SAUTEED DUCK WITH SPICY BEATEN RICE

Hello and welcome dear friends to my corner again. Today I’ll be sharing a delectable, delicious and a very special, creative idea of Sauteed Duck With Spicy Beaten Rice. The idea for this recipe came to me while going through a household magazine which had the recipe of duck meat. I gave the dish a slight twist to come up with this idea of a combo dish of the duck meat with spiced beaten rice. The duck meat is really so flavorful and juicy you can’t put it down. And the spiced beaten rice here really does the tango. A really mouthwatering idea which is a hit one according to me. So let’s start with the recipe—

Ingredients:-For the sauteed duck

  1. Duck(curry cut)-250 gms
  2. Onions-3
  3. Ginger-garlic paste-1 tsp
  4. Tomato Puree-2 tbsp
  5. Coriander Powder-1 tsp
  6. Red Chilly Powder-1 tsp
  7. Mutton Masala-1 tsp
  8. Garam Masala-1 tsp
  9. Dry Mango Powder-1/2 tsp
  10. Turmeric Powder-1 tsp
  11. Salt-According to taste

For the spiced beaten rice-

  1. Beaten Rice(thick variety)-200 gms
  2. Onions-1
  3. Green Chillies-2
  4. Peanut and Cashew-1/2 tbsp each
  5. Turmeric Powder-1 tsp
  6. Coriander Powder-1/2 tsp
  7. Homemade Garam Masala-1 tsp
  8. Salt-According to taste
  9. Dry Mango Powder-1/2 tsp
  10. Lemon Juice-1/2 tsp

For the tempering:-

  1. Vegetable oil-2 tbsp
  2. Ghee-2 tbsp
  3. Bay leaf-2
  4. Assorted Whole Garam Masalas like big and small cardamom, whole pepper, cinnamon,cloves-1 tsp

Sauteed Duck

To make the sauteed duck, wash and rub turmeric and salt in it. Keep aside. Chop the onions and green chilies roughly.

Spicy Beaten Rice

Take a pan and add all the tempering ingredients. Now add the chopped onions and chilies and fry for two-three minutes. Next, add ginger-garlic paste and the marinated duck. Fry for ten minutes and add the spices, salt, turmeric powder, red chilly powder, coriander powder, mutton masala,garam masala, and fry. Next, add the tomato puree. Give everything a good mix and fry finally for four minutes before adding water. You need not add too much of oil in this recipe as on frying the duck meat gives out a lot of oil on its own.

DSC02466 (1).jpgNow add enough water and pressure cook the meat or alternately cook it in a pan but the second option would be more time-consuming. On cooking it in a cooker the dish would be ready after two-three whistles or you may cook it till done.

Our Sauteed Duck is ready. Serve it with vegetable biryani, peas pulao or breads of your choice apart from serving it in the way as given here.

Garnish with salted and semi-fried capsicum and raisins. You may though garnish it according to your wish.

Serve it with plain or tempered beaten rice or poha.

For the spicy beaten rice

Step 1

Take a pan and add some vegetable oil to it. Add the chopped onions and fry. Add the peanuts and cashews and fry again for a minute. Now add the spices, salt, turmeric powder, red chilly powder, homemade garam masala, coriander powder and a pinch of sugar and fry everything well before adding the washed and squeezed beaten rice. Saute everything well for three minutes. Lastly, add the dry mango powder and some lemon juice. You may pour one spoonful of ghee for better taste.

Our Spicy Beaten Rice is done. Garnish it with grated fresh coconut and cilantro. It can be had as an accompaniment or completely as one proper dish with duck stew or potato-coconut curry.

Chicken And Vegetable Stew

CHICKEN AND VEGETABLE STEW

Hello, friends welcome again. Today I did something different from making authentic Indian dishes, rather I decided to make a Thai-inspired dish of chicken and vegetable stew. Its a real comfort food of old-school idea and is truly wholesome, creamy and flavorful. It will really let you taste the magic of Thailand and is made too quick to believe it. With just the right set of ingredients and mild spice seasonings, it will give you a wonderful eating experience quite memorable and fun. So let’s start making it—-

Ingredients:–

  1. Chicken(boneless)-250 gms
  2. French Beans-200 gms
  3. Carrot-150 gms
  4. Potato-1 (big)
  5. Onion-1(big)
  6. Broccoli-150 gms
  7. Mushroom-150 gms
  8. Ginger-Julienned
  9. Coconut Milk-4 cups
  10. Oregano- 1/2 tsp
  11. Black Pepper-1/2 tsp
  12. Red Chilly Flakes-1/2 tsp
  13. Salt-According to taste
  14. Chicken Stock-5 cups
  15. Fresh Cream-For Garnish

STEPS

Step 1

IMG-5051.JPGWash, cut and blanch the vegetables and chicken in chicken stock till half done.

Step 2

Now in the same utensil add the coconut milk and boil for three minutes or till done.

Step 3

Our Chicken And Vegetable Stew is done. Garnish with fresh cream and cilantro. You can add green peas too to the dish but it is optional.

Oil-Free Bottle Gourd And Black Gram Stew

OIL-FREE BOTTLE GOURD AND BLACK GRAM STEW

Hi everybody.Welcome to my corner. Everyone nowadays is suffering from health-related issues and people are not keeping selves and life up-to-date and fit. They are unable to manage it. So it’s really become the need of the hour to start eating healthy to stay so. So most Indians have switched over to cooking oil free and healthy. Continuing in his league today I’ll be sharing an oil-free stew recipe of bottle gourd and black gram, a unique combination which is super healthy and tasty and will really make you think better of the otherwise thought to be a bland and boring vegetable. So let’s start to make it—

Ingredients:-

  1. Bottle Gourd – 1.
  2. Black Gram – 100 gms.
  3. Onion – 1(big).
  4. Poppy Seeds – 1 small bowl.
  5. Cashew nuts – 5-7.
  6. Green Chillies – 2.
  7. Asafoetida – A pinch.
  8. Ginger-Garlic Paste – 1 tsp.
  9. Turmeric Powder – 1 tsp.
  10. Red Chilly Powder – 1 tsp.
  11. Coriander Powder – 1 tsp.
  12. Garam Masala – 2 tsp.
  13. Salt – According to taste.

For the tempering:-

  1. Cumin – 1 tsp.
  2. Curry Leaves – 4.
  3. Cinnamon- 1 small stick.
  4. Green and Black Cardamom – 1 each.

For the garnishing:-Chopped cilantro and green chilies.

STEPS.

Step 1 

Wash and scrape the bottle gourd. Cut it into medium-sized cubes. Boil it. Soak the black gram overnight and boil it till it is done. Make a paste of poppy seeds, one green chilly, cashew nuts and keep aside. Chop the onions finely.

Step 2 

Take a skillet and add cumin, cinnamon and a pinch of asafoetida and when it splutters add the finely chopped onions. Fry it for two minutes.

Now add the ginger-garlic paste, turmeric powder, red chilly powder, coriander and garam masala and fry again. Now add in the tomato puree and fry for two minutes. Next add the onion, poppy and cashew nut paste. Fry it for two minutes. Now add in the pre-boiled bottle gourd cubes and the black gram and fry it again. Now add water for the gravy and cook for ten more minutes.

Note point:-1. Any kind of seasonal vegetable can be used other than what has been used by me here.No oil as a medium is needed here, not even one drop. Any kind of beans can also be used here in place of black gram.

2. You can also add some coconut milk to the dish just five minutes before switching off the gas.

3. You can add either bay leaf or curry leaves as both give good flavors.

4.When your stew is done and is not on the gas burner, or when it has cooled then squeeze in the juice of half a lemon. Don’t do so when the dish is hotter.

Garnish the dish with chopped cilantro.

Our Oil-Free Bottle Gourd And Black Gram Stew is ready. Serve it with chapatis, steamed rice, tortillas, kachoris. It is as healthy and as tasty as you wanted it to be.
