FISH PAKORAS

Hi, welcome dear wordpress buddies to my food corner again. As we all know fish is a very prominent and in some places staple food item which is made in many different ways. And so today I will be making a very crunchy and tasty recipe of fish pakoras. It is not prawn pakora nor is it Amritsari machchi but it is a pakora made from small variety fish like backwater fish or sardine. In my recipe, I have used sardines which I had left in my fridge. It is quite an experimental dish that I have made as this idea crossed my mind. Alternately you can bake it also. It is a good snack recipe and can be made for get-togethers and house parties. It is really a fun dish which can be made with any variety of small fish.

Ingredients:

  1. Small variety fish like sardine, backwater fish – 250 gms.
  2. Chickpea flour – 250 gms.
  3. Onions(finely chopped) – 1/2 bowl or 1 (big).
  4. Green Chillies(finely chopped) – 3.
  5. Cumin -A pinch.
  6. Nigella seeds – A pinch.
  7. Ginger- Garlic paste – 1 tsp.
  8. Salt – According to taste.
  9. Turmeric Powder – 1 tsp.
  10. Red Chilly Powder – 1 tsp.
  11. Garam Masala – 2 tsp.
  12. Coriander(chopped ) – 1/2 bowl.

Wash the fish. Take a bowl. Add the fish, chickpea flour, onions, green chilies, salt, turmeric powder, red chilly powder,ginger-garlic paste,garam masala, chopped coriander and nigella seeds to the bowl and using little water make a thick batter of it. The batter should not be thin and must be thick to be able to bind the fish properly.

Step 2

Now take a heavy bottomed kadhai and add some vegetable oil to it. Let it get hot. Now with the help of your hand drop small lumps of this fish batter into the oil and fry it crispy and till light golden in color. Take out with a slotted spoon and drain excess oil on a tissue paper.

Our delicious Fish Pakoras are ready. Serve them while still hot with mustard sauce, desi garlic chutney, yogurt and mint dip or any such dip of your choice.

Jack Fruit Kebabs With Shallow Fried Sweet Potatoes

JACKFRUIT KEBABS WITH SHALLOW FRIED SWEET POTATOES

Hello everyone. Today I’ll be sharing a delicious snack recipe of jackfruit kebabs with sweet potatoes. They are tasty, crunchy and so fun totally. Have them with salads, dips, chutneys and don’t miss the fun. Let’s start with it—

Ingredients:-For the jackfruit kebabs.

  1. Jackfruit – 250 gms.
  2. Gram Flour(besan) – 150 gms.
  3. Onion(finely chopped) – 1.
  4. Green Chillies(finely chopped) – 2.
  5. Salt – According to taste.
  6. Turmeric Powder – 1 tsp.
  7. Red Chilly Powder – 1 tsp.
  8. Garam Masala – 1 tsp.
  9. Freshly chopped coriander – 1 small bunch.

STEPS.

Step 1

Wash and deskin the jackfruit. Parboil it till mushy. Grind it a little coarsely.

Step 2 

In a bowl take the mashed jackfruit, chopped onions, green chilies, salt, turmeric powder,garam masala, chopped coriander, and mix it.

Step 3

Now heat a non-stick pan and make long patties from the batter and shallow fry them. You can make any shape from the batter as you like.

Serve the kebabs with mayonnaise, salad and shallow-fried sweet potatoes.

Ingredients:

  1. Sweet Potato – 200 gms.
  2. Salt – A pinch.
  3. Garam Masala – A pinch.
  4. Red Chilly Powder – A pinch.
  5. Chaat Masala – A pinch.
  6. Oil – For shallow frying.

STEPS.

Step 1

Wash and scrape the sweet potatoes. Boil them in a saucepan till half -done and firm to touch. Cut them longitudinally in two pieces each.

Step 2

Now take the sweet potato pieces and sprinkle salt, red chilly powder, chaat masala and garam masala on them. Now heat a pan and using very little oil shallow fry these till lightly browned on both sides.

Our Shallow Fried Sweet Potatoes are done.

Now we come to the last part of arranging our snack platter together. Have the jackfruit kebabs along with the shallow fried sweet potatoes and enjoy them together with mayonnaise and fresh salad made with green and red cabbage, tomatoes, onions and green chilies. For more taste add a dash of lemon to the salad and there you go. Our platter is done.

Crispy Potato Fritters And Tangy Tomato Chutney

Ingredients:-For the crispy potato fritters.

  1. Potato(medium-sized) – 2.
  2. Gram Flour – 250 gms.
  3. Turmeric Powder -1/2 tsp.
  4. Red Chilly Powder – 1 tsp.
  5. Asafoetida – A pinch.
  6. Garam Masala – 1 tsp.
  7. Salt – According to taste.
  8. Water – According to need.
  9. Poppy seeds – For coating purpose.

STEPS

Step 1 

Wash, scrape and cut the potatoes into thin round slices.

Step 2

Take a bowl and add the given amounts of gram flour, turmeric powder, red chilly powder, asafoetida and garam masala and using some water make a batter of dropping consistency, neither too thick nor too thin.

Step 3

Heat oil in a pan. Dip the potato slices one by one in the gram flour batter and spluttering some poppy seeds over them drop them one by one in the hot oil and fry till reddish-browned on both sides simmering the flame from time to time as needed. Take care that fritters do not get burnt or dark browned. Take out from the pan and drain excess oil using tissue paper. Sprinkle some chaat masala on the fritters.

Our hot, crispy potato fritters are ready. They can be had as afternoon or evening snacks combined with tomato or green chutney and some brewing hot tea.

Tangy Tomato Chutney.

Ingredients:-For the tangy tomato chutney.

  1. Semi-Ripe Tomatoes – 4.
  2. Garlic pods – 1.
  3. Green Chilly -1.
  4. Fresh Coriander or Mint Leaves – 2 figs.
  5. Salt – According to taste.

For tempering:-

  1. Black Mustard – 1 tsp.
  2. Curry Leaves – 2.

STEPS

Step 1 

Wash and make a hole in the middle of the tomatoes with a fork. Roast them on a gas flame and when done remove the burnt skin out of them and wash again.

Step 2

Combine the tomatoes, garlic pods, green chilly, coriander, and salt and grind in a blender till a fine paste. Take out in a bowl.

Step 3 

In a pan add black mustard, vegetable oil, and curry leaves and when they crackle add it to the tomato chutney. Mix well.

Note point:-1. You can use coriander or mint leaves alternately for the chutney.

2.If you want a sweeter and tangier taste you can add some sugar and dry mango powder also.

3. You can use raw or very ripe tomatoes also. But I prefer the semi-ripe ones as they give a better tangier taste which is quite likable.

Our Tangy Tomato Chutney is ready. It can be best combined with potato fritters, mixed vegetable fritters, cutlets, fish fritters and the like.

Potato Chops With Jaggery Tea

POTATO CHOPS WITH JAGGERY TEA

Hello and welcome friends to my corner again. Today, I’m sharing with you a simple snack recipe of Potato Chops best had with Jaggery Tea which will really make your mood and time worthwhile. A simple, super snack to be made, anytime you wish to. So let’s start with this quickie—

Ingredients:-

  1. Potato – 4
  2. Onion(big) – 1
  3. Green Chillies – 2
  4. Red Chilly Powder -1 tsp.
  5. Home-made Garam Masala – 1 tsp.
  6. Eggs -5.
  7. Black Pepper Powder – 1 tsp.
  8. Salt – According to taste.
  9. Coriander – For Garnishing.

STEPS

Step 1

Wash, pressure cook and mash the potatoes using a masher. Cut onions and green chilies finely.

Step 2 

Mix salt, red chilly powder, garam masala, onions, green chilies and freshly chopped coriander in the potato batter. To make the egg wash add salt and black pepper powder to the eggs and whisk them well.

Step 3 

Now heat vegetable oil in a wok. When it is hot take some portion of the potato batter on your palm make a small flat round of it on your palm and dip it in the egg wash and drop it in the oil.  Fry them till reddish on both sides in color and blot them well on a tissue paper.

Step 4

Serve them with schezuan sauce, or simply tomato and green chilly ketchup. Our potato chops are ready thus.

                               Jaggery Tea

Ingredients:

  1. Water -2 cups.
  2. Jaggery -1 cup.
  3. Tea(leaf and finings combined)-3 tbsp.
  4. Bay leaf -2
  5. Milk -1 cup.

STEPS

Step 1

Take water in a saucepan, add two bay leaves and bring it to a boil.

Step 2

When two boils come in the water add the given amounts of jaggery along with tea and let it boil for three more minutes.

Step 3

Now we will see that the tea has changed color and become a shade darker. Switch the gas off and cover it with a lid.

Step 4 

Now warm the tea, add some milk to it according to your choice. Discard the bay leaf along with the tea residue. Enjoy it with your favorite cookies or muffins.

Our Sweet And Hot Jaggery Tea is ready to be enjoyed thoroughly.

Red Lentil And Onion Fritters

RED LENTIL AND ONION FRITTERS

Hi, dear friends.Welcome to my space again. Today I’m sharing a snack recipe made from red lentil and onions which is super tasty, crunchy and will leave you addicted to its taste. It can be had with tea and puffed rice mixture in the evening or at brunch time. So let’s start making it—

Ingredients:-

  1. Red Lentil – 300 gms.
  2. Onions(finely chopped) – 1.
  3. Green Chillies (finely chopped)- 2.
  4. Asafoetida or Hing -A Pinch.
  5. Salt – According to taste.
  6. Chopped fresh coriander -A handful.

STEPS

Step 1 

Wash and soak the red lentils for four hours. Grind the lentil slightly coarsely.

Step 2 

Add chopped onions, green chilies, salt, asafoetida, and coriander to the lentil batter.

Step 3 

Mix it up well. Heat oil in a wok. When it is hot add dollops of the batter in the oil and fry it up.

Step 4

Take out the fritters on a tissue paper and serve with green chutney or green chilly sauce.

Vegetable Fritters

VEGETABLE FRITTERS

Hello friends and welcome back. Today we’ll be making fritters, a crunchy, crispy, spicy dish made from different vegetables like cauliflower, potato, onion, lady finger, brinjal, raw banana, green chillies. These fritters are easy to make and taste great. So let us pack some fun in fritters and start with our recipe—

Ingredients:

  1. Cauliflower(cut into florets) – 1
  2. Potato(big) – 2
  3. Onions – 3
  4. Lady Fingers – 100 gms
  5. Brinjal – 1
  6. Raw bananas – 3
  7. Green Chillies – 50 gms
  8. Rice Flour – 250 gms
  9. Wheat flour or refined white flour(maida)or cornflour – 50 gms
  10. Salt – According to taste
  11. Turmeric powder – 1 tsp
  12. Red chilly powder – 1 tsp
  13. Garam masala powder – 2 tsp
  14. Asafoetida or hing – A pinch
  15. Vegetable oil – For frying.
  16. Chaat masala -Optional.

STEPS

Step 1

Wash and cut the veggies in any shape and size you want.

Step 2

Now take a bowl. Add to it the given amounts of rice flour, wheat flour, salt, turmeric powder, red chilly powder,garam masala powder, asafoetida and add to it water to make a batter of dropping consistency.

Step 3

Coat the veggies in the batter. Heat oil in a vessel. And drop the veggies one by one in the hot oil. Fry them for five minutes or till lightly browned and take out of the oil and drain on tissue paper.

Step 4

Sprinkle some chaat masala on the fried fritters. .Serve this fun-filled fritter magic with tomato or green chilly ketchup.

Note points – 1. It’s important to slit the ends of green chillies and ladyfingers.

2. The consistency of the batter must be proper. It must not be too thick or thin.

Radish Fritters

RADISH FRITTERS

Hello and welcome dear friends once again. Today I’m sharing with you a fritter recipe made of radish. It’s unique in taste and really easy to make. So let’s start making it—

Ingredients:-

  1. Radish  (grated) – 250 gms .
  2. Green Chilly – 1.
  3. Salt – According to taste.
  4. Gram Flour – 200 gms.
  5. Cumin seeds or Carom seeds – a pinch.
  6. Turmeric powder – 1/2 tsp.

STEPS

Step 1 

Wash and grate the radish. Squeeze out the excess water out of it.

Step 2

Cut out the green chilly in very small pieces.

Step 3

In a bowl take the grated radish, add to it the finely chopped chilly, then add the given amount of gram flour, salt, splutter some cumin or carom seeds, turmeric powder, salt and mix it all along with some water. Keep it aside.

Step 4

Heat a pan and one by one shallow fry the fritters using some oil.

Step 5 

Serve it hot with green chutney or salad with a dash of lemon in it.
