RICE  FLOUR PARANTHA WITH MANGO AND JAGGERY PICKLE

Hello, and welcome back to my cooking corner again. Today I am going to share a very simple, authentic yet interesting recipe of Rice Flour Paranthas which has a very yummy potato and veggie filling and which can be served in breakfast or as an evening snack. It is easy to prepare and does not need many ingredients neither does it tire us with an elaborate process. It is very likable and a fun recipe and does go easy on health too. It can be served with any dip or chutney though here I have teamed it up with sweet mango and jaggery pickle. So let’s start with it’s making—

Ingredients:-For the rice parantha dough:-

  1. Raw Rice Flour-2 cups
  2. Salt-According to taste
  3. Lukewarm Water-As required

For the potato filling:-

  1. Potatoes-2
  2. Mixed Veggies-1/2 cup
  3. Onion-1
  4. Green Chillies-2
  5. Kasuri Methi-A pinch
  6. Red Chilly Flakes-1/2 tsp
  7. Garam Masala-1/2 tsp
  8. Chat Masala-A pinch
  9. Chopped Coriander-1/4 cup
  10. Vegetable Oil-1 tbsp
  11. Salt-According to taste

STEPS

Step 1

To make the rice parantha dough, take a saucepan and add in 1 cup of water. Heat it till lukewarm. Now, slowly add the rice flour stirring it continuously. Add salt too. When it cools a bit after forming a dough-like consistency make equal sized balls, a total of four to make two paranthas. Finely chop the onions, green chilies, and the assorted veggies, french beans, carrots, capsicum. Now blanch the veggies and add some green pea also in it. Boil the potatoes. Grate it. Keep aside.

20190520_000333_20190520195219569.jpgNow we will make the potato filling. For that,take a pan,add 2 tbsp of oil. Add chopped onions, green chilies and fry for half a minute. Now add salt, red chilly flakes,kasuri methi,garam masala, chat masala, chopped coriander and add the grated boiled potatoes along with the blanched veggies. Now mix everything well. Check for salt and seasonings and let it cool. Next, make the patties out of this batter.

Step 3

Now on a rolling board place a plastic sheet and make four equal sized chapatis out of the dough. Put one of them on the plastic sheet and place one potato patty on its top. Now place the other chapati on top of this patty and seal it using your fingers. Roll the chapati with the rolling pin to make a small sized parantha. Make the other parantha in the same way.

Step 4

Now heat a griddle and shallow fry the paranthas with oil till crisp and crunchy.

Our Rice Flour Parantha With Mango And Jaggery Pickle is done. Serve it as breakfast or as an evening snack with your choicest dip or chutney.

Shallow Fried White Yam

SHALLOW FRIED WHITE YAM

Hello and welcome to my cooking corner again. Today I will be making a very simple, tasty, snack idea called Shallow Fried White Yam. It is very healthy and a great way to pass time. There are many varieties of yam available in the market like purple yam, Chinese yam, water yam. I have chosen white yam here. I make it frequently and I hope you too will like it. So let’s start—

Ingredients:-

  1. White Yam-250 gms
  2. Gram or Wheat Flour-150 gms
  3. Salt-According to taste
  4. Turmeric Powder-1/2 tsp
  5. Red Chilly Powder-1/2 tsp
  6. Coriander Powder-1/2 tsp
  7. Asafoetida-A pinch
  8. Garam Masala-1 tsp
  9. Dry Mango Powder-1 tsp
  10. Vegetable Oil-For shallow frying

STEPS

Step 1

Wash, scrape and cut the yam into slightly thick roundels.

Step 2

Mix the yam pieces with gram or wheat flour, salt, turmeric powder, red chilly powder, asafoetida,garam masala, coriander powder, dry mango powder. Toss everything so that the spice mix is well mixed with the yam pieces. In coating, you can use rice flour too.

DSC03311.jpgTake a pan. Smear it with oil and shallow fry the yam roundels till cooked, slightly crisp and browned. If need be, cook the yam covered with a lid. Cook it on a medium flame for five minutes. Then increase the flame on high and cook for two minutes. Add some chat masala before serving.

Our Shallow Fried White Yam is done. Serve it with sweet onion dip or any other dip of your choice. Serve it as an accompaniment to lunch or dinner platters or have it as a snack with some tea.

Aubergine Burger

AUBERGINE BURGER

Hello dear friends.Welcome to my corner. Every day we like to eat something new that we have not had yesterday. We want to try and experience newness in our eating style and habits. We all like to eat burgers, a fast food which has been liked by youngsters and most of the mass. Yesterday I had some burger bun in my fridge and aubergines and I decided to give it a new touch and so am going to share this recipe of Aubergine Burger. It is tasty and healthy and is prepared in a matter of minutes. So let’s start with it—

Ingredients:-

  1. Burger Bun -2
  2. Aubergine – 1
  3. Britannia Cheese Singles -2
  4. Rice Flour -1/2 cup
  5. Refined Flour -1/2 cup
  6. Salt -According to you
  7. Black Pepper Powder -1/2 tsp
  8. Red Chilly Powder -1/2 tsp
  9. Garam Masala -1/2 tsp
  10. Mint Flakes – 1/2 tsp
  11. Tomato -1
  12. Onion -1
  13. Lettuce Leaves -2
  14. Panir – 50 gms
  15. Tomato Sauce – 1 tsp
  16. Green Chilly Sauce -1 tsp
  17. Mayonnaise -1 tbsp
  18. Mustard Sauce – 1 tbsp

STEPS 

Step 1

DSC02715.jpgWash and cut the aubergine into rounds and marinate it with salt and black pepper powder. Cut the tomato and onion also in rounds.

Step 2

Take a bowl and add the rice and refined flour. Add salt, black pepper, red chilly powder,garam masala, dried mint flakes and make a thick batter of it adding water. You can also add dried basil or any other herb that you want.

Step 3

Heat a pan, coat the aubergines into the batter and shallow-fry them. Cut the burger buns into halves.

Step 4

DSC02724.jpgNow coat one half of the burger with mayonnaise and mustard sauce and put the lettuce leaf before placing the fried aubergine over it. Now place the cheese single over it. Put the cut tomato and onion over it. Then coat it with the remaining sauces, tomato and green chilly one and grate some fresh panir on it. Add some more salt if is needed. You can also add some hummus to it or use any other kind of sauces that you like.

Our Aubergine Burger is ready. Have it anytime with a glass of fresh fruit juice. It is a very healthy and nutritious snack very favorable for children and all others too.

Rice Flour Chapati

RICE FLOUR CHAPATI

Hello friends, welcome to my corner. Today I’ll be sharing a very unique recipe, a two-minute one of Rice Flour Chapatis which are so soft and quite tasty too. It’s really fun to make it and is really a welcome change to our old ways of eating. So welcome something new in your culinary space and I assure you, it won’t be disappointing. So let’s start with it—

Ingredients:-

  1. Rice Flour – 300 gms.
  2. Nigella Seeds – a pinch.
  3. Water – for making the dough(2 cups).
  4. Salt – a pinch.

STEPS.

Step 1 

Take a heavy bottomed vessel. Add 2 cups of water to it. Boil it.

Step 2 

When the water gets lukewarm, add the rice flour, salt and nigella seeds to it and keep stirring it continuously so that no lumps are formed and the dough does not stick to the vessel.

Step 3 

Switch the gas off after five minutes. Let it cool. You will get a dough-like batter in your vessel from the rice flour.

Step 4 

Now make small balls from the dough and using a rolling pin make chapatis from it.

Step 5 

On a griddle or tawa bake the chapatis but do not put it on an open flame like you do to make wheat flour chapatis. You need to bake it on the tawa itself.

Our rice flour chapatis are ready. Serve them with any veggie of your choice, or a sweet mango pickle and enjoy.

Rice Flour Sweet Cheela With Coconut

RICE FLOUR SWEET CHEELA WITH COCONUT

Hello friends. Today I’ll be sharing a sweet snack recipe of Rice Flour Sweet Cheela With Coconut. It’s really a good idea to have something as a dessert and it’s yummy too. It can be made easily and it’s totally hassle-free. So let’s make it—

Ingredients:-For the cheelas.

  1. Rice flour – 300 gms.
  2. Sugar – 100 gms.
  3. Water – for making the batter.
  4. Vegetable Oil – for making cheela.

For the stuffing.

  1.  Fresh Grated coconut – 200 gms.
  2. Sugar – 50 gms.
  3. Butter – 50 gms.
  4. Raisins – 25 gms.

Step 1

Take the rice flour in a bowl. Add sugar to it and using water make a batter.

Step 2

Take a pan and add butter and the grated fresh coconut along with sugar and stir it for two minutes. After two minutes of stirring, switch off the gas and let it cool. Now sprinkle some raisins in it. You can use other dry fruits also.

Step 3 

Grease a nonstick pan with little butter and with the help of a ladle drop the batter in the pan and spread it evenly. Cook the cheelas on both sides.

Now assemble the cheelas on a plate and fill them with the coconut stuffing. Our Rice Flour Sweet Cheelas are done and ready. Serve them with shakes or with a bowl of fruits. You can make these cheelas with jaggery also.

Steamed Rice Flour Dumplings In Milk

STEAMED RICE FLOUR DUMPLINGS IN MILK

Hello everyone and welcome to my food corner again. Well, this sweet dish is a very popular one amongst my family which I make every year. In our ancestral village when the rice crop matures, the new rice or “Naya Chawal “of the raw variety is found in abundance. So this dish is prepared in our village and in the whole of the Mithila community to which I belong and I have seen it made on the occasion of new year every year in my native place. I too have taken to the ancestral tradition and I make this sweet dish without fail every year on the new year eve and we have it with our friends, relatives and all others who come to my place. We enjoy its superb taste and surely it brings many memories of my stay at my village which is really priceless to me. So I wanted to share this unique dish with you. Here it goes—

Ingredients:

  1. Rice flour – 300 gms.
  2. Milk – 1 1/2 lts.
  3. Sugar – 50 gms.
  4. Milkmaid – 2 tbsp.
  5. Nuts and Raisins(chopped)like Almond, Cashew, Walnut -A handful.
  6. Cardamom Powder – A pinch.
  7. Kesar – A pinch.

STEPS

Step 1

Take rice flour in a bowl. Using some lukewarm water knead a pliable dough out of it.

Step 2

Take the milk in a boiler and reduce it to half its original amount or thicken it. Also, add 2 tbsp of milkmaid in it.

Step 3

Now make tiny balls of the rice flour dough and give it a star-like, round or cylindrical shape and boil some water in a saucepan. When it is steaming hot drop these tiny dumplings in this water and let it remain as such for around twenty minutes. When it gets hardened enough(you can touch it to see its firmness)take it out and keep aside.

Step 4 

Now when the milk is properly thickened add sugar, into it and then drop these steamed dumplings in it slowly. Let it cook for twenty minutes. Mix in the nuts and enjoy.

Our Steamed Rice Dumpling Porridge is ready. Serve it by sprinkling some saffron and cardamom powder over it. It is very tasty and a great sumptuous sweet dish of my house which is liked by all in my family. I hope you like it too.

Steamed Rice Flour And Jaggery Dumplings

Hello and welcome dear friends to my corner again. Today’s recipe is a sweet-savory dish which is unique in taste and quite fun to prepare too. It sure will leave you so sweetly happy. So let’s start with it—

Ingredients:-

  1. Rice Flour – 400 gms.
  2. Jaggery Powder -250 gms.
  3. Water – for steaming.
  4. Cardamom Powder – for decoration.
  5. Honey – for decoration.

STEPS

Step 1

Take rice flour in a bowl. Using lukewarm water knead a pliable dough out of it. Keep aside.

Step 2 

Now take a lump of the dough and rub your palm with some oil. Make a round shape out of the lump, then make a small hole in the middle of it and fill it with jaggery powder. Now close this hole by sticking all ends together and give it a boat-like shape, thicker in the middle and tapering at the ends. You can make these in any shape you want but here I have made them in a boat-like shape. Now grease a plate with oil and put the dumplings gently on it. Be sure to do this step otherwise the dumplings will stick to the plate and won’t lift from it.

Step 3 

Take a big size vessel and fill it half with water. Now heat the water and when it starts to boil slowly drop two to three dumplings in it. Steam them for thirty minutes or until they get a bit hardened and leave the edges of the vessel.

Step 4 

Now take them out one by one out and place them on a plate. Serve them hot and sprinkle some cinnamon powder and drizzle some honey over them.

Our Steamed Rice Flour And Jaggery Dumplings are ready. Eat them hot or cold. This recipe is a famous one in northern India and mostly made in the month of January around the time of Makar Sankranti. It requires lesser ingredients and has a likable taste.

HILSA

Hello and welcome dear friends. Today I’ll be sharing a delicacy of north India, Hilsa, which is a delicious sweet dish made with rice flour and jaggery and is just awesome to taste and even quite simple to make. So let us start—

Ingredients:

  1. Rice Flour – 250 gm.
  2. Jaggery or Gur Powder – 100 gm.
  3. Fennel or Saunf – 1/2 tsp.
  4. Vegetable Oil – for frying.
  5. Water – 1/2 cup.

STEPS

Step 1

Take the rice flour in a bowl. Now take a half cup of water and jaggery in a kadhai and boil it together with some saunf while stirring it consistently. When one string thickness or consistency is got in the jaggery-water mixture, turn off the gas.

Step 2

Now add the rice flour slowly to it and keep on stirring continuously. Let it cool.

Step 3

When it gets cooled the mixture should resemble a dough. Now make long cylindrical shapes out of it and drop it one by one into hot vegetable oil. Take care not to turn them to both sides very frequently as they can break.
Step 4 

Brown them on both sides and take them out slowly. Drain the excess oil on a tissue paper.

The dish, Hilsa is ready.

Note Points:- 1. The rice flour should be fresh for best results.

2. The oil must be hot when you drop the rice balls into it.

3. You can make these in any shape you want to, either round, square or cylindrical.

Hello and welcome dear friends once again to my corner. Today I’m sharing a recipe of Anarsa, a savoury sweet and snack recipe of Bihar, which is tasty, easily made and is a delicacy dish made on various occasions now everywhere in India. So let’s start with it—

Ingredients:For the batter.

  1. Fresh rice flour – 1/2 kg.
  2. Sugar(powdered) – 1 1/2 cups.
  3. Vegetable oil – 2 tbsp.
  4. Curd – 1 cup. (or till you can make a pliable dough out of the rice flour).
  5. Cardamom powder – 1 tsp.
  6. Dry coconut flakes or copra – 1 1/2 tbsp.
  7. Raisin – 1 tsp.
  8. Poppy seeds – spread on a plate.

For frying –Vegetable oil.

STEPS

Step 1 

Take a bowl and put rice flour in it. Add to it the given amounts of oil, sugar, raisins, coconut flakes, and then slowly add curd to it. The given ingredients should form a pliable dough.

Step 2

Heat oil in a vessel and when it is quite hot, make mini pancakes with the dough by spreading it on your palm. Now coat it in the poppy seeds spread in a plate and drop them slowly in the hot oil. One thing to be remembered is that these pancakes are very tender so it must not be tossed too much from one side to the other as they may break in the vessel. When they become firm and reddish on one side toss it then only to the other.

Step 3

Drain the excess oil out of the cakes on a tissue paper. Enjoy.

The dish, Anarsa is ready. It can be had as a snack or can be enjoyed with your cup of tea and coffee.
