Zucchini Fritters.

Ingredients:

  1. Zucchini – 200 gms.
  2. Gram Flour or Besan – 250 gms.
  3. Rice Flour – 25 gms.
  4. Onion – 1.
  5. Green Chillies – 2.
  6. Potato – 1.
  7. Ginger-Garlic Paste – 1 tsp.
  8. Salt – According to taste.
  9. Panir – 1 slice.
  10. Garam Masala – 1 tsp.
  11. Red Chilly Powder – 1 tsp.
  12. Peanuts – 2 tbsp.
  13. Coriander Leaves – A handful.
  14. Cheese – 1/2 cup.(optional).

STEPS.

Step 1 – Wash,scrape and grate the zucchini. Boil, peel and mash the potato.Finely chop the onions,green chillies,coriander leaves.Grate the panir cube and crush the peanuts coarsely in a mortar-pestle or spice grinder.

IMG-4037.JPGStep 2 – Take a bowl.To it add the given amounts of gram and rice flour,remaining spices,ie,salt,garam masala and red chilly powder.Now add to this mixture the grated zucchini,onions,mashed potato,green chillies,peanuts,coriander leaves,grated panir and some grated cheese,though the last ingredient is optional.Now adding some water make a batter so that you can form small pakoras out of it on your hand.

Step 3 – Heat oil in a kadhai and when it is hot start dropping small balls of the above made batter into it.You can flatten the balls as I have done and give it some other shapes too.Fry them till browned and crisp.

Our crunchy and tasty zucchini fritters are ready.Serve it with yoghurt,mayo dip,mustard sauce or any other dip that you like.

Oil-free panir and bitter gourd curry.

Servings – 4.

Preparation Time – 20 minutes.

Ingredients:-

  1. Bitter gourd – 250 gms.
  2. Panir or Tofu – 100 gms.
  3. Onions(finely chopped) – 1(big size).
  4. Turmeric Powder – 1 tsp.
  5. Red Chilly Powder – 1 tsp.
  6. Ginger-Garlic paste – 2 tsp.
  7. Coriander Powder – 1 tsp.
  8. Cumin Powder – 1 tsp.
  9. Vegetable or Subzi masala – 1 tsp.
  10.  Fresh tomatoes(chopped) – 2.
  11. Garam Masala – 1/2 tsp.
  12. Dry Mango Powder or Amchoor Powder – 1/2 tsp.
  13. Salt – According to taste.

For the tadka – Five Spices – 1 tsp.

  1. Curry Leaves – A bunch.

For Garnish – Fresh chopped cilantro.

IMG_3093.JPGStep 1 – Wash and cut the bitter gourd in large pieces.Now half-boil it in a saucepan adding slight salt and turmeric powder.Finely chop the onions and the tomatoes.Cut the panir in medium-sized cubes.

Step 2 – Take a kadhai and add the five spices to it.Now add some chopped onions.Fry it till half-done.Now add the curry leaves and ginger-garlic paste to it and fry again till the paste is properly fried,letting its rawness go.Now add in the masalas i.e,salt,turmeric powder,red chilly powder,coriander-cumin powder,subzi masala,garam masala and fry it without using even one drop of oil.If the masalas start to burn sprinkle some water over them and then fry.Now add the chopped tomatoes and cook the masala again till it is very well fried.The taste of the curry will come only when the masalas and tomatoes are well fried and cooked.They should not have any bit of rawness in them. Lastly add the dry mango powder.Now drop in the panir pieces and fry them for two-three minutes.Next add in the boiled bitter gourd and fry again for two minutes.Now add the water to make a sumptuous gravy taking care not to add too much of it also.You can fry the cubes without using oil in a pan  or use it just as it is for the gravy.Let the gravy simmer for ten minutes.

Corn,Panir and Cabbage Mini Triangles.

Serving:-For 3 persons.

Prep Time :-20 minutes.

Ingredients:-

For the wraps.

  1. Refined Flour(Maida) – 300 gms.
  2. Salt – A pinch.
  3. Water – For kneading.
  4. Vegetable Oil – 1 tbsp.

For the filling:-

  1. Cabbage – 150 gms.
  2. Panir – 50 gms.
  3. Corn kernels – 3 tbsp.
  4. Ginger(grated)- 1/2 tsp.
  5. Garam Masala – 1 tsp.
  6. Maggi Masala – 1 pkt.
  7. Dry Mango Powder – 1/2 tsp.
  8. Salt – According to taste.

STEPS.

Step 1 – Firstly take the refined flour in a bowl and mix a pinch of salt and vegetable oil in it.Then knead it using water to make a pliable dough.

Step 2 – To make the triangle filling chop the cabbage very finely.Cut the panir into very small cubes.Boil the corn kernels.Now take a bowl and add the chopped cabbage into it along with the panir and add some corn kernels to it.Add salt,garam masala,grated ginger,maggi masala,dry mango powder to it.Now mix everything well.

Step 3 – Now make a small tortilla from the dough using a rolling pin and cut it in halves using a butter knife.Take one portion of the cut tortilla and fill it with some of the filling and then give it a mini samosa shape and seal it well by using some water.Make all the triangles in the same way.You can change the shape of the triangles also and give it the shape you want.

Step 4 – Now heat oil in a kadhai and when its quite hot drop the mini triangles one by one in the oil and fry them till golden browned.Take them out and drain the excess oil on a tissue paper.

Our Corn panir and cabbage mini triangles are ready.Serve them with Thai sweet chilly sauce,peri-peri hummus or mayonnaise.
