Pumpkin Skin And Corn Stir-Fry

PUMPKIN SKIN AND CORN STIR – FRY

Hello and welcome again. Wishing you all a very happy Monday. Today I was wondering what to make for lunch and having too many veggies in my refrigerator was getting me confused. So I  have made this tasty and easy stir-fry along with some sweet corn kernels. It is a handy recipe and can be a great side dish for your lunch or dinner platter. It is mildly spiced so is easy on your tummy too. So let’s make it—-

Ingredients:-

  1. Red Pumpkin skin(with a little flesh too)-250 gms.
  2. Sweet Corn Kernels – 1 tbsp
  3. Onion-1
  4. Green Chillies – 2
  5. Turmeric Powder – 1 tsp
  6. Red Chilly Powder- 1 tsp
  7. Garam Masala – 1 tsp
  8. Pepper Powder – 1/2 tsp
  9. Dry Mango Powder- 1 tsp
  10. Paprika – 1 tsp
  11. Chat Masala – 1/2 tsp
  12. For Garnishing – Fresh Chopped Coriander or Desiccated coconut

For Tempering:-

  1. Cumin – 1 tsp
  2. Fenugreek Seeds – 1tsp
  3. Asafoetida – A pinch
  4. Kasuri Methi – 1 tsp
  5. Vegetable Oil – 2 tbsp

STEPS

Step 1

IMG_4780.jpgWash and scrape the pumpkin skin keeping some of its flesh intact and cut it into long strips. Chop the onions, green chilies. Blanch the sweet corn kernels and you may blanch the cut skin strips too.

Step 2 

Take a pan. Add vegetable oil in. Now add the tempering ingredients, cumin, fenugreek, asafoetida, kasuri methi and then add the chopped onions and green chilies. Stir for two minutes and then add in the blanched pumpkin skin and sweet corn kernels. Stir again for five minutes to remove the rawness of the vegetables.

Step 3

Now add salt, turmeric powder, red chilly powder, garam masala, pepper powder, paprika, dry mango powder and fry it all for two minutes.

Cook the veggie on high flame for ten minutes or till the veggies are done. Garnish it with chopped coriander or fried green chilies. You may also add some grated fresh coconut.

Our Pumpkin Skin And Corn Stir-Fry is done. Serve it with chapatis, stuffed paranthas, rice, dal, curries. It is a perfect side dish for your lunch and dinner platters.

Lentil With Water Chestnuts And Radish Fry

LENTIL WITH WATER CHESTNUTS AND RADISH FRY

This is a delicious lentil-based dish with a unique twist to it by adding water-chestnuts or paniphal. The dish is high in proteins, is having a unique taste and requires zero intervention of oil. Combined with its side dish, both make a super healthy combo which cannot be missed by health freaks and all those people who don’t want to compromise on either of the taste or the health factors.

Ingredients:-For the Lentil with water-chestnuts(Paniphal)

  1. Split Green Gram – 250 gms.
  2. Water Chestnuts(Paniphal) – 25 gms.
  3. Onion – 1.
  4. Salt – According to taste.
  5. Turmeric Powder – 1 tsp.
  6. Red Chilly Powder – 1 tsp.
  7. Pepper Powder – 1/2 tsp.
  8. Garam Masala – 1/2 tsp.
  9. Dry Mango Powder – 1/2 tsp.
  10. Asafoetida or Hing – A pinch.

For the tempering or tadka:-

  1. Cumin and Black Mustard- 1 tsp.
  2. Kasuri Methi – 1 tsp.
  3. Green or Dry Red Chillies – 1.
  4. Vegetable Oil – 1 tbsp.

STEPS

Step 1

Take a pan and dry roast the split green gram in it till lightly browned. Now wash it. Peel the skin of the water chestnuts. Chop the onion finely. Next, take a pressure cooker and add the lentil in it along with the water chestnuts, salt, turmeric powder, water and raw asafoetida. Cook the daal.

Step 2

Now for the tempering take a kadhai and add vegetable oil. Then add all the ingredients of the tempering except kasuri methi and when they crackle add the chopped onion in it. Fry it for two minutes. Now add the kasuri methi, red chilly powder, pepper powder, garam masala, dry mango powder and after stirring it for a minute add in the boiled lentil with the water chestnuts. Boil it up for two minutes.

Our Lentil With Water Chestnuts is ready. Check the seasonings before serving and serve with steamed boiled rice and stir-fries of your choice.

Radish Stir-Fry

Ingredients:-

  1. Radish – 2.
  2. Onion – 1/2.
  3. Green Chillies – 2.
  4. Salt – According to taste.
  5. Turmeric Powder – 1/2 tsp.
  6. Red Chilly Powder – 1/2 tsp.
  7. Garam Masala – 1/2 tsp.
  8. Dry Mango or Amchoor Powder – 1/2 tsp.
  9. Vegetable Oil – 1 tbsp.

For the tempering:-

  1. Chana Dal – 1/2 tsp.
  2. Urad Dal – 1/2 tsp.
  3. Curry Leaves – 4-5.
  4. Asafoetida – A pinch
  5. Black Mustard Seeds – 1/2 tsp.

STEPS:-

Step 1

Wash, peel and chop the radish finely. Blanch it. Chop the onion, green chilies finely.

Step 2

Take a kadhai. Add vegetable oil. Splutter in the black mustard seeds, chana dal, curry leaves, urad daal, asafoetida and let it crackle. Add in the chopped onion and green chilies and fry it for two minutes. Now add the blanched radish and the masalas, salt, turmeric powder, red chilly powder, garam masala, dry mango powder and fry again for five minutes.

Our Radish Fry is done. Garnish it with chopped coriander. Serve it as a side dish with your regular lunch and dinner platters.

Red Pumpkin Stir-Fry

RED PUMPKIN STIR-FRY 

Hello and welcome again to my cooking corner. Today’s share is a simple, stir-fry recipe of red pumpkin which needs just a slight spicing up to enhance in taste as red pumpkin is having quite a very good taste of its own. It is a hassle-free, tasty, and a quick one to be made when you don’t have time on your hands. So let’s start with it—

Ingredients:-

  1. Red Pumpkin(small) – 1
  2. Turmeric Powder – 1/2 tsp.
  3. Asafoetida or Hing – A pinch.
  4. Salt -According to taste.
  5. Garam Masala – 1 tsp.

For tempering

  1. Five Spice or Paanchphoran(whole) – 1 tsp.
  2. Dry Red Chilly -2.
  3. Bay Leaf – 1.
  4. Olive Oil – 2 tbsp.

For Garnishing:

  1. Fresh Cream -2 tbsp.
  2. Cilantro -A handful.

STEPS

Step 1

Wash, scrape and finely chop the pumpkin.

Step 2 

Now take a wok and add 2 tbsp of olive oil into it. Now add paanchphoran,  dry red chilly and 1 bay leaf into the oil. When it starts to splutter add a pinch of asafoetida in the wok.

Step 3

Now add the finely diced red pumpkin, salt, turmeric powder and saute the veggie for five minutes. Now cover the wok with a lid and simmer your flame to a medium flame. Let it cook.

Step 4 

When the red pumpkin is cooked add 1 tsp of garam masala in the veggie and saute it once more.

Step 5

Switch off the flame and garnish it with chopped fresh cilantro and fresh cream.

Our Red Pumpkin Stir-Fry is ready to be served. Serve it with hot phulkas, naan, paranthas, rice etc.

Brinjal, Broad Beans, Radish And Dill leaf Stir-Fry

BRINJAL, BROAD BEANS, RADISH, AND DILL LEAF STIR-FRY

Hello and welcome dear friends once again. Today I’ll be sharing a simple, healthy, all green and tasty stir-fry recipe of Brinjal, Broad Beans, Radish And Dill Leaf Stir-Fry. It’s super easy to make and can be had with lunch or dinner platters. So let’s start—

Ingredients:

  1. Brinjal -250 gms.
  2. Broad beans -200 gms.
  3. Radish – 100 gms.
  4. Dill leaves- 50gms.
  5. Fenugreek leaves – 50 gms.
  6. Salt – According to taste.
  7. Turmeric powder – 1/2 tsp.

For tempering:-

  1. Five spice – 1/2 tsp.
  2. Dry Red Chilly – 1 1/2.
  3. Vegetable oil – 2 tbsp.

STEPS

Step 1 

Wash and cut all the vegetables finely.

Step 2 

Heat a pan. Add some vegetable oil in it. Now add half teaspoon five spices, one and a half dry red chilies and let it crackle.

Step 3 

Now add the cut veggies and salt and turmeric powder to it.

Step 4

Add slight water so that the veggies get cooked and cover it with a lid. Let it cook by steam. Take the lid off and fry it on a high flame for five minutes.

Step 5

Our dish is ready. Garnish it with chopped coriander.
