Split Black Gram Pancakes With Poppy Seeds

SPLIT BLACK GRAM PANCAKES WITH POPPY SEEDS

Hello and welcome back. Today I’m sharing a salty pancake recipe made from split black gram with a sprinkling of poppy seeds on it to make it crunchier, tastier and super fun. So let’s start with it—

Ingredients:

  1. Split black gram – 250 gms.
  2. Salt – According to taste.
  3. Vegetable oil – For shallow frying.
  4. Water – According to need.
  5. Poppy seeds – 1 tsp.
  6. Black or white sesame – 1 tsp.

STEPS

Step 1

Wash, clean and soak the black gram overnight in water. The next morning grind the split black gram finely using some water to make a batter of dropping consistency.

Step 2

To this batter add some salt and mix it up. Now take a pan and spread a portion of the batter using a ladle and spread it on the pan. Now spread some poppy seeds on top of the pancake evenly and shallow fry it using some vegetable oil. Cook it on medium to high flame till browned on both sides.

The pancake is ready. It is crunchy and tasty.

Note point – 1. You can use the poppy seed for coating the pancake or switch it with black sesame seeds. You can make it with crushed coconut or powdered peanuts on top of the pancake while cooking.

You can have it as a snack with a cup of hot coffee or serve it with coconut chutney.

Vegetable Poha

VEGETABLE POHA

Hello dear friends and welcome once again to my corner. Today I’m going to share a popular breakfast recipe made from beaten rice and some vegetables called Poha. It is a regular dish in the whole of India and really liked in Maharashtra. It is healthy, tasty and easy to make. So let’s start making it—

Ingredients:

  1. Beaten rice(poha)-300 gms.
  2. Fresh vegetables like Cauliflower, brinjal, potatoes(cut into small pieces)-1/2 bowl each.
  3. Onions(chopped)-2
  4. Green Chillies(finely chopped)-2
  5. Turmeric powder -1/2 tsp.
  6. Red Chilly Powder -1/2 tsp.
  7. Cumin powder – 1 tsp.
  8. Subzi (vegetable)masala – 1 tsp.
  9. Garam Masala – 1 tsp.
  10. Cashew and Raisins -A handful.
  11. Salt – According to taste.
  12. Vegetable oil – 2 tbsp.

For Garnishing:–

Freshly chopped cilantro.

STEPS

Step 1 

Heat a heavy bottom cooking pan and add the given amount of vegetable oil to it. When it gets hot add the finely chopped onions and green chilies to it.

Step 2

Now when the onions are half fried, add salt, turmeric powder, red chilly powder, cumin powder, subzi or vegetable masala and fry everything again. Now add the chopped vegetables and after tossing them twice add some water(about 1 cup)to the pan and cook it covered till the vegetables get cooked.

Step 3

In the meantime take the beaten rice or poha and clean and drain the water.

Step 4 

Now going back to our vegetables, take the lid off the pan and check whether the veggies are done or not. When they are cooked add the garam masala,  beaten rice, cashew and raisins and fry it. When beaten rice gets softer fry the poha on high flame and garnish it with freshly chopped cilantro.

Our Vegetable Poha is done.

This is a healthy dish full with taste and is an ideal one to be eaten at breakfast. It can be served with coconut chutney and some fresh fruits.

Sweet And Tangy Aubergine

SWEET AND TANGY AUBERGINE

Hello and welcome everyone to my corner. Today I’m sharing a stir-fry recipe of aubergine and radish which is sweet and tangy both for better taste and yes, it is very healthy too. It can be had with hot chapatis and some homemade sweet mango chutney or yellow mustard chutney. So let’s start—

Ingredients:

  1. Aubergine – 250 gms.
  2. Radish – 100 gms.
  3. Green chilies -1
  4. Turmeric powder -1 tsp.
  5. Salt – according to taste.
  6. Dry mango powder or fresh lime juice – 1/2 tsp.
  7. Sugar- 1 tsp.

For tempering:

  1. Five spices – 1/2 tsp.
  2. Oil – 1 tbsp.

For garnish:-

1. Fresh coriander.

STEPS

Step 1

Wash and cut the aubergine and radish into small pieces.

Step 2

Now heat a cooking pan and add 1/2 tsp five spices to it. Next add the oil and when it gets hot add to it the cut veggies, aubergine and radish.

Step 3 

Next add some salt, turmeric powder, green chilies and fry on medium flame.

Step 4

When the veggies lose their rawness till half done, add the given amounts of dry mango powder and sugar and mix it up. Cook again for two minutes.

Step 5 

Garnish with freshly chopped cilantro. This veggie is done only in five minutes. It is now ready to be served.

Pumpkin With Spinach

PUMPKIN WITH SPINACH

Hello and welcome my friends to my corner. Today I’m sharing with you all a very healthy, oil-free recipe of greens with pumpkin. It’s a delicacy of the Mithila region of Bihar and is an easy to make recipe. So let’s start with it—

Ingredients:-

  1. Green pumpkin – 1
  2. Spinach – 200 gms.
  3. Radish – 1/2
  4. Salt – according to taste.
  5. Turmeric powder-1 tsp.

For tempering:-

  1. Five spices – 1 tsp.
  2. Green chillies – 2.
  3. Asafoetida – a pinch.
  4. Vegetable oil – 2 tbsp.

 

STEPS

Step 1

Wash, scrape and cut the green pumpkin into small pieces. Similarly, wash and cut the spinach. Cut the radish into thin pieces.

Step 2

Now pressure cook these veggies and when done strain them through a strainer to take out the water.

Step 3

Now take a cooking pan and add some vegetable oil to it. Next add the five spices, some green chillies and the asafoetida and let it splutter. Now add the boiled veggies, salt, turmeric powder and cook it for ten minutes till the vegetable gets dry and sauteed. Garnish it with fresh cilantro.

And hey, Pumpkin With Spinach is ready in a jiffy.

Mashed Papaya

Hello and welcome back. Today I’m sharing with you all a very simple dish made of papaya which is a boon for health and tastes equally great. So let’s start—

Ingredients:-

  1. Raw Papaya-1
  2. Green Chillies-3
  3. Black mustard powder-2 tbsp.
  4. Lemon juice-1 tbsp.
  5. Mustard oil-1 tbsp.
  6. Salt- According to taste.

STEPS

Step 1

Scrape, wash and cut the papaya after removing the seeds of it and boil it in a pressure cooker till done.

Step 2

Mash the papaya in a bowl and add to it the given amounts of black mustard powder, salt, green chillies, lemon juice and mustard oil.

Step 3

Mix everything up well. And our Mashed Papaya is ready.

Serve it in the main course.

Sponge Gourd With Split Bengal Gram

SPONGE-GOURD WITH SPLIT BENGAL GRAM 

Hello and welcome again. Today I’m sharing a very healthy greens and lentil recipe which is unique, super healthy and equally tasty. It can be had with chapatis or steamed rice and dal. So let’s start with it—

Ingredients:

  1. Sponge Gourd – 1 kg.
  2. Split Bengal gram(soaked for 3 hours) – 2 tbsp.
  3. Onions (big,finely chopped) – 2
  4. Five Spices(for tempering) – 1 tsp.
  5. Turmeric powder – 1 tsp.
  6. Whole Red Chilli Flakes – 1 tsp.
  7. Garam Masala – 1 tsp.
  8. Salt – According to taste.
  9. Vegetable oil – 1 tbsp.
  10. Chopped Coriander leaves – for garnish.

STEPS

Step 1 

Scrape and wash the sponge gourd. Cut it in small pieces.

Step 2

Heat a heavy bottom vessel and add the vegetable oil to it. Add the five spices and when the oil crackles add the whole red chilli flakes and add the onions.

Step 3 

Half-fry the onions and add the cut sponge gourd and soaked split Bengal gram to it. Now add salt and turmeric powder to it and adding a little bit of water(1/2 cup), cover the vessel and let it cook on medium flame.

Step 4 

When the water lessens add the garam masala and cook the vegetables till they get dry.

Step 5

Garnish the vegetables with chopped coriander. Serve it with the main course.

Jaggery Sweet Meats

JAGGERY SWEET MEATS

Hello and welcome dear friends. Today I’m sharing a sweet delicacy of Bihar made from refined flour and jaggery which is made for special occasions and is a great treat for kids and everyone else. So let’s start with it—

Ingredients:-

  1.  Refined flour (maida) – 400 gms.
  2. Jaggery powder – 1 1/2 cup.
  3. Cardamom – 2-3
  4. Water – according to need.
  5. Vegetable oil – 2 tbsp.
  6. Vegetable oil -for frying.

STEPS

Step 1

Take the given amount of refined flour and add 2 tbsp of vegetable oil to it. Then add water to make a firm dough.

Step 2

Take a little bit of dough and make a ball from it. Now flatten the ball with a rolling pin to make a small chapati-like shape.

Step 3

Now make slits on the chapati that you have made from one side to the other. Now roll the chapati from one corner to meet the other and press on ends of the chapati so that they stick together.

Step 4

Heat some oil in a vessel and fry these rolls in it till they turn pinkish. Drain out the excess oil on a tissue paper.

Step 5

Now heat some water in another vessel and add the given amount of jaggery powder to it. Stir it and let it get a bit thicker.

Step 6

When the liquid has become thicker, drop in the fried rolls in it and coat each side of roll properly in the jaggery mixture. Now turn the gas off and let it dry.

The fried rolls in jaggery or ‘Meethe Karele’ are ready. They can be had as a sweet snack.

Potato Cutlets

POTATO CUTLETS

Hello and welcome dear friends once again. Today I’m sharing a regular snack recipe which is made in most of the households for an evening snack and is really likeable. It’s Potato Cutlets with Sweet And Tangy Dry Mango Powder Chutney and is made in minutes. So let’s start with it—

Ingredients:-

  1. Potato – 4.
  2. Onion – 1 (small).
  3. Carrot (grated)- 1.
  4. Cauliflower (grated) – 2 tbsp.
  5. Peas – 2 tbsp.
  6. Salt – According to taste.
  7. Red chilli powder – 1 tsp.
  8. Garam masala – 1 tsp.
  9. Grated ginger – 1 tsp.
  10. Cashews and Raisins -A spluttering.
  11. Breadcrumbs – 1 bowl.
  12. Vegetable oil – to shallow fry.
  13. Chaat masala – A pinch.
  14. Coriander leaves – For garnish.

STEPS

Step 1 

Wash the potatoes and boil them. Peel the skin of the potatoes and mash them. Mix a pinch of salt and chat masala in the mashed potato.

Step 2

Take a wok and add 1 tsp oil to it. When it gets hot add finely chopped onions and saute it for 2 minutes. Now add the green peas and fry again. Now add salt, red chilli powder. When the masalas and the onions are semi-fried add the grated carrot and cauliflower and cover it with a lid for two to three minutes till the rawness of the veggies is gone and the veggies are cooked. Now add a pinch of garam masala and the cashew-raisin mixture. Fry all this together making sure they don’t get burnt. Finally, mix in some chopped coriander leaves. Let this mixture cool.

Step 3

Now make balls of medium shape out of the potato batter and making a small hole in the middle of it fill it up with the above-made carrot -cauliflower mixture. Now close the mouth of the potato ball and flatten it out on the palm of your hand slowly. Roll it up in bread crumbs and shallow fry them.

The tasty cutlets are ready to be enjoyed along with a cup of tea or coffee as a morning or evening snack. It is best served along with sweet dry mango powder chutney or green chutney.

Sweet And Tangy Dry Mango Powder Chutney

Ingredients:-

  1. Dry mango powder or Amchoor powder – 1 pack.
  2. Sugar – 1/2 cup.
  3. Red chilly powder – 1 tsp.
  4. Garam masala – 1 tsp.
  5. Ginger powder – 1 tsp.
  6. Water – 2 cup.
  7. Salt – According to taste.

STEPS

Step 1

Take a heavy bottom vessel, add 2 cups of water in it and put in on gas.

Step 2 

Add the full pack of dry mango powder to the water.

Step 3 

Now add the given amounts of sugar, red chilly powder,garam masala, dry ginger powder and salt to it.

Step 4 

Now let it cook on gas for five minutes. You will see that the mixture has become thicker.

Step 5

Let it cool. The chutney is ready. It can be stored in a jar for ten days.

Pumpkin Porridge

Hello and welcome dear friends. Today I’m sharing a yummy dessert recipe of Pumpkin Porridge which is a tasty change from normal routinely eating. It’s sweet, creamy, satisfying and really great for special occasions or weekend celebrations. So let’s start—

Ingredients:

  1. Green pumpkin(deskinned and grated) – 1.
  2. Milk – 1/2 litres.
  3. Dry fruits – Cashew nuts, raisins, almonds, pistachios.
  4. Milkmaid – 1/2 cup.
  5. Green Cardamom – 1 or 2.
  6. Sugar or sugar-free – 2 tbsp.
  7. Decrusted bread slices – 2.

STEPS

Step 1

Wash and peel the skin off the pumpkin. Use green pumpkin for this dish. Then grate it.

Step 2 

Boil milk and add the grated pumpkin into the milk. Then add two cardamoms, all the dry fruits, sugar or sugar-free and cook it in an open mouth vessel.

Step 3

When it gets thickened take it off the gas and add some milkmaid to it and add two pieces of de-crusted bread slices.

Step 4

Let it cool in refrigerator and enjoy the yummy taste and thick texture of this awesome porridge made from pumpkin. It’s worth giving a try.
