JAGGERY KHEER

Hello friends and welcome again to my cozy food corner. Today we’ll be learning how to make Jaggery or Gur Kheer. It’s a great dessert made with rice cooked in milk and jaggery which gets a classy taste of jaggery, is creamy and is a likable twist from the plain kheer. This dish is a famous one in India and is considered very important on holy occasions like pujas where it is the primary item which is offered to Gods.

Ingredients:

  1. Milk – 1 kg.
  2. Raw Rice – 100 gms.
  3. Jaggery – 150 gms.
  4. Dried Fruits like cashew, raisin, almond, walnut, pistachio.
  5. Milkmaid(optional) – 2 tbsp.
  6. Cardamom – 2.
  7. Dry coconut pieces or Khopra – a handful.

STEPS

Step 1

Firstly boil the milk. Now take the given amount of milk in a heavy bottomed vessel and add rice to it. Now cover the vessel with a lid and let the ingredients get cooked. You can pressure cook alternately the rice and milk till done.

Step 2

Now add the jaggery in the kheer and also add dry fruits of your choice. You can add milkmaid also for a creamier and tastier version of this dish at the end after you have switched the gas off. Lastly, sprinkle a pinch of cardamom powder in the kheer along with dry coconut or khopra cut into very small pieces.

Our creamy, sweet and wonderful Jaggery Kheer is ready. It is best enjoyed when served hot.

Potato Chops With Jaggery Tea

POTATO CHOPS WITH JAGGERY TEA

Hello and welcome friends to my corner again. Today, I’m sharing with you a simple snack recipe of Potato Chops best had with Jaggery Tea which will really make your mood and time worthwhile. A simple, super snack to be made, anytime you wish to. So let’s start with this quickie—

Ingredients:-

  1. Potato – 4
  2. Onion(big) – 1
  3. Green Chillies – 2
  4. Red Chilly Powder -1 tsp.
  5. Home-made Garam Masala – 1 tsp.
  6. Eggs -5.
  7. Black Pepper Powder – 1 tsp.
  8. Salt – According to taste.
  9. Coriander – For Garnishing.

STEPS

Step 1

Wash, pressure cook and mash the potatoes using a masher. Cut onions and green chillies finely.

Step 2 

Mix salt, red chilly powder, garam masala, onions, green chillies and freshly chopped coriander in the potato batter. To make the egg wash add salt and black pepper powder to the eggs and whisk them well.

Step 3 

Now heat vegetable oil in a wok. When it is hot take some portion of the potato batter on your palm make a small flat round of it on your palm and dip it in the egg wash and drop it in the oil.  Fry them till reddish on both sides in colour and blot them well on a tissue paper.

Step 4

Serve them with schezuan sauce, or simply tomato and green chilly ketchup. Our potato chops are ready thus.

                               Jaggery Tea

Ingredients:

  1. Water -2 cups.
  2. Jaggery -1 cup.
  3. Tea(leaf and finings combined)-3 tbsp.
  4. Bay leaf -2
  5. Milk -1 cup.

STEPS

Step 1

Take water in a saucepan, add two bay leaves and bring it to a boil.

Step 2

When two boils come in the water add the given amounts of jaggery along with tea and let it boil for three more minutes.

Step 3

Now we will see that the tea has changed color and become a shade darker. Switch the gas off and cover it with a lid.

Step 4 

Now warm the tea, add some milk to it according to your choice. Discard the bay leaf along with the tea residue. Enjoy it with your favourite cookies or muffins.

Jaggery Sweet Meats

JAGGERY SWEET MEATS

Hello and welcome dear friends. Today I’m sharing a sweet delicacy of Bihar made from refined flour and jaggery which is made for special occasions and is a great treat for kids and everyone else. So let’s start with it—

Ingredients:-

  1.  Refined flour (maida) – 400 gms.
  2. Jaggery powder – 1 1/2 cup.
  3. Cardamom – 2-3
  4. Water – according to need.
  5. Vegetable oil – 2 tbsp.
  6. Vegetable oil -for frying.

STEPS

Step 1

Take the given amount of refined flour and add 2 tbsp of vegetable oil to it. Then add water to make a firm dough.

Step 2

Take a little bit of dough and make a ball from it. Now flatten the ball with a rolling pin to make a small chapati-like shape.

Step 3

Now make slits on the chapati that you have made from one side to the other. Now roll the chapati from one corner to meet the other and press on ends of the chapati so that they stick together.

Step 4

Heat some oil in a vessel and fry these rolls in it till they turn pinkish. Drain out the excess oil on a tissue paper.

Step 5

Now heat some water in another vessel and add the given amount of jaggery powder to it. Stir it and let it get a bit thicker.

Step 6

When the liquid has become thicker drop in the fried rolls in it and coat each side of roll properly in the jaggery mixture. Now turn the gas off and let it dry.

The fried rolls in jaggery or ‘Meethe Karele’ are ready. They can be had as a sweet snack.

Hilsa

HILSA

Hello and welcome dear friends. Today I’ll be sharing a delicacy of north India, Hilsa, which is a delicious sweet dish made with rice flour and jaggery and is just awesome to taste and even quite simple to make. So let us start—

Ingredients:

  1. Rice Flour – 250 gm.
  2. Jaggery or Gur Powder – 100 gm.
  3. Fennel or Saunf – 1/2 tsp.
  4. Vegetable Oil – for frying.
  5. Water – 1/2 cup.

STEPS

Step 1

Take the rice flour in a bowl. Now take half cup of water and jaggery in a kadhai and boil it together with some saunf while stirring it consistently. When 1 string thickness or consistency is got in the jaggery-water mixture turn off the gas.

Step 2

Now add the rice flour slowly to it and keep on stirring continuously. Let it cool.

Step 3

When it gets cooled the mixture should resemble a dough. Now make long cylindrical shapes out of it and drop it one by one into hot vegetable oil. Take care not to turn them to both sides very frequently as they can break.
Step 4 

Brown them on both sides and take them out slowly. Drain the excess oil on a tissue paper.

The dish, Hilsa is ready.

Note Points:- 1. The rice flour should be fresh for best results.

2. The oil must be hot when you drop the rice balls into it.

3. You can make these in any shape you want to, either round, square or cylindrical.
