chilies in a pan with some black mustard seeds. Also, roast the raw peanuts or pistachios and crush them coarsely.

Step 4

To assemble the salad together, take a mixing bowl, add the julienned ingredients in it. Now add salt and the tempering. Next drizzle the dressing of lemon juice, honey and black pepper and also the salad oil. Also, add some mustard powder and roasted cumin powder as this will truly enhance the taste of the salad. Add the garnish of freshly chopped cilantro. Give everything a good mix and serve immediately.

Chicken And Garbanzo Beans Curry

CHICKEN AND GARBANZO BEANS CURRY

Hello and welcome buddies to my corner again. I hope you all are doing good. Being a homemaker I make food every day for my family and I try to make dishes of all kinds for my kids sometimes introducing them to some new ones too. Usually, I try to make something wholesome on weekends as it is the only time the whole family gets together to have some fun and enjoyable moments. On this weekend, my daughter wanted to have something with chicken so, on checking my fridge I found some garbanzo beans and decided to make a fusion dish out of it. I made this curry of chicken with garbanzo beans with mild spices and well, it turned out good. So I decided to share it with you all. You too can try it if you like it. Goes well with chapatis or rice and is truly wholesome. The recipe is as follows:—-

Ingredients:

  1. Chicken -200 gms
  2. Garbanzo Beans -250 gms
  3. Onion – 2
  4. Green Chillies – 2
  5. Ginger-Garlic Paste -1 tsp
  6. Coriander Powder -1 tsp
  7. Garam Masala -1 tsp
  8. Turmeric Powder -1 tsp
  9. Red Chilly Powder -1 tsp
  10. Salt -According to taste
  11. Tomato Puree -2 tbsp
  12. Dry Mango Powder -1 tsp
  13. Vegetable Oil -2 tbsp
  14. Freshly Chopped Coriander -For Garnish

STEPS

Step 1

IMG-5025.JPG Soak the garbanzo beans overnight and boil them till done. Boil the chicken in salted water. Chop onions, green chilies, and coriander and keep aside.

Step 2

Take a kadhai. Add oil to it and, next add some whole garam masala i.e, small and big cardamom, cinnamon. Now add the chopped onions and fry till half done. Now add the ginger- garlic paste and green chilies. Next add the coriander powder, red chilly powder, salt, turmeric powder and fry for two minutes. Now add the tomato puree and blanched chicken and fry again. After frying for three minutes add the boiled beans and add garam masala and dry mango powder. Fry everything well again for five minutes. Now add water to make the gravy.

Step 3

Boil the curry on medium flame and garnish with chopped fresh coriander.

Pumpkin With Moong Dal Badis

PUMPKIN WITH MOONG DAL BADIS

Hello everyone. Welcome once again to my corner. I am, as you may have noticed focussed on sharing with you all authentic recipes in my starting series which I will expand more to include modern, fusion and also international cuisine in the near future. This recipe is a very famous and a regular dish in the rural North Indian segment of our country. It is made in yellow mustard gravy and is given a slight tangy touch. It is eaten along with steamed rice and phulkas too. I make this dish sometimes which is enjoyed by all in my family. If you like it you too can make it. So the recipe is as follows–

Ingredients:-

  1. Green Pumpkin – 250 gms
  2. Moong Dal  Badis – 100gm
  3. Yellow Mustard – 150 gms
  4. Turmeric Powder -1 tsp
  5. Coriander Powder -1 tsp
  6. Red Chilly Powder -1 tsp
  7. Garam Masala -1 tsp
  8. Tomato Puree -2 tbsp
  9. Dry Mango Powder -1 tsp
  10. Salt – According to taste
  11. Freshly Chopped Coriander -For Garnish

For the tempering or tadka:

  1. Five Spice -1 tsp
  2. Asafoetida – A pinch
  3. Bay Leaf -2
  4. Kasuri Methi -1 tsp
  5. Fortune Mustard or Vegetable Oil -2 tbsp

STEPS

Step 1

IMG_5015.jpgFirstly fry the moong dal badis in 1 tsp of oil and keep aside. (I have shared the recipe for making moong dal badis in one of my earlier blogs. Please refer it from there). Peel and cut the veggie into medium-sized cubes. Grind the yellow mustard to a fine paste. Chop the coriander.

Step 2

In a heavy bottomed pan, add the tempering ingredients and the chopped veggies. Add the salt and turmeric powder and cook for three minutes covered with a lid. When the veggie gets softer add the masalas, red chilly powder, coriander powder and tomato puree and fry for two minutes. Now add the yellow mustard paste and fry again for two minutes. Add the remaining masalas,garam masala, dry mango powder and fry everything again for a minute and add water to make the gravy. Now add the badis and let it cook for four minutes to make the badis softer.

IMG_5017.jpgOur Pumpkin With Moong Dal Badis is done. Garnish with chopped coriander and serve it with phulkas, steamed rice, dal and veggies of your choice.

Note point:—The curry should be a little tangier to get the best experience. So adjust the amounts of tomato puree and dry mango powder accordingly.
