MASALA LADYFINGER AND IVY GOURD FRITTERS

Hello, and welcome to my cooking corner again. It is the rainy season here as you all will be knowing and if anyone is craving for hot fritters to have as an evening snack one can make these and relish them well. Though I don’t use to make fritters often at home but today I have made them on the request of my daughter.These are spicy fritters of lady fingers and ivy gourd which are easy to make and crunchy to eat.So let’s start with the recipe.

MASALA LADYFINGER FRITTERS

Ingredients:-For the Masala ladyfinger fritters-

  1. Lady Fingers-200 gms
  2. Rice Flour-50 gms
  3. Refined Flour(Maida)-3 tbsp
  4. Onion-1
  5. Green Chillies-2
  6. Egg-1
  7. Ginger-Garlic Paste-1 tsp
  8. Red Chilly Powder-1 tbsp
  9. Garam Masala-1 tsp
  10. Salt-According to taste
  11. Water-As required
  12. Oil-For deep frying

STEPS
Steps 1

To make the ladyfinger fritters, wash and chop the veggie finely. Chop the onion and green chilies finely too.
Step 2

Take a bowl and add the chopped veggie in it. Now add rice flour, refined flour, chopped onion, and green chilies to it. Next add the spices i.e, salt, red chilly powder,garam masala, and ginger-garlic paste.

Now add the required amount of water to make a thick batter of coating consistency. Adjust the amount of salt and spices in it by tasting the batter before frying.

Step 4

Heat oil in a deep bottomed kadhai and drop spoonfuls of the fritter batter in it.Fry till browned and crisp. Take out on a tissue paper. Keep aside.

Our Ladyfinger Fritters are done. Serve them with ketchup or dip of your choice.
IVY GOURD FRITTERS
For the Ivy gourd fritters:-

  1. Ivy Gourd-100gms
  2. Rice Flour-20 gms
  3. Refined Flour-10 gms
  4. Onion-1
  5. Green Chillies-2
  6. Egg-1
  7. Asafoetida-A pinch
  8. Red Chilly Powder-1 tsp
  9. Garam Masala-1 tsp
  10. Salt-According to taste
  11. Water-As required
  12. Oil-For deep frying

Step 1

To make the ivy gourd fritters, wash and chìýop the veggie finely. Chop the onion and green chilies too.

Now take a bowl and add the chopped ivy gourd, onions, and green chilies, rice flour, refined flour along with the spices, salt, red chilly powder, asafoetida,garam masala.
Step 3

Add water to make a thick batter of coating consistency and heat oil in a kadhai. When adequately hot, drop in spoonfuls of the above-made batter in it. Fry when browned and crisp. Drain out on a tissue paper. Keep aside

Our Ivy Gourd Fritters are done. Serve them with ketchup or a dip of your choice.

Split Black Gram Flour, Potato, And Panir Patties

SPLIT BLACK GRAM FLOUR, POTATO, AND PANIR PATTIES

Hello, and welcome to my cooking corner again. Today I am going to share a recipe of split black gram flour, potato, and panir patties with you guys. Yesterday I bought some split black gram flour from the market. Normally in my household, I make salty pancakes from this flour. And it was my daughter’s idea to make patties out of it mixing in some potato and panir. And the idea was not bad.I have added some sugar too in this recipe. I hope you guys will like my idea. So do make it and let me know how it turned out. And now let’s learn the recipe…

Ingredients:-

  1. Split Black Gram Flour-100 gms
  2. Potato-2
  3. Panir(grated)-150 gms
  4. Onion-1
  5. Green Chillies-3
  6. Crushed Roasted Peanuts-2 tbsp
  7. Raisins-A few
  8. Turmeric Powder-1/2 tsp
  9. Cumin Powder-1 tsp
  10. Red Chilly Powder-1 tsp
  11. Ginger(grated)-1/2 tsp
  12. Garam Masala-1 tsp
  13. Dry Mango Powder-1/4 tsp
  14. Salt-According to taste
  15. Cilantro-As required
  16. Poppy Seeds-For coating
  17. Vegetable Oil-3 tbsp
  18. Dry Coconut(khopra)-Optional
  19. Sugar-1/4 tsp

STEPS

Step 1

B612_20200107_142419_886.jpgBoil the potatoes. Finely chop the onions, green chilies and cilantro. Peel the potato and mash it. Take a pan. Add the split Bengal gram flour and roast it for half a minute. Keep aside. Roast and crush the peanuts. Keep aside.

Step 2

Take a pan. Add vegetable oil and asafoetida. Now add the finely chopped onions, green chilies, grated ginger, and fry for half a minute. Now add the salt, turmeric powder, red chilly powder, cumin powder,garam masala, raisins and fry again. Next, add the roasted flour. Now add the mashed potatoes and fry for half a minute. Also, add the dry mango powder and a pinch of sugar. Add the grated panir. Fry everything well for half a minute and switch the gas off. Mix in some cilantro. You can also mix some dry coconut but it is optional.

B612_20200107_154603_419.jpgMake any shape from the batter and coat in poppy seeds. Shallow fry the patties till golden brown and done. Serve with mayo or a dip of your choice.

Desi Bihari Bhel

DESI  BIHARI BHEL

Hello, and welcome to my cooking corner again. Today I am going to make Desi Bhel’, a rustic Bihari snack which is easy and funky to make in the evenings or anytime. It is not an elaborate recipe and requires not many ingredients. I usually try to showcase those recipes which are simply made from readily available ingredients. It is called a ‘poor man’s snack’ in the rural areas of Bihar and can be made in a jiffy. It is a crunchy, curried snack that is very interesting to prepare and can be made more so by adding the garnishing ingredients to it. This can be made with any lentil or a combination of them but it should be spicy to eat. To serve this bhel, we firstly make the dal fritters and then we curry them or pour the gravy over the fritters. Then we add the garnish of puffed rice, finely chopped onions, green chilies, tamarind juice, green chutney over it and serve. So let’s start with the recipe—

For the dal fritters:

  1. Chana Dal-250 gms
  2. Onion- 1
  3. Dry Red Chillies-3
  4. Cumin-1/2 tsp
  5. Salt-According to taste

For the gravy:-

  1. Onion-1
  2. Ginger Garlic Paste-1 tsp
  3. Turmeric Powder-1/2 tsp
  4. Coriander Powder-1 tsp
  5. Red Chilly Powder-1 tsp
  6. Garam Masala-1 tsp
  7. Dry Mango Powder-1 tsp
  8. Salt-According to taste
  9. Oil-2 tbsp
  10. Water-As needed

For the serving:-

  1. Puffed Rice (Murmura)-100 gms
  2. Onion-1(finely chopped)
  3. Green Chillies-2
  4. Green Chutney-1 tsp
  5. Tamarind Juice-1 tsp
  6. Chopped cilantro- For garnish(optional)
  7. Besan Sev-For garnish(optional)

STEPS

Step 1

20191031_003502.jpgWash and soak the chana dal for 6 hours. Chop the onion and green chilies finely. Now rinse the dal and grind it coarsely. Mix in chopped onion, dry red chilies, cumin, and salt. Soak tamarind in water. Mash the pulp in it to get a slightly thick juice of it. Add some black salt in it. Mix and keep aside. This will be used at the time of the final serving of our bhel as a garnish.

Step 2

Take a pan and add oil in it. Spread it around in the pan with  brush. Now make small balls from the batter and shallow fry in the pan. Take out and drain on tissue paper.

Step 3

Now to make the desi gravy of the bhel, take a pan and add oil in it. Add some finely chopped onions and green chilies. Fry for two minutes. Next add ginger garlic paste and the spices, turmeric powder, red chilly powder, coriander powder,garam masala, dry mango powder, and salt. Fry till done. Lastly, add water for a thick gravy. Simmer for five minutes before switching off the gas.

Step 4

To assemble our desi bhel, take a bowl and place the fritters in it. Now pour the gravy we just made over and around the fritters. Pour tamarind juice. Garnish with finely chopped onion, green chilies, and some green chutney. You can add some besan sev or freshly chopped cilantro over it too though it is optional.

Shallow Fried Potato, Lentil, And Onion Tikkis

SHALLOW FRIED POTATO, LENTIL AND ONION TIKKIS

Hello and welcome to my cooking corner again. Today I’ll be sharing a snack recipe of Lentil Tikkis with potato and onion which is really handy to make and is ready in a jiffy. It is tasty and requires no special ingredient to make. Tikkis are eaten all over in India and are a very popular snack with the people here. People generally enjoy and relax while having tikkis along with tea in the evening. We make potato tikkis, different kinds of lentil tikkis, chicken and fish tikkis, panir tikkis and mixed vegetable tikkis.  Today, I have made this tikki with chana dal, onion, and potatoes, mixed in mild spices which is tasty to eat and quite easy to prepare. I hope you guys will like it and give it a try sometime. So let’s start with the making:-

Ingredients:-

  1. Split Bengal Gram or Chana Dal-250 gms
  2. Potato-1(big)
  3. Onion-1(big)
  4. Red Chilly flakes-1 tsp
  5. Cumin-1/2 tsp
  6. Garam Masala-1 tsp
  7. Grated Ginger-A pinch
  8. Dry Mango Powder or Amchoor Powder-1 tsp
  9. Salt-According to taste
  10. Coriander-1 tbsp(chopped)
  11. Vegetable Oil-  For frying

STEPS

Step 1

Wash, soak the dal overnight. Grind it coarsely in a grinder. Chop the onions and keep aside. Boil the potatoes and grate them with a grater.

Step 2

20190925_053031_20190925053734405.jpgTake a bowl. Add the ground dal, grated potato, chopped onion and parsley, grated ginger, red chilly flakes,garam masala, cumin,amchoor powder, salt, and coriander and mix it well. Shape the patties as you want to. Keep aside.

Step 3

Now heat a non-stick pan and add some oil. When the pan is hot enough, place the patties in the pan and fry them till golden brown.

Our Shallow Fried Potato, Lentil, And Onion Tikki is ready. Serve it as an afternoon or evening snack with tea or coffee.

Shallow Fried Macaroni And Potato Tikkis

Hello, and welcome everyone to my cozy cooking corner again. It is the rainy season and a well suited time to have ‘baarish wale pakore with ginger tea’.Generally, I don’t encourage eating fried dishes but yes, sometimes you can try to bend the rules a bit. We make pakoras of many types and today I am making a pakora of macaroni with potatoes and some mild spices. I think some of you guys will be knowing the recipe. You can have it at breakfast or at brunch. So let’s enjoy making macaroni and potato tikkis and celebrate the goodness and onset of pleasant monsoons in India—

Ingredients:-

  1. Macaroni-200 gms
  2. Potato-1 1/2
  3. Onion-1
  4. Green Chillies-2
  5. Ginger-Garlic Paste-1 tsp
  6. Refined Flour-1/2 cup
  7. Turmeric Powder-1/2 tsp
  8. Red Chilly Powder-1/2 tsp
  9. Cumin Powder- 1/2 tsp
  10. Garam Masala- 1 tsp
  11. Mint Leaves-1/2 cup
  12. Chat Masala-1/2 tsp
  13. Salt-According to taste
  14. Vegetable oil for shallow frying

STEPS

Step 1

20190709_232332.jpgBoil the macaroni till done. Boil potatoes and chop the onions and green chilies finely. Chop the mint leaves too.

Step 2

Take a mixing bowl. Add in the boiled macaroni, mashed potato, onions, green chilies,ginger-garlic paste, turmeric powder, red chilly powder, cumin powder,garam masala, mint leaves, chat masala and salt and mix well.

20190709_232234.jpgHeat 1 tbsp oil in a frying pan. Make out medium-sized patties from the batter and dust it in some flour. Shallow fry the patties out in batches. Drain excess oil on tissue papers.

Our Shallow Fried Macaroni And Potato Tikkis are done. Serve with mustard or tomato sauce or with any dip of your choice.

Sweet Crispy Mathris In Jaggery Sauce

SWEET CRISPY MATHRIS IN JAGGERY SAUCE

Hello, and welcome to my cooking corner again. In the evenings, we all like to eat something light and tasty as a snack to satisfy our anytime-cravings. Some like, salty crunchy snacks and some like homemade sweet snacks apart from biscuits and nonkhatais. And everybody likes to eat mathris undoubtedly. Today I am sharing with you a  recipe of mathris with a different twist, Sweet Crispy Mathris In Jaggery Sauce. In this recipe, the mathris are dipped in a creamy, sweet jaggery and sugar sauce. It is handy and easy to make. I make this recipe frequently and everybody likes it. I hope you guys will like it too. So let’s start with the making—

Ingredients:-For the mathri dough:-

  1. All Purpose Flour(Maida)-2 cups
  2. Baking Powder-2 1/2 tsp
  3. Salt-A pinch
  4. Sugar-1/2 cup
  5. Fennel Seed Powder-1/2ṭsp
  6. Oil-2 tbsp
  7. Water-As needed

For the jaggery sauce:-

  1. Jaggery Powder-1 cup
  2. Water-1 cup
  3. Cardamom-2
  4. Sugar-1/2 cup

STEPS

Step 1

Take a vessel. Add all the ingredients listed for making the dough in it. Mix it well. Leave it for 20 minutes before making the mathris. Now make the jaggery sauce. For that, take a vessel and add the ingredients listed to make jaggery sauce and cook it on medium flame till the sauce becomes of pouring consistency. Switch off the flame. Let it cool.

20190619_155807.jpgTo come to the second phase of our preparation, heat vegetable oil and make small pooris from the above-made dough. Make thicker pooris, neither too big nor too small. Prick holes in the pooris with a fork so that the pooris can absorb the sauce. You can alternately make the mathris of your desired shape and size.

Step 3

When the oil becomes hot drop the pooris in the oil and fry them out till golden browned. Take care to fry these pooris on medium heat. Keep on a tissue paper to absorb extra oils. Store the mathris and sauce in two different jars. At the time of serving, break them into pieces and pour the jaggery sauce over it with an ice cream of your choice.

Our Sweet Crispy Mathris are done.

Rice Flour Parantha With Mango And Jaggery Pickle

RICE  FLOUR PARANTHA WITH MANGO AND JAGGERY PICKLE

Hello, and welcome back to my cooking corner again. Today I am going to share a very simple, authentic yet interesting recipe of Rice Flour Paranthas which has a very yummy potato and veggie filling and which can be served in breakfast or as an evening snack. It is easy to prepare and does not need many ingredients neither does it tire us with an elaborate process. It is very likable and a fun recipe and does go easy on health too. It can be served with any dip or chutney though here I have teamed it up with sweet mango and jaggery pickle. So let’s start with it’s making—

Ingredients:-For the rice parantha dough:-

  1. Raw Rice Flour-2 cups
  2. Salt-According to taste
  3. Lukewarm Water-As required

For the potato filling:-

  1. Potatoes-2
  2. Mixed Veggies-1/2 cup
  3. Onion-1
  4. Green Chillies-2
  5. Kasuri Methi-A pinch
  6. Red Chilly Flakes-1/2 tsp
  7. Garam Masala-1/2 tsp
  8. Chat Masala-A pinch
  9. Chopped Coriander-1/4 cup
  10. Vegetable Oil-1 tbsp
  11. Salt-According to taste

STEPS

Step 1

To make the rice parantha dough, take a saucepan and add in 1 cup of water. Heat it till lukewarm. Now, slowly add the rice flour stirring it continuously. Add salt too. When it cools a bit after forming a dough-like consistency make equal sized balls, a total of four to make two paranthas. Finely chop the onions, green chilies, and the assorted veggies, french beans, carrots, capsicum. Now blanch the veggies and add some green pea also in it. Boil the potatoes. Grate it. Keep aside.

Step 2

20190520_000333_20190520195219569.jpgNow we will make the potato filling. For that,take a pan,add 2 tbsp of oil. Add chopped onions, green chilies and fry for half a minute. Now add salt, red chilly flakes,kasuri methi,garam masala, chat masala, chopped coriander and add the grated boiled potatoes along with the blanched veggies. Now mix everything well. Check for salt and seasonings and let it cool. Next, make the patties out of this batter.

Step 3

Now on a rolling board place a plastic sheet and make four equal sized chapatis out of the dough. Put one of them on the plastic sheet and place one potato patty on its top. Now place the other chapati on top of this patty and seal it using your fingers. Roll the chapati with the rolling pin to make a small sized parantha. Make the other parantha in the same way.

Step 4

Now heat a griddle and shallow fry the paranthas with oil till crisp and crunchy.

Our Rice Flour Parantha With Mango And Jaggery Pickle is done. Serve it as breakfast or as an evening snack with your choicest dip or chutney.

Fish Pizza

FISH PIZZA

Hello and welcome to my cooking corner again. Today I have shared the recipe of Fish Pizza with you all. Pizzas are made in many ways and I added this version of it to the line. It has fried fish and prawns and tasted great. And was liked by my family. It’s a very handy, simple and less time consuming dish. I hope you too will find it tasty. So let’s start with the recipe—

Ingredients:-

  1. Pizza Base-1
  2. Fish Fillets-1 fillet
  3. Prawn-50 gms
  4. Pizza Sauce-1 tbsp
  5. Vegetable Mayonnaise-1 tbsp
  6. Mustard Sauce-1 tsp
  7. Onion-1
  8. Capsicum(green, yellow, red)-1/2 of one for each
  9. Tomato-1/2 of 1
  10. Green Chillies-2
  11. Panir- 4 pieces
  12. Salt-According to taste
  13. Black Salt-A pinch
  14. Black Pepper-A pinch
  15. Paprika-A pinch
  16. Cheese-As required

STEPS

Step 1

Chop the onion and the capsicums into strips. Chop the green chilies and panir into pieces. Marinate the fish fillets and prawns with salt, turmeric powder, and garlic paste.

Step 2

DSC03927.jpgTake a pizza base and apply the pizza sauce on it. Next, apply vegetable mayonnaise and mustard sauce. Take a pan and add some butter. Now add cut capsicums, deseeded tomato, and panir pieces. Season with salt and black pepper powder. Stir fry it.

Step 3

Now shallow-fry the fish and prawns in some butter. Cut the fish into small pieces. Add the fried fish and prawns over the pizza. Add the fried veggie and panir mix over it. Also, sprinkle some paprika. Finally, add some freshly grated cheese over the pizza. Now grease a pan with oil and place the pizza on it. Cook on medium flame till done. Cook it by covering it with a see-through lid.

Note point–You can add more cheese in the pizza according to your wish. Here I have used small amount of cheese. You can add basil, herbs, and mint to the pizza too.

Our Fish Pizza is done. Serve it as a snack anytime you wish to.

Bread Uttapam Sandwich

BREAD UTTAPAM SANDWICH

Hello everyone.Welcome to my cooking corner once again. Today I am going to share a sandwich recipe which you can try and have as either a snack, brunch or breakfast recipe. It is Bread Uttapam Sandwich. It is tastier, not too oily, lighter and gets prepared in little time. I enjoyed making it and I hope you all too will do so. So let’s start with the recipe—

Ingredients:

Bread – 3 slices

For the potato patties:

  1. Potatoes – 4
  2. Onions – 2 (big)
  3. Butter – 3 tbsp
  4. Red Chilly flakes – 1 tsp
  5. Dried Mint Flakes – 1 tsp
  6. Chat Masala – A pinch
  7. Salt – According to taste

For the uttapams:

  1. Idli or dosai Batter(readily available in the Indian markets) – 250 gms
  2. Onions(finely chopped)-1(big)
  3. Green Chillies(finely chopped)-3
  4. Tomato(finely chopped) – 1
  5. Coriander Leaves – 50 gms
  6. Cumin(whole) – 1/2 tsp
  7. Carom seeds – 1/2 tsp
  8. Vegetable Oil – 3 tbsp
  9. Salt – According to taste

Step 1

DSC03700.jpgFor making the potato patties, boil and mash potatoes. Chop the onions, green chilies, and coriander leaves finely. Now add in the seasonings, salt, red chilly flakes, dried mint flakes, chat masala, and butter and mash it well. Now make patties out of the batter and shallow fry in a pan. Keep aside.

Step 2

For making the uttapam batter, take the idli dosai mix in a bowl and add the chopped onions, green chilies, tomato, coriander leaves, salt, cumin, and carom seeds. Mix it up. Here I have used Fresho idli dosai batter mix. You can try something similar.

Step 3

Take a slice of bread and cut it in triangles. Butter one side. Place one potato patty on one half. Now cover it with the other half. Now smear the uttapam batter on the front side of the bread. You can insert some toothpicks in the sandwich to stop it from loosening.

Our Bread Uttapam Sandwich is ready to serve. Have it with a dip of your choice.

Chicken And Lentil Calzone

CHICKEN AND LENTIL CALZONE

Hello guys, welcome to my cozy corner again. Today I am going to share a recipe of Chicken And Lentil Calzone which is my version of Calzones that I came across reading in some magazine. A Calzone is an oven-baked, folded pizza which originated in Naples in the 18th century. It is generally prepared from a salted dough, filled with ham, chicken, vegetables, lots of cheese and also an egg. And my idea of making it is a bit simpler which has some lentil and minced meat fried in light spices and onions. It is an easy recipe which you can try as a snack. I hope you will like it. So, here is the recipe—

  1. Chicken Keema – 200 gms
  2. Chana Dal – 100 gms
  3. Onion – 2
  4. Ginger-Garlic Paste – 1/2 tsp
  5. Turmeric Powder – 1/2 tsp
  6. Cumin Powder – 1/2 tsp
  7. Red Chilly Powder – 1/2 tsp
  8. Fennel Powder – 1/2 tsp
  9. Dry Mango Powder – 1/2 tsp
  10. Garam Masala – 1 tsp
  11. Salt – According to taste
  12. Sugar – A pinch

For the calzone wrappers:

  1. Refined Flour – 400 gms
  2. Baking Powder – 1/4 tsp
  3. Vegetable Oil – 2 tsp
  4. Water – for making the dough

STEPS

Step 1

Take refined flour in a bowl. Add baking powder and oil in it. Make a pliable dough from it. Chop the onions finely. Boil the chana dal.

Step 2

DSC03585_20190126045946019.jpgTake a pan, add oil. Now add the finely chopped onions. Add ginger garlic paste and saute. Now add spices, salt, turmeric powder, red chilly powder, cumin powder, fennel seed powder,garam masala, dry mango powder, sugar and saute it. Now add the chicken keema and saute for two minutes. Add some water and let the keema cook. Dry it up.

Step 3

Next, add the boiled chana dal and saute everything together for a minute. Cool it.

Step 4

To make the calzones, take one portion of the dough and make a small chapati from it. Fill some of the keema batter in the middle of the chapati, fold it from the middle and stick it to the other end of the chapati using some water. Do so for all of them.

Step 5

dsc03579_20190126050153193Take a pan again. Add vegetable oil. Drop the prepared calzones one by one in it and shallow fry them till crisp, browned and done. Soak any extra oil using a tissue paper.

Our Chicken And Lentil Calzone are ready. Serve it with mayonnaise or a dip of your choice.
