SPICY YAM CURRY

Hello and welcome dear friends to my cozy cooking corner. Today I’m sharing a delicious curry recipe of yam patties dipped in onion and tomato gravy. It’s a wholesome recipe and goes well with steamed rice, lentils or just rice alone. It is made more in the rural areas of northern India and is sure to delight us all. So let’s start with it—

Ingredients:-For the gram flour batter

  1. Gram Flour or  Besan -1 cup.
  2. Salt – According to taste.
  3. Red Chilly Powder – 1 tsp.
  4. Asafoetida – A pinch.
  5. Garam Masala – 1/2 tsp.

For the curry

  1. Yam – 250 gms.
  2. Onions(made into a fine paste) – 2.
  3. Cumin – 1 tsp.
  4. Kasuri Methi – A pinch.
  5. Turmeric Powder – 1 tsp.
  6. Red Chilly Powder – 1 tsp.
  7. Ginger-Garlic Paste – 1 tsp.
  8. Cumin Powder – 1 tsp.
  9. Tomato Puree – 1 tbsp.
  10. Garam Masala – 1 tsp.
  11. Vegetable or Subzi Masala – 1 tsp.(optional).
  12. Dry Mango or Amchoor Powder – 1 tsp.
  13. Salt – (According to taste).

STEPS

Step 1

Scrape, wash and cut the yam pieces in medium-sized squares. Now blanch them for five minutes or till half done.

Step 2 

Now make the gram flour batter. For that, take a bowl. Add the given amounts of gram flour, salt, red chilly powder, turmeric powder, asafoetida,garam masala and using water make a thick batter out of it. Coat the yam pieces in it and shallow fry them till golden browned.

Take a kadhai. Add vegetable oil and splutter a pinch of cumin and kasuri methi in it. When it crackles add firstly turmeric powder, cumin powder, red chilly powder,ginger-garlic paste,garam masala and fry them for a minute. Now add the tomato puree and then add the onion paste. You can add chopped green chilies as well. Fry the masalas for two to four minutes and then add some dry mango or amchoor powder and some salt. Next, add the required amount of water for the gravy and after boiling it for two minutes drop in the fried yams. Simmer it for ten minutes.

Our Spicy Yam curry is done. Serve it with steamed rice, plain dal, chapatis or pooris.

Yam Fritters

YAM FRITTERS

Hello friends. Today while going through my refrigerator I came across some veggies namely peas, corn and yam. The day was a rainy one and I was in a mood to enjoy. And thus this idea came quick of making some fritters and I decided to do so with yam. Yam can be used in many ways. We generally make curries, stir-fries our of it but I decided to do something even better and thus I decided to make some crunchy munchy goodie from it. It turned out well. So let’s learn how to make a boring leisurely afternoon fun, with more taste.

Ingredients:-

  1. Yam – 250 gms
  2. Gram Flour or Besan – 250 gms
  3. Salt – According to taste
  4. Dry mango or Amchur powder – 1 tbsp
  5. Asafoetida or hing – A pinch
  6. Red chilly powder – 1 tsp
  7. Turmeric powder – 1 tsp
  8. Chaat masala(optional) – A pinch
  9. Garam Masala – 1 tsp
  10. Vegetable Oil – For Frying

STEPS

Step 1

Scrape, wash and cut the yam into thin strips and blanch it in a saucepan.

Step 2 

When the yam is firm but cooked remove it from gas and let it cool.

Step 3

Now take a vessel, add to it the given amounts of gram flour or besan, salt, turmeric powder, red chilly powder, dry mango or amchoor powder, asafoetida or hing, garam masala powder and make a smooth batter of it with water.

Step 4

Now heat oil in a wok. Dip the yam pieces in the batter and release in hot oil. Deep fry the yam until lightly browned. The fritters are done.

Step 5

Remove on tissue paper. Garnish by sprinkling some chat masala and serve with tomato or green chilly ketchup, green chutney, hummus, mayonnaise or other such dips.

Ginger,Yam And Green Chilly Pickle

GINGER, YAM AND GREEN CHILLY PICKLE

Hello friends. Today we’ll be making a very tasty pickle from ginger, yam and green chillies. This is a unique combination of a pickle with mild spices. It’s easy to prepare too. These ingredients are easily available and the taste is really great. I make it frequently in my kitchen and I hope you all will try it too. So let’s start with its making—

Ingredients:

  1. Ginger-50 gms
  2. Yam-250 gms
  3. Green chilly-100 gms
  4. Salt-According to taste
  5. Turmeric powder-1 tsp
  6. Red chilly powder-1 tsp
  7. Yellow mustard powder-2 tsp
  8. Achar masala-1 tbsp
  9. Hing-A pinch
  10. Mustard oil-1 tbsp
  11. Synthetic vinegar-1 tbsp
  12. Chaat masala-1 tsp

STEPS

Step 1

Firstly we will scrape ginger and yam and then along with green chillies, we will wash them all. We need to dry all the moisture from these cut veggies so we can let them dry in the fan. Next, we will grate our ginger and yam and cut the green chillies into very small pieces. Now in a borosil vessel, we will put our cut and grated ingredients, salt, turmeric powder, red chilly powder, asafoetida, yellow mustard powder,  achar masala, chaat masala, synthetic vinegar and stir them. Lastly, we will add mustard oil and give it all a good mix. We need to put this achar in sunlight for 3 days after which it gets ready to be eaten.

Our Ginger, Yam and Green Chilly Pickle is ready. Serve it with chapatis, pooris, naan curries and the like.
