DESI  BIHARI BHEL

Hello, and welcome to my cooking corner again. Today I am going to make Desi Bhel’, a rustic Bihari snack which is easy and funky to make in the evenings or anytime. It is not an elaborate recipe and requires not many ingredients. I usually try to showcase those recipes which are simply made from readily available ingredients. It is called a ‘poor man’s snack’ in the rural areas of Bihar and can be made in a jiffy. It is a crunchy, curried snack that is very interesting to prepare and can be made more so by adding the garnishing ingredients to it. This can be made with any lentil or a combination of them but it should be spicy to eat. To serve this bhel, we firstly make the dal fritters and then we curry them or pour the gravy over the fritters. Then we add the garnish of puffed rice, finely chopped onions, green chilies, tamarind juice, green chutney over it and serve. So let’s start with the recipe—

For the dal fritters:

  1. Chana Dal-250 gms
  2. Onion- 1
  3. Dry Red Chillies-3
  4. Cumin-1/2 tsp
  5. Salt-According to taste

For the gravy:-

  1. Onion-1
  2. Ginger Garlic Paste-1 tsp
  3. Turmeric Powder-1/2 tsp
  4. Coriander Powder-1 tsp
  5. Red Chilly Powder-1 tsp
  6. Garam Masala-1 tsp
  7. Dry Mango Powder-1 tsp
  8. Salt-According to taste
  9. Oil-2 tbsp
  10. Water-As needed

For the serving:-

  1. Puffed Rice (Murmura)-100 gms
  2. Onion-1(finely chopped)
  3. Green Chillies-2
  4. Green Chutney-1 tsp
  5. Tamarind Juice-1 tsp
  6. Chopped cilantro- For garnish(optional)
  7. Besan Sev-For garnish(optional)

STEPS

Step 1

20191031_003502.jpgWash and soak the chana dal for 6 hours. Chop the onion and green chilies finely. Now rinse the dal and grind it coarsely. Mix in chopped onion, dry red chilies, cumin, and salt. Soak tamarind in water. Mash the pulp in it to get a slightly thick juice of it. Add some black salt in it. Mix and keep aside. This will be used at the time of the final serving of our bhel as a garnish.

Step 2

Take a pan and add oil in it. Spread it around in the pan with  brush. Now make small balls from the batter and shallow fry in the pan. Take out and drain on tissue paper.

Step 3

Now to make the desi gravy of the bhel, take a pan and add oil in it. Add some finely chopped onions and green chilies. Fry for two minutes. Next add ginger garlic paste and the spices, turmeric powder, red chilly powder, coriander powder,garam masala, dry mango powder, and salt. Fry till done. Lastly, add water for a thick gravy. Simmer for five minutes before switching off the gas.

Step 4

To assemble our desi bhel, take a bowl and place the fritters in it. Now pour the gravy we just made over and around the fritters. Pour tamarind juice. Garnish with finely chopped onion, green chilies, and some green chutney. You can add some besan sev or freshly chopped cilantro over it too though it is optional.

Dhokla Idli Chat

Hello everyone.Welcome once again to my cooking corner. Today I’ll be sharing a quick and tasty recipe which has two fun ingredients idli and dhokla combined together with potato and panir and lots of drizzlers, red and green chutney to make an awesome perfect brunch or snack dish, so lively so fresh. So let’s start with this amazing snack—

Ingredients:-

  1. Idli-3
  2. Dhokla-3
  3. Curd-250 gms
  4. Potato-1
  5. Panir-100 gms
  6. Salt-According to taste
  7. Sugar-A pinch
  8. Dry Mango Chutney-2 tbsp
  9. Cilantro and Mint green chutney-2 tbsp
  10. Raw Peanuts-2 tbsp
  11. Green Chillies-2
  12. Red Chilly Powder-1 tsp
  13. Chat Masala-1 tsp
  14. Black Pepper Powder-A pinch
  15. Fresh Chopped Cilantro-For garnish

For the tempering:-(Optional)

  1. Black Mustard-1 tsp
  2. Asafoetida-A pinch

DSC03137.jpgTo prepare the chat firstly make idli and dhokla separately. Beat the curd and add salt, sugar and some red chilly powder. Shallow fry the peanuts.

Step 2

DSC03132.jpgPeel, chop and blanch the potatoes. Chop cilantro and green chilies. Make the sweet chutney along with the cilantro-mint green chutney. Cut the panir in cubes. Shallow fry them with the potato. Cut the idlis and dhoklas in four parts.

Step 3

DSC03133.jpgNow its time to assemble the dish. To do so, take a bowl. Add in the idli with the dhokla. Now add in the potatoes, panir, peanuts and sprinkle chat masala, black pepper powder, salt, red chilly powder all over. Lastly drizzle over the curd, dry mango chutney, green chutney and garnish it well with chopped cilantro and green chilies. You can also add the tempering of black mustard and asafoetida though I have not done so here.

Our  Dhokla Idli Chat is ready. Serve it.

Bread Chat

BREAD CHAT

Hello and welcome dear friends once again to my cozy cooking corner. We generally enjoy chats more than any other snack dish as it is so wholesome, spicy, fulfilling and even looks so great. We eat many kinds of chats like bhelpuri,papadi chat, raj kachori, aloo tikki chat, samosa chat and many others. But today I’ll be sharing a recipe of bread chat which I made today in the evening and was liked by everyone, especially my daughter. The dish is an instant one, hassle-free, equally healthy and with a fresh taste to make your mood fine. So let’s start with it—

Ingredients:-

  1. Bread – 2
  2. Potato -1
  3. Curd -200 gms
  4. Peanuts -1 tsp
  5. Salt, black and white -According to taste
  6. Green Chilly -1
  7. Red Chilly Powder -1/2 tsp
  8. Pepper Powder -1/2 tsp
  9. Chat Masala -A pinch
  10. Green Chutney -1 tsp
  11. Red Chutney -2 tsp
  12. Lemon Juice -1/2 tsp
  13. Besan Sev  and Cilantro -For garnish

STEPS

Step 1

IMG-5407.JPGCut the crust of the bread and dry roast it in a pan till golden browned. Boil and cut the potato into medium-sized cubes. Shallow-fry them in butter till browned and sprinkle some salt and black pepper over it. Chop the cilantro. Roast the peanuts.

Step 2

IMG-5410.JPGTake curd in a mixing bowl, beat it till smoothened and add white salt to it. Now assemble all the ingredients together to serve the dish.

Step 3

Take a bowl, add the toasted bread pieces, fried potato cubes, roasted peanuts, the beaten curd, salt, pepper powder, chat masala, red chilly powder, green and red chutney. Now sprinkle the besan sev, chopped green chilly and cilantro and some lemon juice over the dish.

Fish Bhel

FISH BHEL

Hello and welcome friends once again. Today I’m sharing with you a very creative, funky and really tasty recipe of a bhel made from fish. We generally eat puffed rice bhel but this bhel is tastier which will leave you asking for more. It’s made of basa fish and lots of spicy ingredients which will leave you asking for more. So let’s start making it—

Ingredients:-

  1. Fish(boneless)-150 gms
  2. Peanuts-1 tbsp
  3. Potato-Cheese Pops-7
  4. Pineapple-5 pcs
  5. Nuts(Cashews and Raisins)-1 tbsp
  6. Fresh Coconut-1 tbsp
  7. Namakpare-1 tbsp
  8. Garbanzo Beans-100 gms
  9. Salt-According to taste

For the fish fritters:-

  1. Boneless Fish(cut into strips)
  2. Salt-According to taste
  3. Turmeric Powder-1 tsp
  4. Garlic Paste-1 tsp

For the potato-cheese pops:

  1. Potato-1
  2. Cheese-1/2 cup
  3. Salt-According to taste
  4. Red Chilly Powder-1 tsp
  5. Oregano-1/2 tsp
  6. Gram Flour-3 tbsp
  7. Garam Masala-1 tsp
  8. Pepper Powder-1/2 tsp

STEPS

Step 1

IMG-5344.JPGWash and marinate the fish with salt, turmeric powder, and garlic paste. I have used basa fillets here, you can use any other ones too, but it must be boneless. Shallow-fry it.

Step 2

To make the potato-cheese pops, boil the potatoes, peel them and mash with a masher. Grate the cheese and add to the batter. You can alternately use panir to make the pops too. Add the salt, pepper powder, red chilly powder,garam masala, dry mango powder, oregano. Add the gram flour to the batter and make small balls from it and deep fry in oil.

IMG-5342.JPGBoil the garbanzo beans, dry them and then fry in some oil, taking care not to burn them.

Step 5

Fry the cashews and peanuts too. Chop the coconut into bite-sized pieces. Chop the cilantro and the mint leaves. Also, chop the pineapple into small pieces.

Step 6

To assemble the dish, take a plate and put the fried garbanzo beans in it. Now top it with fried fish fritters and potato-cheese pops. Next, add the chopped coconut pieces, peanuts,cashews,raisins and the diced pineapple. Splutter some fried mint leaves on top.Add some namakpare too.

Step 7

To make the topping sauce, take some tamarind paste, add water and sugar into it. Now make a chutney from coriander and mint and keep aside. Finally just before serving drizzle the tamarind sauce over the bhel. Then add the green chutney. You can add some dry mango powder chutney too. Squeeze some lemon juice over the bhel. Toss everything well and serve immediately.

Our yummy Fish Bhel is done. Serve it as a morning, brunch or evening snack. You can add some mayonnaise or mustard sauce also over the bhel to get that extra punch.
