PASTA WITH NOODLES AND RICE

Hello everybody.Welcome to my corner. Today I will be sharing a healthy, scrumptious Italian and very popular recipe of Pasta With Noodles And Rice. Pasta is made in many ways everywhere and is a favorite fast food now of the entire world. Today, I too decided to share with you all this recipe giving it a slightly different twist by adding rice to the dish along with pasta and noodles and making a healthy, green and tastier dip of white sauce mixed with coriander and mint chutney. I hope you all will like it too. So here is the recipe—

Ingredients:

  1. Penne Pasta – 100 gms
  2. Plain Noodles – 150 gms
  3. Cooked Rice – 100 gms
  4. Par-Boiled Mixed Vegetables like Broccoli, Carrot, French Beans -Each 25 gms
  5. Mushroom – 20 gms
  6. Cumin Powder – 1 tsp
  7. Tomatoes – 2
  8.  Nestle Maggi Masala – 2 tsp
  9. Salt – According to taste
  10. Ginger-Garlic Paste- 1 tsp
  11. Chilly Flakes – 1 tsp
  12. Garam Masala – 1 tsp
  13. Panir – 20 gms
  14.  Basil – A few
  15. Tomato Sauce – 1 tsp
  16. Green Chilly Sauce – 1 tsp
  17. Soya Sauce – 1 tsp
  18. Herbs(Oregano, Thyme) – A pinch
  19. White Sauce –  1 cup
  20. Coriander-Mint Chutney – 2 tbsp
  21. Mozzarella Cheese – For Garnish

STEPS

Step 1

DSC02863.jpgBoil pasta, noodles, and rice. Cut all the veggies along with mushrooms into small pieces and blanch them. Chop the onions and deseed the tomatoes, cut them into small pieces.

Step 2

Take a wok and add olive oil. Now add chopped onions. Fry for half a minute before adding ginger-garlic paste. Now add tomatoes, chilly flakes, and all the mentioned masalas. Fry for a minute. Now it’s time to add the blanched veggies fry for one minute, then rice and noodles. Fry again for a minute. Now add soya sauce, green chilly sauce, tomato sauce, panir pieces.

DSC02855.jpgNow add white sauce mixed with coriander chutney to the dish along with some oregano, thyme, basil or any herb of your choice and garnish with shredded mozzarella cheese.

Our dish of Pasta With Noodles And Rice is ready to be served.

Potato And Wheat Flour Crunchies

POTATO AND WHEAT FLOUR CRUNCHIES

Hello and welcome to my cozy corner again. Today I will be sharing with you a crunchy-munchy snack, the Potato And Wheat Flour Crunchy which is really easy to make and more fun than you could feel when cooking. When you don’t feel like eating elaborately, you can instantly make it and have it with salads and a dip of your choice.

Ingredients:-For the wheat flour mini chapatis

  1. Wheat Flour- 2 cup
  2. Semolina-1 cup
  3. Salt-A pinch
  4. Baking Powder-1/2 tsp
  5. Vegetable Oil-2 tbsp
  6. Water-1 cup or as needed

For the aloo tikki:-

  1. Potatoes-3
  2. Onions-1
  3. Green Chillies-2
  4. Ginger Paste-1 tsp
  5. Fresh or Dry Mint leaves-5
  6. Red Chilly Powder-1 tsp
  7. Salt-According to taste
  8. Garam Masala-1 tsp
  9. Dry Mango Powder-1/2 tsp
  10. Vegetable Oil-1 tbsp
  11. Panir-4 pieces

For the white batter:-

  1. Refined Flour-2 cups
  2. Salt-According to taste
  3. Baking Powder-1/2 tsp
  4. Oregano-A pinch
  5. Black Pepper-A pinch
  6. Paprika-A pinch

Black Sesame-For coating purpose

STEPS

Step 1

DSC02825_20180924082129944.jpgFinely chop the onions and green chilies. Boil, peel and mash the potatoes. Take the wheat flour in a bowl and add semolina to it. Now add the seasonings, salt, baking powder, vegetable oil and make a pliable dough from it adding water.

Step 2

To make the aloo tikkis, take a pan and add 1 tsp of vegetable oil in it. Now add the chopped onions and green chilies. Add the ginger paste and fry till browned. Add the salt, red chilly powder,garam masala, oregano and also add some cut panir, dry mango powder, and mint. Fry everything again for a minute and add in the mashed potatoes. Mix well. Now make out small patties from the batter.

DSC02827_20180924081916074.jpgTo make the white batter, take the refined flour in a bowl and add all the given ingredients in it. Add water to make a batter with coating consistency.

Step 4

Now take a small lump of the wheat flour dough and make a small chapati from it using a rolling pin. To make two crunchies, make out 4 small chapatis from the dough. Now to assemble the dish, take one chapati and put the potato patty on it. Put another chapati on it and then using some water seal the edges of the two chapatis. Now with a brush coat the front side of the crunchy with the white batter and sprinkle some black sesame seeds over it. You may alternately dip whole of the crunchy into the white batter, here I have coated only the front side.

DSC02821_20180924082526690.jpgTake a kadhai and add oil. When the oil heats up drop in the crunchies one by one into the oil and fry them till golden browned. Take out on a tissue paper.

Our Potato And Wheat Flour Crunchy is done. Serve it with mayo, mustard sauce and green chutney mixed together and salad. You can have it as an evening snack or at brunch.

Dosai With Keema Stuffing

DOSAI WITH KEEMA STUFFING

Hello, dear friends and welcome back to my cooking corner again. Today’s recipe that I am going to share is that of Keema Dosais. It is a simple and likable dish to be had in breakfasts and is a tasty deviation from the regular ones in having keema stuffing different from potato stuffing. Though dosais can be made with any kind of stuffing of your choice but I think this non-traditional one will really be liked by you all. So let’s start with the making—

Ingredients:-

  1. Dosai readymade batter-500 gms
  2. Water-as required

For the keema stuffing:-

  1. Chicken Keema- 200 gms
  2. Potato-1
  3. Onion-1
  4. Green Chilly-1
  5. Ginger-Garlic Paste-1 tsp
  6. Salt-According to taste
  7. Turmeric Powder-1 tsp
  8. Red Chilly Powder-1 tsp
  9. Cardamom Powder-1 tsp
  10. Cumin Powder-1 tsp
  11. Chicken Masala-1 tsp
  12. Tomato Puree-1 tbsp
  13. Garam Masala-1 tsp
  14. Peanuts-1 tsp
  15. Dried Mint Flakes-1/2 tsp
  16. Butter-2 tbsp
  17. For Garnish- Freshly Chopped Coriander

STEPS

Step 1

DSC02806.jpgPut the dosa batter in a bowl. Finely chop the onions and green chilly. Boil, peel and chop the potatoes into small pieces.

Step 2

DSC02812_20180920175142102.jpgTo make the keema filling, take a non-stick pan and add 2 tbsp of butter in it. Add the onions and green chilies. Saute for a minute. Now add ginger-garlic paste and saute. Now add the spice mix, salt, turmeric powder, red chilly powder, cumin powder,  dried mint, peanuts,garam masala, and tomato puree and fry these for two minutes before adding the chicken keema. Cook the keema till it is done and then add the boiled potatoes and saute for three more minutes. Garnish it with chopped cilantro.

Step 3

To finally assemble the dish, make dosais from the batter on a non-stick pan and put 2 tbsp of the keema stuffing each into the dosais.

Mutton Liver Roll

MUTTON LIVER ROLL

Hello and welcome dear friends to my corner. Today, I’m going to share a recipe of Mutton Liver Roll with you all. It’s a simple,mildly-spiced dish which has nutrition and taste together and is very handy to take to picnics, afternoon parties etc. It is liked by youngsters especially those who want to eat something spicy and light for brunch or an evening snack. I hope you all will like it too. So let’s start with the recipe—

Ingredients:-For the roll wrappers

  1. Refined Flour-2 cups
  2. Vegetable Oil-2 tbsp
  3. Salt-A pinch
  4. Water-1 cup or as required

For the mutton liver filling:-

  1. Mutton Liver-200 gms
  2. Onions-2(big)
  3. Green Chilly-1
  4. Turmeric Powder-1 tsp
  5. Ginger-Garlic Paste-1/2 tsp
  6. Coriander Powder-1/2 tsp
  7. Red Chilly Powder-1/2 tsp
  8. Tomato Puree-1 tbsp
  9. Garam Masala-1 tsp
  10. Vegetable Oil-2 tbsp
  11. Salt-According to taste
  12. Tomato Ketchup-1 tbsp
  13. Green Chilly Sauce-1 tsp

For the veggie mix:-

  1. Cucumber-1
  2. Onion-1
  3. Carrot-1
  4. Tomato-1
  5. Cabbage-1/2 0f 1
  6. Capsicum-1

DSC02800.jpgTo make the roll wrappers, take the refined flour in a bowl, add two tablespoons of vegetable oil and a pinch of salt to it. Adding water, knead a pliable dough. Finely chop the onions.Chop the veggies,cucumber,onion,carrot,tomato,cabbage,capsicum into juliennes.

DSC02794.jpgNow take a small portion of the dough and using a rolling pin make a medium-sized chapati from it. Bake it on a greased griddle and make two such wrappers from the dough similarly.

Step 3

For the making of the mutton liver filling, take a pan, add the vegetable oil. Add chopped onions and then green chilies. Saute it for a minute. Next, add ginger-garlic paste. Saute it for a minute again. Now add coriander powder, salt, turmeric powder, red chilly powder, garam masala and then tomato puree. Fry for two minutes. And now add the chopped veggies and fry again for a minute. Add tomato and green chilly sauce to the masala too. The filling is ready.

It’s now time to assemble the final dish. For that, take a wrapper and fill it with the liver filling. Do so for the other one too.

Our Mutton Liver Roll is ready. Serve it with green chutney and mayonnaise.

Masala Onions

MASALA ONIONS

Hello and welcome to my corner again. Today I’ll be sharing a very spicy, crunchy and yummy recipe called Masala Onions. It is basically blanched onions shallow fried in aromatic masalas which can serve as a creative alternative to pickles. It is prepared instantly and I hope you will like it. So let’s start with it—

Ingredients:-

  1. Onions-4
  2. Salt-According to taste
  3. Turmeric Powder-1 tsp
  4. Red Chilly Powder-1 tsp
  5. Coriander-Powder-1 tsp
  6. White Vinegar-1 tsp
  7. Chat Masala-1 tsp
  8. Garam Masala-1 tsp
  9. Dry Mango Powder-1 tsp
  10. Pickle Masala-1 tsp
  11. Fennel Seed Powder-1 tsp
  12. Vegetable Oil-1 tbsp

STEPS

Step 1

DSC02764_20180911232841512.jpgWash, scrape and blanch the onions for two minutes in water mixed with vinegar and salt. Make vertical or horizontal cuts on the onions before blanching them.

Step 2

Take all the masalas in a bowl and mix vegetable oil in it.

Step 3

Now wipe the onions and fill the slits with the above-made masala. Heat a thick-bottomed pan and shallow fry these onions in it till browned.

DSC02758_20180911233131813.jpgOur Masala Onions are done. Serve them with steamed rice, dal, potato fries, poppadums, and sesame peanut chutney. It is a spicy, crunchy, and tasty accompaniment to your lunch or dinner platters. It is a good alternative to pickles but should be spiced well enough.

Note point:-The dish must necessarily be more tangy, spicy and chatpata and if you don’t have pickles in your kitchen these onions will just very well fit in. Cut the masala onions into pieces before serving. You can alternately roast these onions.

Hello everyone. I welcome you all to my corner again.Happy Friday to all of you. How are you all? Hope you are doing good. Today I will share a recipe of a fritter made from fish eggs. These are tasty, flavorful and easily made and I am sure the fish lovers amongst you will like it better along with the others too. So let’s start with the recipe—

Ingredients:-

  1. Rohu Fish Egg – 250 gms
  2. Gram Flour – 150 gms
  3. Onion -2
  4. Green Chillies -2
  5. Ginger-Garlic Paste -1 tsp
  6. Salt -According to taste
  7. Turmeric Powder -1 tsp
  8. Red Chilly Powder -1 tsp
  9. Cumin Powder -1 tsp
  10. Aniseed Powder -1/2 tsp
  11. Dried Mint – 1/2 tsp
  12. Garam Masala – 1 tsp
  13. Chat Masala -1 tsp
  14. Lemon Juice -1 tsp
  15. Baking Soda -1 tsp
  16. Freshly Chopped Cilantro -1 tsp

Step 2

Take a bowl. Add gram flour to it. Now add the fish egg. Also add the seasonings, salt, turmeric powder, red chilly powder, cumin powder, dried mint,ginger-garlic paste, green chilies, aniseed powder,garam masala, chat masala, baking soda, fresh cilantro, lemon juice and mix everything well.

DSC02745.jpgTake a pan. Brush it with oil. Now take dollops of this fish egg mixture and place on the pan. Shallow-fry it till browned. Take out on tissue paper.

Aubergine Burger

AUBERGINE BURGER

Hello dear friends.Welcome to my corner. Every day we like to eat something new that we have not had yesterday. We want to try and experience newness in our eating style and habits. We all like to eat burgers, a fast food which has been liked by youngsters and most of the mass. Yesterday I had some burger bun in my fridge and aubergines and I decided to give it a new touch and so am going to share this recipe of Aubergine Burger. It is tasty and healthy and is prepared in a matter of minutes. So let’s start with it—

Ingredients:-

  1. Burger Bun -2
  2. Aubergine – 1
  3. Britannia Cheese Singles -2
  4. Rice Flour -1/2 cup
  5. Refined Flour -1/2 cup
  6. Salt -According to you
  7. Black Pepper Powder -1/2 tsp
  8. Red Chilly Powder -1/2 tsp
  9. Garam Masala -1/2 tsp
  10. Mint Flakes – 1/2 tsp
  11. Tomato -1
  12. Onion -1
  13. Lettuce Leaves -2
  14. Panir – 50 gms
  15. Tomato Sauce – 1 tsp
  16. Green Chilly Sauce -1 tsp
  17. Mayonnaise -1 tbsp
  18. Mustard Sauce – 1 tbsp

STEPS

DSC02715.jpgWash and cut the aubergine into rounds and marinate it with salt and black pepper powder. Cut the tomato and onion also in rounds.

Step 2

Take a bowl and add the rice and refined flour. Add salt, black pepper, red chilly powder,garam masala, dried mint flakes and make a thick batter of it adding water. You can also add dried basil or any other herb that you want.

Step 3

Heat a pan, coat the aubergines into the batter and shallow-fry them. Cut the burger buns into halves.

Step 4

DSC02724.jpgNow coat one half of the burger with mayonnaise and mustard sauce and put the lettuce leaf before placing the fried aubergine over it. Now place the cheese single over it. Put the cut tomato and onion over it. Then coat it with the remaining sauces, tomato and green chilly one and grate some fresh panir on it. Add some more salt if is needed. You can also add some hummus to it or use any other kind of sauces that you like.

Our Aubergine Burger is ready. Have it anytime with a glass of fresh fruit juice. It is a very healthy and nutritious snack very favorable for children and all others too.
