FISH BHEL

Hello and welcome friends once again. Today I’m sharing with you a very creative, funky and really tasty recipe of a bhel made from fish. We generally eat puffed rice bhel but this bhel is tastier which will leave you asking for more. It’s made of basa fish and lots of spicy ingredients which will leave you asking for more. So let’s start making it—

Ingredients:-

  1. Fish(boneless)-150 gms
  2. Peanuts-1 tbsp
  3. Potato-Cheese Pops-7
  4. Pineapple-5 pcs
  5. Nuts(Cashews and Raisins)-1 tbsp
  6. Fresh Coconut-1 tbsp
  7. Namakpare-1 tbsp
  8. Garbanzo Beans-100 gms
  9. Salt-According to taste

For the fish fritters:-

  1. Boneless Fish(cut into strips)
  2. Salt-According to taste
  3. Turmeric Powder-1 tsp
  4. Garlic Paste-1 tsp

For the potato-cheese pops:

  1. Potato-1
  2. Cheese-1/2 cup
  3. Salt-According to taste
  4. Red Chilly Powder-1 tsp
  5. Oregano-1/2 tsp
  6. Gram Flour-3 tbsp
  7. Garam Masala-1 tsp
  8. Pepper Powder-1/2 tsp

STEPS

Step 1

IMG-5344.JPGWash and marinate the fish with salt, turmeric powder, and garlic paste. I have used basa fillets here, you can use any other ones too, but it must be boneless. Shallow-fry it.

Step 2

To make the potato-cheese pops, boil the potatoes, peel them and mash with a masher. Grate the cheese and add to the batter. You can alternately use panir to make the pops too. Add the salt, pepper powder, red chilly powder,garam masala, dry mango powder, oregano. Add the gram flour to the batter and make small balls from it and deep fry in oil.

IMG-5342.JPGBoil the garbanzo beans, dry them and then fry in some oil, taking care not to burn them.

Step 5

Fry the cashews and peanuts too. Chop the coconut into bite-sized pieces. Chop the cilantro and the mint leaves. Also, chop the pineapple into small pieces.

Step 6

To assemble the dish, take a plate and put the fried garbanzo beans in it. Now top it with fried fish fritters and potato-cheese pops. Next, add the chopped coconut pieces, peanuts,cashews,raisins and the diced pineapple. Splutter some fried mint leaves on top.Add some namakpare too.

Step 7

To make the topping sauce, take some tamarind paste, add water and sugar into it. Now make a chutney from coriander and mint and keep aside. Finally just before serving drizzle the tamarind sauce over the bhel. Then add the green chutney. You can add some dry mango powder chutney too. Squeeze some lemon juice over the bhel. Toss everything well and serve immediately.

Our yummy Fish Bhel is done. Serve it as a morning, brunch or evening snack. You can add some mayonnaise or mustard sauce also over the bhel to get that extra punch.

Stuffed Fish

STUFFED FISH

Hello and welcome once again to my cozy corner. Today I’m sharing a recipe of stuffed fish which is definitely a tastier and easier one. It is prepared in no time and if not using oil, can be baked too. You can use anything as filling here, apart from carrot and panir. It is a sumptuous delight which sure will become your favorite. So let’s start with it—

Ingredients:-For the marination of the fish

  1. Fish(Indian Mackerel)-3
  2. Turmeric Powder-1 tsp
  3. Salt-According to taste
  4. Garlic Paste-1 tsp

For the filling:

  1. Indian Cottage Cheese or Panir-100 gms
  2. Carrot(grated)-1 cup
  3. Onion-1
  4. Green Chillies-2
  5. Ginger-Garlic Paste-1 tsp
  6. Turmeric Powder-1 tsp
  7. Red Chilly Powder-1 tsp
  8. Garam Masala-1 tsp
  9. Dry Mango Powder-1 tsp
  10. Salt-According to taste
  11. Dried Mint Leaves-5-6
  12. Vegetable Oil-2 tbsp

To start with our recipe, I will wash and slit the fish on one side and marinate them with salt, turmeric powder, and garlic paste. I have used the fish variety of Indian Mackerel here, but you can use any other variety too, but the fish must be of the small variety.

Step 2

To make the filling, I will grate the carrot and mix it with the panir. Now I will take a pan and add oil. Next, I will add the chopped onions, green chillies and add ginger-garlic paste. I will fry again. Now I will add my seasonings, salt, turmeric powder, red chilly powder,garam masala, dry mango powder, and fry the masalas. Then I will add the batter of carrot and panir in it along with some cashews and raisins and fry for a minute. Lastly, I will add some dried mint to give that extra taste. You can alternately add fresh mint or cilantro too.

I will fill the above-made batter into the fish from the slit that we made earlier and shallow fry it in a wok.

Our Stuffed Fish is done. It can be served with salad, and green chutney or mayonnaise.

Fish Kofta Curry

FISH KOFTA CURRY

Hello and welcome dear friends once again to my corner. We generally make koftas from vegetables like papaya, bananas, pumpkins which are tasty and very wholesome. But today I’m sharing a delicious, delightful recipe of fish koftas dipped in a rich and flavorful gravy of onions, peanuts and tomatoes which is truly out of the world and a dish sure to be liked by one and all. I hope you all will like it and try making it. So let’s start with the recipe—

Ingredients:-For the fish balls:-

  1. Boneless Fish-250 gms
  2. Bread-4
  3. Turmeric Powder-1 tsp
  4. Garlic Paste-1 tsp
  5. Onion-1
  6. Green Chilly-3
  7. Baking Soda-1 tsp
  8. Cumin Powder-1 tsp
  9. Garam Masala-1 tsp
  10. Mint Leaves-5-6
  11. Fresh Lemon Juice-1 tsp
  12. Red Chilly Powder-1 tsp
  13. Chopped Coriander-1 cup
  14. Salt-According to taste

For the gravy:

  1. Chopped Onion-1
  2. Tomato Puree-2 tbsp
  3. Onion- Paste-1 tbsp
  4. Ginger-Garlic Paste- 2 tsp
  5. Curd-2 tbsp
  6. Turmeric Powder-1 tsp
  7. Red Chilly Powder-1 tsp
  8. Coriander Powder-1 tsp
  9. Garam Masala-1 tsp
  10. Peanut Paste-1 tbsp
  11. Vegetable Oil-1 tbsp

For Garnish-Chopped Coriander and Fresh Cream

IMG-5326.JPGWash and marinate the fish, here I have used the boneless variety, with salt, turmeric powder, and garlic paste. Shallow-fry it. Chop the onions, green chilies, and coriander finely. Mash the fish with a masher.

Step 2

To make the fish balls, take a bowl, add the mashed fish, finely chopped onions, green chilies, coriander, salt, turmeric powder, red chilly powder, cumin powder,garam masala, lemon juice, baking soda, salt. Take the bread slices, wet them in water and squeeze the water out to mix it all up and form a dough. Now make medium-sized balls and fry it in a kadhai till browned.

Step 3

For making the gravy, grind the onions and peanuts into a fine paste. Take a wok and add cumin and oil. When it splutters, add chopped onions and fry. Now add the ginger-garlic paste and fry again. Next add in the onion-peanut paste, salt, turmeric powder, red chilly powder, coriander powder, tomato puree,garam masala and fry all this for two minutes before adding curd. Add curd and let the spices cook for a minute and then add water for the gravy. Boil on a medium flame.

IMG-5325.JPGWhen the gravy has thickened, add the fish balls in it. Simmer and cook for two minutes. Garnish with freshly chopped coriander and fresh cream.

Our delicious Fish Kofta Curry is done. Serve it with steamed rice, rice crispies, and rice poppadums.

Mutton Liver With Beaten Rice

MUTTON LIVER WITH BEATEN RICE

Hello and welcome dear friends to my cozy cooking corner again. Today I’m sharing a very creative and unique recipe of beaten rice mixed with a spiced up mutton liver. It is tasty and is a real treat to your senses. It can also be called a Mutton Poha Pulao and is the fun dish on the block.

Ingredients:

  1. Mutton Liver-250 gms
  2. Beaten Rice -200 gms
  3. Onion-2(big)
  4. Green Peas- 100 gms
  5. Ginger-Garlic Paste-1 tsp
  6. Salt-According to taste
  7. Turmeric Powder-1 tsp
  8. Red Chilly Powder-1/2 tsp
  9. Coriander-Cumin Powder-1/2 tsp each
  10. Mutton Masala-1 tsp
  11. Dry Mango Powder or Amchoor Powder-1 tsp
  12. Garam Masala-1 tsp
  13. Green Cardamom-1
  14. Cashews and Raisins-For garnish

STEPS

Step 1

IMG-5317.JPGWash and cut the mutton liver into medium-sized pieces. Marinate it with salt, turmeric powder, red chilly powder and ginger-garlic paste.

Step 2

Take a pan and add vegetable oil to it. Now add the chopped onions and half -fry it. Next, add the ginger-garlic paste and fry again for a minute. Now add in salt, turmeric powder, red chilly powder, cumin powder, mutton masala and dry mango powder and fry it for three minutes. Add in the marinated liver and cook on low flame for three minutes.

Step 3

IMG-5318Take another pan and add again some oil into it. Now add chopped remaining onions and half-fry them and then add some green peas. Fry it again and add salt, turmeric powder, red chilly powder, coriander powder,garam masala and fry the masala a bit. Wash the poha in water and drain it out. Add the poha in the masalas and fry it up again.

Step 4

Finally, add the spiced mutton liver to the beaten rice and give everything a good mix and garnish with toasted cashews and raisins.

Our Mutton Liver With Beaten Rice is done. Serve it in breakfast or brunch menu.

Shallow Fried Potato And Onion Kadhi

SHALLOW FRIED POTATO AND ONION KADHI

Hello and welcome dear friends to my cosy cooking corner. Today I.m sharing with you a very simple but wholesome recipe of Shallow Fried Potato And Onion Fritters In Kadhi with you. It’s made in no time, is tasty and is the perfect substitute for dals to make our lunch idea different and special. So let’s start with it—

Ingredients:-For the potato and onion fritters:

  1. Potato-1(big)
  2. Onion-1
  3. Gram Flour or Besan-200 gms
  4. Salt-According to taste
  5. Turmeric Powder-1/2 tsp
  6. Red Chilly Powder-1/2 tsp
  7. Coriander Powder-1/2 tsp
  8. Vegetable Oil-For shallow frying
  9. Chat Masala-1 tsp

For the kadhi:-

  1. Gram Flour-200 gms
  2. Yoghurt-250 gms
  3. Asafoetida-1/2 tsp
  4. Salt-According to taste
  5. Turmeric Powder-1 tsp
  6. Red Chilly Powder-1 tsp
  7. Coriander Powder-1 tsp
  8. Garam Masala-1 tsp
  9. Vegetable Oil-1 tbsp
  10. Curry Leaves-5-6
  11. Kasuri Methi-1/2 tsp

STEPS

Step 1

Wash, scrape and cut the potatoes and onions in a round shape. Blanch the potatoes for two minutes.

Step 2

To make the fritters, take a bowl and add gram flour in it. Also add the other ingredients, salt, asafoetida, turmeric powder, red chilly powder, coriander powder and using water make a thick batter from it.

Step 3

Now, dip the blanched potatoes and onion rings in the batter and shallow – fry them till they are brown and crisp. Sprinkle some chat masala over them and keep aside.

Step 4

To make the kadhi, take a bowl and add the given amount of yoghurt and gram flour in it. Whip the batter.

Heat a kadhai and add oil to it. Now add cumin and asafoetida, curry leaves,kasuri methi and next add the spices, salt, turmeric powder, red chilly powder, coriander powder,garam masala in it. Add the whipped batter and keep on stirring while pouring the batter in the kadhai. Add some more water if needed. Simmer on a medium flame for two minutes.

Step 6

When the kadhi is boiled, drop the potato-onion fritters just before serving as they tend to break if put in the kadhi long before serving.

NotePoints:-1. The yoghurt used in this recipe should preferably be neither too tangy nor too fresh. This will make the kadhi taste better.

Our Shallow Fried Potato And Onion Kadhi is done. Serve it with steamed rice, stir-fried veggies, and poppadums.

Fish Curry With Cumin And Coriander

FISH CURRY WITH CUMIN AND CORIANDER

Hello friends, welcome back to my cooking space again. Today I’ll be sharing a simple fish curry recipe that I use to make now and then. It’s mildly spiced but has a strong flavor and is healthier too. I have used a fish called Roopchanda here, but you can use any other fish too. It’s best had with steamed rice, potato stir-fry, and poppadums. So let’s start making it—

Ingredients:-

  1. Fish(Any fish) -250 gms
  2. Onion – 1(big)
  3. Ginger-Garlic Paste -1 tsp
  4. Turmeric Powder -1 tsp
  5. Red Chilly Powder -1 tsp
  6. Coriander Powder -1 tsp
  7. Cumin Powder – 1 tsp
  8. Garam Masala – 1 tsp
  9. Tomato Puree – 2 tbsp
  10. Dry Mango Powder or Raw Mangoes – 1 tsp or 1( chopped.)
  11. Salt – According to taste

For the tempering:-

  1. Nigella Seeds – 1/2 tsp
  2. Cumin Seeds – 1/2 tsp
  3. Fenugreek Seeds – 1/2 tsp
  4. Vegetable Oil – 1 tbsp

Wash, cut and marinate the fish with some salt, turmeric powder and garlic paste. Chop the onions and green chillies. Scrape and cut the mangoes and shallow fry the fish. Keep it aside.

Step 2

Take a kadhai. Add the tempering ingredients to it and let it splutter. Now add the chopped onions and green chilies and saute for a minute.

Step 3

Next add the masalas, salt, turmeric powder, red chilly powder,coriander-cumin powder,garam masala and tomato puree, dry mango powder and saute everything for three minutes. Now add water for the gravy. You can add chopped raw mangoes here, instead of dry mango powder.

After boiling the gravy for three minutes, add the fried fish and let it simmer on medium flame for four minutes.

Our Fish Curry With Cumin And Coriander is done. Garnish with chopped coriander, lemon wedges and serve it with steamed rice.

This blog is my 200th blog and it is about a really simple, two-minute recipe which has all the goodness of a fruit and also of yoghurt.  I am very thankful to all my fellow bloggers who have steadily encouraged me with their likes and comments on my blogs and have done so steadily. I have found each one of your blogs too, to be marvelous and hope I too can maintain my standards in blogging. About this recipe, well, I like it quite well and hope that you too will like it. An Indian meal is very incomplete without raitas of all sorts and this raita surely will make your next meal exciting. So let’s start with it—-

Ingredients:-

  1. Apple-1
  2. Yoghurt-250 gms
  3. Green Chilly-1
  4. Salt-According to taste
  5. Roasted Cumin Powder-1 tsp
  6. Catch Raita Masala-1 tsp
  7. Pepper Powder-1 tsp
  8. Honey-1 tsp
  9. Lemon Juice-1 tsp

For Garnishing– Few raisins and fresh cream

Step 1

Wash and cut the apple into medium-sized pieces. Chop the green chilly.

Hello and welcome friends once again to my cozy cooking corner. Today I’ll be sharing with you a wholesome curry dish which is green, healthy, tasty and quite flavorful too. It has a mix of green veggies along with spinach and requires little or no oil to make with. It can be had with tandoori rotis, paranthas and is really simple to make. So let’s start with the recipe—-

Ingredients:

  1. Spinach-200 gms
  2. Panir-100 gms
  3. French Beans-100 gms
  4. Dry Fruits(cashew and raisins)-1 tbsp
  5. Carrot-50 gms
  6. Capsicum-50 gms
  7. Peas-100 gms
  8. Potato-1
  9. Green Chillies-2
  10. Onion-2
  11. Ginger-Garlic-cut into small pieces
  12. Turmeric Powder-1 tsp
  13. Red Chilly Powder-1 tsp
  14. Coriander Powder-1 tsp
  15. Cumin  Powder-1 tsp
  16. Garam Masala-1 tsp
  17. Subzi Masala-1 tsp
  18. Tomato Puree-2 tbsp
  19. Vegetable Oil-1 tbsp
  20. Fresh Cream-For Garnishing

STEPS

Wash, cut and blanch the spinach and the vegetables. Chop the onions, green chilies, cilantro finely. Roast the dry fruits.

Step 2

Take a pan and add oil to it. Then add the chopped onions and green chilies. Saute and add the cut ginger-garlic and fry again. Next add the spices, salt, turmeric powder, red chilly powder, coriander powder, cumin powder,subzi masala, tomato puree,garam masala and fry for three minutes.

Step 3

Add the blanched veggies and saute for three minutes. Now add the blanched spinach and fry again for two minutes.

Add water for the gravy and simmer the curry on a medium flame for five minutes. Add the dry fruits. Remove from flame and garnish with fresh cream.

Our Cottage Cheese And Veggie Mix is ready. Serve it with tandoori rotis, naan, bread or anything you wish to.

Split Bengal Gram With Brinjal,Potato and Peas

SPLIT BENGAL GRAM WITH BRINJAL, POTATO, AND PEAS

Hello and welcome friends to my cozy cooking corner. Today I’ll be trying my hand on making a combo dish of partly dal and partly veggies. So it’s a mixed dal with veggies. The dish is healthier, tastier and is a great way to save time and efforts in preparing other dishes like stir-fries or fritters to complement your meal. So let’s start to make it—-

Ingredients:

  1. Split Bengal Gram or Chana Dal-250 gms
  2. Brinjal-1/2 of 1
  3. Potato-1
  4. Peas-1/2 cup
  5. Onions-1(big)
  6. Green Chillies-2
  7. Ginger-Garlic Paste-1 tsp each
  8. Salt -According to taste
  9. Turmeric Powder-1 tsp
  10. Red Chilly Powder-1 tsp
  11. Cumin Powder-1 tsp
  12. Coriander Powder-1 tsp
  13. Garam Masala-1 tsp
  14. Tomato Puree-2 tbsp
  15. Dry Mango Powder-1/2 tsp

For the tempering:–

  1. Cumin-1 tsp
  2. Vegetable Oil-1 tbsp

For the garnish:

  1. Freshly chopped coriander and Fresh Cream-As required

Step 1

Wash and boil the dal. Chop the onions, green chilies and the veggies, brinjal, potato and coriander leaves.

IMG-5275.JPGTake a kadhai and add some vegetable oil and cumin and let it splutter. Add the onions, green chilies, and ginger-garlic paste and fry for three minutes. Next add the masalas i.e, salt, turmeric powder, red chilly powder,coriander-cumin powder and fry again for two minutes. Then add in the tomato puree and fry for a minute before adding the veggies. Saute the veggies in the masala and add in the boiled dal. Lastly, add the garam masala. Garnish with freshly chopped coriander and fresh cream.

Oil-Free Sponge Gourd With Garbanzo Beans

OIL-FREE SPONGE GOURD WITH GARBANZO BEANS

Hi, my dear friends.Welcome to my food corner again. Today I will make a simple healthy and tasty recipe of Sponge Gourd With Garbanzo Beans curry which is oil-free. It just needs some basic ingredients and less of your time to prepare. I make it in my kitchen and it is liked by all, being healthier. So I suggest that all of you too try it sometime in your kitchens. So let’s start with the recipe—

Ingredients:

  1. Sponge Gourd -1 kg
  2. Garbanzo Beans -200 gms
  3. Onions -2
  4. Minced Garlic -1 tsp
  5. Ginger Paste – 1 tsp
  6. Green Chillies -2
  7. Cumin Powder -1 tsp
  8. Paprika -1 tsp
  9. Garam Masala -1 tsp
  10. Five Spice -1 tsp
  11. Bay Leaf -1
  12. Lemon Juice -2 tsp

STEPS

Step 1

Wash, scrape and cut the sponge gourd into small pieces. Chop the onions and green chilies. Soak the garbanzo beans overnight and boil it.

Step 2

IMG-5269In a kadhai add the five spice, bay leaf and let it splutter. Dry roast it. Then add the chopped onions and green chilies and fry for three minutes till the onions are half fried. Now, add in the minced garlic and ginger paste and fry for two minutes. Now add the spice mix, salt, turmeric powder, paprika, cumin powder,garam masala and fry everything till it loses its rawness.

When the water in the dish evaporates and the veggie is cooked, add the boiled garbanzo beans and saute it for five minutes until the beans are lightly fried. Finally, when the veggie and beans are properly sauteed, switch off the gas and let the dish cool. Lastly, add  2 tsps of lemon juice to the dish.

Our Oil-Free Sponge Gourd And Garbanzo Beans Curry is done. Serve it with hot chapatis(Indian flatbread), paranthas or with rice, dal and a homemade chutney, preferably mango chutney.
