POTATO AND WHEAT FLOUR CRUNCHIES

Hello and welcome to my cozy corner again. Today I will be sharing with you a crunchy-munchy snack, the Potato And Wheat Flour Crunchy which is really easy to make and more fun than you could feel when cooking. When you don’t feel like eating elaborately, you can instantly make it and have it with salads and a dip of your choice.

Ingredients:-For the wheat flour mini chapatis

  1. Wheat Flour- 2 cup
  2. Semolina-1 cup
  3. Salt-A pinch
  4. Baking Powder-1/2 tsp
  5. Vegetable Oil-2 tbsp
  6. Water-1 cup or as needed

For the aloo tikki:-

  1. Potatoes-3
  2. Onions-1
  3. Green Chillies-2
  4. Ginger Paste-1 tsp
  5. Fresh or Dry Mint leaves-5
  6. Red Chilly Powder-1 tsp
  7. Salt-According to taste
  8. Garam Masala-1 tsp
  9. Dry Mango Powder-1/2 tsp
  10. Vegetable Oil-1 tbsp
  11. Panir-4 pieces

For the white batter:-

  1. Refined Flour-2 cups
  2. Salt-According to taste
  3. Baking Powder-1/2 tsp
  4. Oregano-A pinch
  5. Black Pepper-A pinch
  6. Paprika-A pinch

Black Sesame-For coating purpose

STEPS

Step 1

DSC02825_20180924082129944.jpgFinely chop the onions and green chilies. Boil, peel and mash the potatoes. Take the wheat flour in a bowl and add semolina to it. Now add the seasonings, salt, baking powder, vegetable oil and make a pliable dough from it adding water.

Step 2

To make the aloo tikkis, take a pan and add 1 tsp of vegetable oil in it. Now add the chopped onions and green chilies. Add the ginger paste and fry till browned. Add the salt, red chilly powder,garam masala, oregano and also add some cut panir, dry mango powder, and mint. Fry everything again for a minute and add in the mashed potatoes. Mix well. Now make out small patties from the batter.

DSC02827_20180924081916074.jpgTo make the white batter, take the refined flour in a bowl and add all the given ingredients in it. Add water to make a batter with coating consistency.

Step 4

Now take a small lump of the wheat flour dough and make a small chapati from it using a rolling pin. To make two crunchies, make out 4 small chapatis from the dough. Now to assemble the dish, take one chapati and put the potato patty on it. Put another chapati on it and then using some water seal the edges of the two chapatis. Now with a brush coat the front side of the crunchy with the white batter and sprinkle some black sesame seeds over it. You may alternately dip whole of the crunchy into the white batter, here I have coated only the front side.

DSC02821_20180924082526690.jpgTake a kadhai and add oil. When the oil heats up drop in the crunchies one by one into the oil and fry them till golden browned. Take out on a tissue paper.

Our Potato And Wheat Flour Crunchy is done. Serve it with mayo, mustard sauce and green chutney mixed together and salad. You can have it as an evening snack or at brunch.

Fried Litti With Mashed Brinjals,Potato and Tomato

FRIED LITTI WITH MASHED BRINJALS, POTATO, AND TOMATO

Hello and welcome back dear friends. Today I’m going to share a simple yet celebrated dish from Bihar called Fried Litti Chokha along with mashed brinjals, potato, and tomato or baingan bharta. This dish can be had at breakfast or brunch and is really very tasty and likable and which is a delicacy of Bihar too. The dish is really for everyone. And I hope you will like it too. So let’s start with its making—

Ingredients:-For the fried littis:-

  1. Wheat Flour-300 gms
  2. Cumin-1 tsp
  3. Baking Powder-1  tsp
  4. Vegetable Oil-2 tbsp
  5. Salt-According to taste

For the Roasted Gram Flour or Sattu filling:

  1. Roasted Gram Flour or Sattu-200 gms
  2. Onions-2
  3. Green Chillies-4
  4. Red Chilly Powder-1 tsp
  5. Dry Mango Powder-2 tsp
  6. Ginger-Garlic, finely chopped-2 tsp
  7. Carom Seeds-1 tsp
  8. Salt-According to taste

For the Mashed Brinjals, Potato And tomato:-

  1. Brinjals-2
  2. Tomatoes-1
  3. Potatoes-1
  4. Onions-1
  5. Green Chillies-2
  6. Dry Mango Powder-1 tsp
  7. Red Chilly Powder-1/2 tsp
  8. Mustard Oil-2 tsp
  9. Chopped Cilantro-A bunch
  10. Salt-According to taste

STEPS

Step 1

To make the littis, take a bowl and add wheat flour, salt, carom seeds, baking powder, oil, and with water make out a pliable dough of it. Now take small portions and make out balls from it. Chop the onions, green chilies and cilantro finely.

IMG-5394.JPGFor the roasted gram flour filling, Take a bowl, add the sattu, chopped onions, green chilies, cilantro, salt, carom seeds, dry mango powder, chopped ginger-garlic and mix everything well.

Step 3

Fill the filling of sattu in the small balls made out of the dough. Seal them well and press them a bit with the palm of your hand. Keep it aside.

Step 4

Heat oil in a kadhai. When done so, drop the balls in the oil and fry them out till golden browned. Drain oil on a tissue paper.

Our Fried Littis are done.

Mashed Brinjals, Potato, and tomato

IMG-5391.JPGWash and make slits in the brinjals and tomatoes. Boil the potato.Roast the brinjals and tomatoes. Wash, remove the skin and mash the brinjal and tomato in a bowl with a masher. Add the boiled potato too. Now add in the chopped onions, green chilies, cilantro, salt, dry mango powder, red chilly powder and mustard oil and give it a good mix.

Our Mashed Brinjals, Potato And Tomato is done.

Serve the fried littis along with the mashed brinjals, tomato, and potato. This dish can be had preferably at breakfast or brunch. It is a famous dish of Bihar, its origin place and generally liked by all.

Bread And Fish Pakoras

BREAD AND FISH PAKORAS

Hello everybody.Welcome to my cooking corner again. Today I am going to share with you a snack recipe with you of BreadAnd Fish Pakoras. It is a crispy, fun and full of flavors to delight you anytime, anywhere. It needs basic ingredients from your pantry and the result is sure going to appeal to you all. So let’s start with it—

Ingredients:-For the fish marination:-

  1. Fish Fillet-200 gms
  2. Salt-A pinch
  3. Turmeric Powder-1 tsp
  4. Garlic Paste-1 tsp

For the refined flour coating batter:-

  1. Refined Flour-1 cup
  2. Rice Flour-2 heaped spoonfuls
  3. Salt-A pinch
  4. Red Chilly Powder-1/2 tsp
  5. Garam Masala-1/2 tsp
  6. Black Pepper Powder-1/2 tsp
  7. Dry Mango Powder-1 tsp
  8. Carom Seeds-1/4 tsp

Other Ingredients:-

  1. Bread-4
  2. Tooth Picks-6
  3. Green Chutney-
  4. Mayonnaise-

STEPS

Step 1

Wash the fish fillet. Marinate it with salt, turmeric and garlic paste.

Step 2

For the batter, take a bowl, add refined flour, rice flour, salt, red chilly powder, carom seeds,garam masala, dry mango powder, black pepper powder and add water to make a batter of pouring consistency.

Take a pan and smear some oil on it. When appropriately heated shallow fry the fish pieces and take them out on a tissue paper.

Step 4

Now cut the bread slices into triangles and put one fried fish on one of the slices covering it with the other one and securing them with some toothpicks. Next, dip this sandwich into the batter and fry in hot oil till browned and crisp. Drain excess oil on tissue papers.

Our Bread And Fish Pakoras are done. Serve them with green chutney and mayonnaise or a dip of your choice.

Fish Bhel

FISH BHEL

Hello and welcome friends once again. Today I’m sharing with you a very creative, funky and really tasty recipe of a bhel made from fish. We generally eat puffed rice bhel but this bhel is tastier which will leave you asking for more. It’s made of basa fish and lots of spicy ingredients which will leave you asking for more. So let’s start making it—

Ingredients:-

  1. Fish(boneless)-150 gms
  2. Peanuts-1 tbsp
  3. Potato-Cheese Pops-7
  4. Pineapple-5 pcs
  5. Nuts(Cashews and Raisins)-1 tbsp
  6. Fresh Coconut-1 tbsp
  7. Namakpare-1 tbsp
  8. Garbanzo Beans-100 gms
  9. Salt-According to taste

For the fish fritters:-

  1. Boneless Fish(cut into strips)
  2. Salt-According to taste
  3. Turmeric Powder-1 tsp
  4. Garlic Paste-1 tsp

For the potato-cheese pops:

  1. Potato-1
  2. Cheese-1/2 cup
  3. Salt-According to taste
  4. Red Chilly Powder-1 tsp
  5. Oregano-1/2 tsp
  6. Gram Flour-3 tbsp
  7. Garam Masala-1 tsp
  8. Pepper Powder-1/2 tsp

STEPS

Step 1

IMG-5344.JPGWash and marinate the fish with salt, turmeric powder, and garlic paste. I have used basa fillets here, you can use any other ones too, but it must be boneless. Shallow-fry it.

Step 2

To make the potato-cheese pops, boil the potatoes, peel them and mash with a masher. Grate the cheese and add to the batter. You can alternately use panir to make the pops too. Add the salt, pepper powder, red chilly powder,garam masala, dry mango powder, oregano. Add the gram flour to the batter and make small balls from it and deep fry in oil.

IMG-5342.JPGBoil the garbanzo beans, dry them and then fry in some oil, taking care not to burn them.

Step 5

Fry the cashews and peanuts too. Chop the coconut into bite-sized pieces. Chop the cilantro and the mint leaves. Also, chop the pineapple into small pieces.

Step 6

To assemble the dish, take a plate and put the fried garbanzo beans in it. Now top it with fried fish fritters and potato-cheese pops. Next, add the chopped coconut pieces, peanuts,cashews,raisins and the diced pineapple. Splutter some fried mint leaves on top.Add some namakpare too.

Step 7

To make the topping sauce, take some tamarind paste, add water and sugar into it. Now make a chutney from coriander and mint and keep aside. Finally just before serving drizzle the tamarind sauce over the bhel. Then add the green chutney. You can add some dry mango powder chutney too. Squeeze some lemon juice over the bhel. Toss everything well and serve immediately.

Our yummy Fish Bhel is done. Serve it as a morning, brunch or evening snack. You can add some mayonnaise or mustard sauce also over the bhel to get that extra punch.

Hello, friends welcome again to my corner. Today I’m sharing with you a random recipe which is not totally original but worth the effort. Every day at brunch time when we have had a lighter breakfast we don’t know what to have to curb the hunger pangs still working inside us. We are more focused on making the lunch menu than in thinking what to have for this brunch period. So I decided to make this Panir Chat. Its tasty, funky, colorful and full of flavors and you will surely like it. It is lighter and won’t make you feel overloaded but will curb those pangs and give you a good mood and energy to make lunch for the day. So let’s get started—-

Ingredients:

  1. Cottage Cheese or Panir-100 gms
  2. Cucumber-1/2
  3. Capsicum-1/2
  4. Onion-1/2
  5. Green Chillies-2
  6. Apple-1/2
  7. Pineapple-1/2
  8. Pear-1/2
  9. Mango(semi-ripe)-1/2
  10. Cashew and Raisins-6 each
  11. Peanuts-1 tbsp
  12. Crushed Papadi-1 tbsp
  13. Crushed Methi Mathri-1 tbsp
  14. Besan Sev-2 tbsp
  15. Salt, both black and white-According to taste
  16. Chat Masala-A pinch
  17. Paprika-1 tsp
  18. Orange Juice-2 tbsp
  19. Coriander-Mint Green Chutney-1 tbsp
  20. Meethi Chutney-1 tbsp

STEPS

Step 1

IMG-5180.JPG Cut your panir into small pieces. Now mix it with salt, green chutney, paprika and lemon juice. Then shallow fry it in a pan.

Step 2

Chop the onion, green chilies and capsicum into medium-sized pieces and fry the capsicum in some oil. Roast the cashews and peanuts. Cut the fruits into small pieces. You can add fruits of your choice also.

Add to it the capsicum, onions, green chilies, apple, cucumber, dry fruits,papadi, methi mathri, panir, the fruits, salt both black and white and paprika. Next add the chutneys, green and meethi. You can add any chutney of your choice, but here I have used the above-mentioned ones. Sprinkle some besan sev on top and drizzle some orange juice over the chat to make it still tastier. Toss everything well and serve immediately. Enjoy the dish as a brunch time idea over a cup of hot milky tea.

Hello, lovelies. Today I had some fish in my refrigerator and so being bored with the regular curry-makings I decided to cook up this recipe of spicy fried fish in my mind. It came out superb and I decided to share this goody-idea with you all. Hope you will like it and do make it, it’s lovely with the right taste, colors and flavors and will really pep you up. The recipe is as follows:—-

Ingredients:-

  1. Fish(whole, medium-sized) -2
  2. Garlic Paste – 2 tsp
  3. Dried Crushed Curry Leaves – 1 tsp
  4. Fish Masala – 1/2 tsp
  5. Fenugreek Seeds Powder – 1 tsp
  6. Aniseed or Saunf Powder – 1 tsp
  7. Oregano – 1 tsp
  8. Turmeric Powder – 1 tsp
  9. Paprika – 1 tsp
  10. Salt – According to taste

To be mixed together:-

  1. Olive Oil – 1 tbsp
  2. Lemon juice – 2 tsp

STEPS

Step 1

Wash and clean the fish and make cuts on it.

IMG-4968 (1).JPGMarinate the fish with salt, turmeric, paprika, garlic paste, fenugreek powder, aniseed powder, oregano, dried curry leaves, and fish masala. Rub the fish pieces with some olive oil and lemon juice. Keep the fish aside for an hour.

Step 3

In a pan, add some olive oil. And shallow fry the fish. Drain on tissue paper.

Hello dear buddies. How have you been? After the chilly winters receding now, spring has entered in India. The weather has become awesome with mild breeze, sunshine and lots of cravings to eat something spicy, tasty and fun. In Delhi, it is quite normal watching people especially ladies going for shopping and enjoying chats and golgappas. So today I am making this samosa chat recipe for my daughter, Ambika. The recipe is as follows—–

Ingredients:-For making the pea gravy—

  1. White Peas – 250 gms
  2. Onions(big) – 1
  3. Ginger-Garlic Paste – 1 tsp
  4. Turmeric Powder – 1 tsp
  5. Red Chilly Powder – 1 tsp
  6. Roasted Cumin Powder – 1 tsp
  7. Garam Masala – 1 tsp
  8. Tomato Puree – 1 tbsp
  9. Salt – According to taste
  10. Vegetable Oil – 1 tbsp

For the samosa chat-

  1. Samosas-3
  2. Onion(chopped)-1
  3. Green Chillies-2
  4. Green Chutney-1 tbsp
  5. Red Chutney(dry mango chutney)-1 tbsp
  6. Black Salt – 1 tsp
  7. Lemon Juice-2 tsp
  8. Fresh chopped coriander-For garnish

IMG-4874.JPGTo make the white peas, wash and soak them overnight. Boil them the next day.

Step 2

To make the chole, take a pan. Add vegetable oil. Add the chopped onions and stir for three minutes. Next, add the ginger-garlic paste. Saute again for a minute or two. Now add the dry masalas, salt, turmeric powder, red chilly powder, roasted cumin powder and garam masala. Add the tomato puree and fry everything for three minutes. Add the boiled peas and water and let it cook for five minutes on medium flame. The final gravy should be thick.

Our Peas are done. Keep aside.

Step 3

Now to make the chat let’s assemble the ingredients together. For that, firstly chop the onions, green chilies, fresh coriander and prepare the two chutneys, one is the green chutney made from coriander, mint, green chilies and the other is red chutney, made from dry mango or amchur powder both of which I have made in one of my earlier blogs. Please refer to the recipe from there.

IMG-4873.JPG Break the samosas into halves. Pour some pea gravy on them. Now drizzle the two chutneys on tops of the samosas. Next sprinkle the onions, green chilies, coriander all over them. Lastly, squeeze some lemon juice to get that zing!!
