FRIED OATS IDLI WITH SWEET AND TANGY KADHI

Hello, and welcome to my cooking corner again.Idli is a staple breakfast idea in India.We make various kinds of idlis starting from rice idli,moog dal idli,oats idli and other variations of it and they are enjoyed in almost all the households so much that today it is a celebrated option to go for as a proper,satisfying and hearty meal either in break fast or lunch and dinner.We generally make sambhar and chutneys to go along with idli but today I will be introducing the concept of having idlis with sweet and tangy kadhi.It is healthier,tastier and unique and it can be made quite easily without taking much of your time.So come on let’s start with it’s making—-
Ingredients:-For the fried oats idli

  1. Oats Idli-250 gms
  2. Curd-2
  3. Water-As needed to make a thick batter

For the idli tadka:-

  1. Black Mustard- 1 tsp
  2. Asafoetida-A pinch
  3. Green Chillies-4
  4. Red Chilly Powder-1 tsp
  5. Turmeric Powder-1/2 tsp
  6. Garam Masala-1 tsp
  7. Dry Mango Powder-1/2 tsp
  8. Crushed Peanut and crushed fennel seeds-1 tsp
  9. Ghee-1 tbsp

For the khatti-meethi kadhi:-

  1. Gram Flour-2 tbsp
  2. Curd-3 tbsp
  3. Salt-According to taste
  4. Turmeric Powder-1 tsp
  5. Red Chilly Powder-1 tspñý
  6. Coriander Powder-1 tsp
  7. Garam Masala-1 tsp
  8. Sugar-1 tsp
  9. Dry mango powder-1/2 tsp
  10. Ghee or vegetable oil-2 tbsp

For the tempering:-

  1. Black Mustard-1/2 tsp
  2. Asafoetida-A pinch
  3. Kasuri Methi-1 tsp
  4. Ghee-2 tbsp

STEPS
STEP 1

To make the idli,I have used an Mtr ready-made mix and taken 250 gms of it in a bowl.Now add curd and water to it to form a batter of thick consistency.Pour it into idli moulds after greasing the moulds and steam it till done.

Now for the idli tadka,take a pan and add ghee,black mustard,green chillies,red chilly powder,turmeric powder,garam masala,dry mango powder and roast it for 30 seconds.Now add in the idlis and give it a good stir.Keep aside.You can also add curry leaves and dry red chillies though it is optional.
Step 2

To make the khatti-meethi kadhi,take a bowl and add the given amounts of gram flour and curd to it.Mix in the salt,turmeric powder,red chilly powder,coriander powder,garam masala,dry mango powder,sugar to the curd and gram flour mixture.
Step 3

Take a pan and add the tempering ingredients to it.Add in the above made mixture.Boil for three minutes.Switch off the flame.

Flax Seed Kadhi

FLAXSEED KADHI

Hello, and welcome to my cooking corner again. Today I’ll be sharing a simple, healthy and alternate version of making kadhis, adding some roasted flaxseed powder, Flaxseed Kadhi. It is very easily prepared and has many nutrients, being rich in omega 3 fats. We make many dishes using flaxseed like curries, chutneys and it can be used to make soups and fritters too. I personally have made some dishes using it like Flaxseed Raita, Pumpkin with flaxseed, etc. It helps to lower cholesterol and really is a fab actively used ingredient of kitchens around the world. So let us start with the recipe–

Ingredients:-

  1. Roasted and ground flaxseed-1 tbsp
  2. Besan-1 tbsp
  3. Curd-250 gms
  4. Grated Ginger-1 tsp
  5. Onion-1
  6. Turmeric Powder-1/2 tsp
  7. Red Chilly Powder-1/2 tsp
  8. Kadhi Masala-1 tsp
  9. Garam Masala-1 tsp
  10. Fresh chopped cilantro-1 tbsp

        For the tempering:-

  1. Black Mustard-1/2 tsp
  2. Cumin-1/2 tsp
  3. Dry red chilies- 2
  4. Bay Leaf-1
  5. Asafoetida-A pinch
  6. Vegetable Oil- 2 tbsp

STEPS

Step 1

Roast and grind the flaxseed to a fine powder. Now to make the kadhi, take a bowl and add besan, curd, the spices; salt, turmeric powder, red chilly powder,kadhi masala,garam masala and mix well.

Step 2

Next, take a pan and add all the tempering ingredients in it. Now, add the chopped onion and grated ginger and saute for two minutes. Add in the above-made mix of besan and curd and let it boil for four to five minutes.

Our Flaxseed Kadhi is done. Serve it.

Fenugreek Rice with Split Pigeon Pea(Toor Dal)Kadhi

FENUGREEK RICE WITH SPLIT PIGEON PEA(TOOR DAL) KADHI

Hello and welcome back everybody to my cooking corner. Sorry for the late post, was not able to find time because of certain personal engagements.Hope you all are doing great.A  very happy Ram Navami to my Indian friends. Today I am going to share a healthy recipe of Fenugreek Rice and Split Pigeon Pea or Toor Dal Kadhi. This rice is a healthy change from regular fried rices with mild seasonings and very less oil. The kadhi is also very healthy and a real tummy cooler to be had in summers. The use of curd in both the recipes augments the taste and nutritional levels of both dishes. I hope you guys will like it and try it sometime. So let’s start with the recipes—

Ingredients:-For the fenugreek rice

  1. Basmati Rice-1 glass
  2. Fenugreek Greens-1 cup
  3. Green Peas-1/4 cup
  4. Potato-1
  5. Onions-2
  6. Green Chillies-2
  7. Ginger-Garlic Paste-1 tsp
  8. Thick Curd-1 tbsp
  9. Sugar-A pinch
  10. Coriander-Cumin Powder-1 tsp
  11. Red Chilly Powder-1 tsp each
  12. Garam Masala-1 tsp
  13. Tomato Puree-1 tbsp
  14. Salt-According to taste
  15. Water-11/4 glass(with the same measurement as rice)

For the tempering:-

  1. Ghee-2 tbsp
  2. Cumin-1 tsp
  3. Bay Leaf-1
  4. Black Cardamom-2
  5. Green Cardamom-2
  6. Cinnamon Stick-1
  7. Clove-4
  8. Black Pepper-2

For the garnish-Roasted cashews.

Step 1

DSC03949.jpgChop and wash the fenugreek finely. Chop the onions, green chilies. Beat the curd. Boil the potato, chop and shallow fry it and keep aside. Take a pressure cooker and add in all the tempering ingredients in it. Now add the chopped onions and chilies and saute for a minute. Add the ginger-garlic paste, spices,coriander-cumin powder, red chilly powder,garam masala, salt and fry them for two minutes. Add the tomato puree. Fry it too. Add in the chopped greens and fry for three-four minutes.

Step 2

Now wash and add 1 glass of basmati rice in the cooker. Fry it for one minute. Also add the roasted cashews, salt, and beaten curd. Sprinkle a pinch of sugar also. Add water(1 1/4 glass)and set the cooker over low flame for fifteen minutes to make this fenugreek fried rice.

Our aromatic Fenugreek Rice is ready. Serve it with Toor Dal Kadhi.

SPLIT PIGEON PEA OR TOOR DAL KADHI

  1. Toor Dal-200 gms
  2. Drumstick-1
  3. Broad Beans-50 gms
  4. Onions-1
  5. Green Chillies-2
  6. Ginger-Garlic Paste- 1 tsp
  7. Tomato-1
  8. Turmeric Powder-1 tsp
  9. Coriander Powder-1 tsp
  10. Red Chilly Powder-1 tsp
  11. Garam Masala-1 tsp
  12. Dry Mango Powder- 1 tsp
  13. Thick Curd(beaten)-1 cup
  14. Salt-According to taste

For the tempering:-

  1. Cumin-1 tsp
  2. Asafoetida-A pinch
  3. Vegetable Oil-1 tbsp

For the garnish:-Chopped Cilantro

DSC03950_20190413170959760.jpgWash and boil toor dal with some kokum flowers and fenugreek seeds, salt and turmeric powder. Cut the drumsticks and broad beans into large pieces and blanch them.

Step 2

Take a pan and add all the tempering ingredients in it. When they splutter, add in the chopped onions and green chilies and fry for half a minute. Now add the ginger-garlic paste and fry again.

Step 3

Add in the spices, coriander powder, red chilly powder, garam masala, dry mango powder. Fry again and add the tomato. Fry everything well so that the rawness goes away completely.

DSC03951.jpgAdd the blanched veggies also. You can add any vegetable of your choice. Now add the toor dal and let it simmer for five minutes. Lastly, add some beaten curd and garnish with chopped fresh cilantro.

Our Toor Dal Kadhi is ready. Serve both dishes together.

Note point—The veggies are not visible in the picture of Dal Kadhi but they have been added to make the dish.

Radish Fritter Kadhi

RADISH FRITTER KADHI

Hello and welcome to my cooking corner again. Today I am going to share a recipe of Radish Fritter kadhi. It is a healthier version of pakora kadhi and is great to have on a day when you want a lighter lunch. The recipe is as follows—

Ingredients:-

For the radish fritters:-

  1. Radish- 2
  2. Gram Flour-200 gms
  3. Onion(finely chopped)-1
  4. Green Chillies(finely chopped)-2
  5. Carom Seeds-1/2 tsp
  6. Cumin-1/4 tsp
  7. Red Chilly Powder-1/2 tsp
  8. Coriander Powder-1/2 tsp
  9. Garam Masala-1/2 tsp
  10. Dry Mango Powder-1/4 tsp
  11. Salt-According to taste
  12. Vegetable Oil-For shallow frying

For the kadhi:-

  1. Fresh Buttermilk-1/2 of 1 pkt
  2. Gram Flour-2 tsp
  3. Ginger Paste-1/2 tsp
  4. Onion-1
  5. Green Chillies-2
  6. Turmeric Powder-1 tsp
  7. Coriander Powder-1 tsp
  8. Cumin Powder-1 tsp
  9. Red Chilly Powder-1 tsp
  10. Kadhi Masala-1 tsp
  11. Salt-According to taste
  12. Sugar-A pinch

For the tempering:

  1. Black Mustard or Rai-1/2 tsp
  2. Cumin-1/2 tsp
  3. Bay Leaf-2
  4. Dry Red Chilly-1
  5. Asafoetida-A pinch
  6. Vegetable Oil-1 tbsp

For garnish—Freshly chopped cilantro

STEPS

Step 1

To make the radish fritters, wash, scrape and grate the radish. Chop the onions, green chilies, cilantro finely.

Step 2

DSC03833.jpgTake a bowl. Squeeze the excess water from the grated radish and put in the bowl. Now add, gram flour, chopped onions, green chilies, carom, and cumin seeds, coriander powder, red chilly powder,garam masala, salt, dry mango powder and mix it.

Step 3

Heat a pan and make small balls out of the radish batter. Shallow fry in a pan and drain excess oil on tissue papers.

Step 4

For making the kadhi, take a bowl and add in the buttermilk, gram flour, pinch of sugar and mix it well. Now take a vessel and add all the tempering ingredients. Next, add the chopped onion and green chilies in the pan and fry for half a minute. Add in ginger paste. Fry again. Now add the remaining spices, salt, turmeric powder, red chilly powder, cumin powder,kadhi masala and immediately add the buttermilk solution. Mix everything well and let it simmer on low heat for five minutes. Lastly, add the radish fritters and after boiling for a minute switch off the gas.

Our Radish Pakora Kadhi is done. Garnish it with freshly chopped cilantro. Serve it with plain steamed rice, some vegetable stir-fries, and poppadums.

Fish Kadhi

FISH KADHI

Hello and welcome to my cooking corner again. Today I am going to share a recipe of Fish Kadhi. I think it is a simple, fulfilling dish which is best served with plain rice. I made it today for my daughter, Ambika who is very fond of kadhis. It is really a good one to be had at lunch and I hope you will make it too. It can be made with any fish, preferably fillets but here I have used a fish called Shrimp Scad. So let’s start with it—

Ingredients:-

  1. Shrimp Scad(or any other fish)-1
  2. Gram Flour-50 gms
  3. Curd-200 gms
  4. Onion-1
  5. Green Chillies-2
  6. Salt-According to taste
  7. Turmeric Powder-1/2 tsp
  8. Red Chilly Powder-1/2 tsp
  9. Asafoetida-A pinch
  10. Coriander Powder-1/2 tsp each
  11. Garam Masala-1/2 tsp

For the tempering:-

  1. Cumin and Black Mustard-A pinch
  2. Bay Leaf-1
  3. Asafoetida-A pinch
  4. Cinnamon-A small stick
  5. Clove-2
  6. Cardamom-1
  7. Vegetable Oil-2 tbsp

STEPS

Step 1

Wash and marinate the fish with salt and turmeric powder. Finely chop the onion and green chilies. Take curd in a bowl and beat it well with a beater adding some water. Check the curd and see that if it is slightly tangy, add a pinch of sugar or if it is too fresh then mix in a pinch of salt.

DSC03401_20181217214137174.jpgTake a pan and add all the tempering ingredients in it. Add finely chopped onion and green chilies and fry till onions are browned. Now add the spices that are, salt, turmeric powder, red chilly powder, coriander powder and lastly garam masala and saute for a minute. Then add gram flour and saute it also for half or one minute. Now add the beaten curd to the pan and keep stirring on a low or medium flame for two minutes. Let the kadhi simmer for two more minutes and then add the fish in it.

Our Fish Kadhi is done. Garnish it with chopped cilantro or kasuri methi. Serve it with steamed rice,potato-fenugreek stir fry, and some lemon wedges.

Shallow Fried Potato And Onion Kadhi

SHALLOW FRIED POTATO AND ONION KADHI

Hello and welcome dear friends to my cosy cooking corner. Today I.m sharing with you a very simple but wholesome recipe of Shallow Fried Potato And Onion Fritters In Kadhi with you. It’s made in no time, is tasty and is the perfect substitute for dals to make our lunch idea different and special. So let’s start with it—

Ingredients:-For the potato and onion fritters:

  1. Potato-1(big)
  2. Onion-1
  3. Gram Flour or Besan-200 gms
  4. Salt-According to taste
  5. Turmeric Powder-1/2 tsp
  6. Red Chilly Powder-1/2 tsp
  7. Coriander Powder-1/2 tsp
  8. Vegetable Oil-For shallow frying
  9. Chat Masala-1 tsp

For the kadhi:-

  1. Gram Flour-200 gms
  2. Yoghurt-250 gms
  3. Asafoetida-1/2 tsp
  4. Salt-According to taste
  5. Turmeric Powder-1 tsp
  6. Red Chilly Powder-1 tsp
  7. Coriander Powder-1 tsp
  8. Garam Masala-1 tsp
  9. Vegetable Oil-1 tbsp
  10. Curry Leaves-5-6
  11. Kasuri Methi-1/2 tsp

STEPS

Step 1

Wash, scrape and cut the potatoes and onions in a round shape. Blanch the potatoes for two minutes.

Step 2

To make the fritters, take a bowl and add gram flour in it. Also add the other ingredients, salt, asafoetida, turmeric powder, red chilly powder, coriander powder and using water make a thick batter from it.

Step 3

Now, dip the blanched potatoes and onion rings in the batter and shallow – fry them till they are brown and crisp. Sprinkle some chat masala over them and keep aside.

Step 4

To make the kadhi, take a bowl and add the given amount of yoghurt and gram flour in it. Whip the batter.

Heat a kadhai and add oil to it. Now add cumin and asafoetida, curry leaves,kasuri methi and next add the spices, salt, turmeric powder, red chilly powder, coriander powder,garam masala in it. Add the whipped batter and keep on stirring while pouring the batter in the kadhai. Add some more water if needed. Simmer on a medium flame for two minutes.

Step 6

When the kadhi is boiled, drop the potato-onion fritters just before serving as they tend to break if put in the kadhi long before serving.

NotePoints:-1. The yoghurt used in this recipe should preferably be neither too tangy nor too fresh. This will make the kadhi taste better.

Our Shallow Fried Potato And Onion Kadhi is done. Serve it with steamed rice, stir-fried veggies, and poppadums.

Plain Pakora Kadhi


PLAIN PAKORA KADHI

Hi dear friends. Welcome once again. Today I’ll share with you guys a common, very likeable dish of Bihar called Pakoda Kadhi or Bari Kadhi. Its one of my favourites and is really a healthy treat for everyone. I have learnt this recipe from my maternal grandmother and really make it very frequently. It’s super tasty, creamy, slightly spiced and will make moods perfect and fine. Friends do try this dish. I know you will like it well enough to make it again and again. It’s my favourite idea of having a great afternoon, full of taste and fun. So let’s start—

Ingredients:-For making the pakoras:

  1. Gram Flour or Besan-250 gms
  2. Cumin or Jeera – A pinch or 1 tsp
  3. Asafoetida or Hing – A pinch
  4. Vegetable oil – 2 tbsp
  5. Baking Powder – 1 tsp

For making the gravy or sauce:

  1. Besan – 1 1/2 tbsp
  2. Curd or dahi (whipped) – 2 cups
  3. Cumin or Jeera – 1 tbsp
  4. Asafoetida or Hing – A pinch
  5. Bay Leaf – 2
  6. Red Chilly Powder – 1 tbsp
  7. Cumin powder – 1 tsp
  8. Garam Masala – 2 tsp
  9. Salt – According to taste
  10. Turmeric Powder – 1 tsp
  11. Water – 2 cups
  12. Kasuri Methi – 1 tsp

STEPS

Step 1

Take the given amount of besan in a bowl.

Step 2

To this bowl, add a pinch of cumin or jeera and a pinch of asafoetida or hing.

Step 3

Then to this bowl add 2 tbsps of oil and 1 tsp of baking powder.

Step 4

Now add water to the bowl and make out a thick batter of pouring consistency. To get fluffy pakoras it is necessary to beat the batter with hand or non-electric beater for 20 minutes. But do not whip it up or beat it in a mixer grinder or the pakoras will not be fluffy.

Step 5

Now heat vegetable oil in a skillet and when it is quite hot, start to take small portions of the batter in your hands and drop them in oil one by one till the skillet gets full. Deep fry the pakoras, slightly brown them and take them out on a tissue paper to absorb extra oil. Let it rest. The pakoras are ready thus.

Step 6

For making the gravy or sauce

Take the given amount of curd and whip it in a whipper.

Step 7

Take a skillet and put some oil in it. For tempering add 1 tbsp of cumin, a pinch of asafoetida or hing, bay leaf, red chilly powder, cumin powder and kasuri methi and then add 2 cups of water to it. Now add the fried pakoras to the water and close the lid of the skillet.

Step 8

When the pakoras become soft add the whipped curd and then add some garam masala, turmeric powder and close the lid and let it boil for some time.

Step 9

Then lastly add salt to the dish and the plain pakora kadhi is thus ready to be served.

Note Points-1. Use only fresh besan for best results.

2. Use slightly sour curd.

3. Do not use an electric beater for beating the besan batter.
