SPLIT BENGAL GRAM, SPINACH, AND POTATO TIKKIS

Hello, and welcome to my cooking corner again. You may have noticed that all of my recipes that I have made till now are simpler, healthier, and can be made in a jiffy. I really promote healthy cooking. Today I am sharing a recipe of tikkis made of split Bengal gram, spinach, and potato. It is a snack recipe. But you can have it anytime. I hope you will like this effort and try to make it. So let us try to make it—

Ingredients:-

  1. Split Bengal Gram(Chana Dal)-250 gms
  2. Spinach-50 gms
  3. Potato-1
  4. Gram Flour(Besan, roasted)-2 tbsp
  5. Onion-1
  6. Green Chillies-2-3
  7. Grated Ginger-1/2 tsp
  8. Grated Garlic-1 tsp
  9. Red Chilly Flakes-1/2 tsp
  10. Cumin Powder-1 tsp
  11. Dry Mango Powder-1/2 tsp
  12. Sugar-1/2 tsp
  13. Garam Masala-1 tsp
  14. Lemon Juice-1 tsp
  15. Salt-According to taste
  16. Vegetable Oil-2 tbsp

STEPS

Step 1

Wash and cook the Bengal gram in a vessel adding a pinch of salt making sure it is not mushy. Wash, chop and blanch the spinach. Boil and peel the potato. Chop the onions and green chilies finely. Grate the ginger and garlic.

B612_20200120_124733_173 (1)Take a pan. Add vegetable oil in it. Add in the chopped onions and green chilies. Now add the grated ginger and garlic. Fry for a minute. Now add the spices, salt, red chilly flakes, cumin powder, dry mango powder,garam masala, sugar and fry the spices well. Now add the blanched spinach and fry it for two-three minutes. Add the roasted gram flour(besan)and fry for a minute.

Step 3

Add the mashed lentil and boiled, grated potato to the spice batter. Add some chopped cilantro too to enhance the taste. Mix everything well and try to form a dough with the batter. Let the dough cool. Now add a dash of lemon juice and mix well.

Split Black Gram Flour, Potato, And Panir Patties

SPLIT BLACK GRAM FLOUR, POTATO, AND PANIR PATTIES

Hello, and welcome to my cooking corner again. Today I am going to share a recipe of split black gram flour, potato, and panir patties with you guys. Yesterday I bought some split black gram flour from the market. Normally in my household, I make salty pancakes from this flour. And it was my daughter’s idea to make patties out of it mixing in some potato and panir. And the idea was not bad.I have added some sugar too in this recipe. I hope you guys will like my idea. So do make it and let me know how it turned out. And now let’s learn the recipe…

Ingredients:-

  1. Split Black Gram Flour-100 gms
  2. Potato-2
  3. Panir(grated)-150 gms
  4. Onion-1
  5. Green Chillies-3
  6. Crushed Roasted Peanuts-2 tbsp
  7. Raisins-A few
  8. Turmeric Powder-1/2 tsp
  9. Cumin Powder-1 tsp
  10. Red Chilly Powder-1 tsp
  11. Ginger(grated)-1/2 tsp
  12. Garam Masala-1 tsp
  13. Dry Mango Powder-1/4 tsp
  14. Salt-According to taste
  15. Cilantro-As required
  16. Poppy Seeds-For coating
  17. Vegetable Oil-3 tbsp
  18. Dry Coconut(khopra)-Optional
  19. Sugar-1/4 tsp

STEPS

Step 1

B612_20200107_142419_886.jpgBoil the potatoes. Finely chop the onions, green chilies and cilantro. Peel the potato and mash it. Take a pan. Add the split Bengal gram flour and roast it for half a minute. Keep aside. Roast and crush the peanuts. Keep aside.

Step 2

Take a pan. Add vegetable oil and asafoetida. Now add the finely chopped onions, green chilies, grated ginger, and fry for half a minute. Now add the salt, turmeric powder, red chilly powder, cumin powder,garam masala, raisins and fry again. Next, add the roasted flour. Now add the mashed potatoes and fry for half a minute. Also, add the dry mango powder and a pinch of sugar. Add the grated panir. Fry everything well for half a minute and switch the gas off. Mix in some cilantro. You can also mix some dry coconut but it is optional.

B612_20200107_154603_419.jpgMake any shape from the batter and coat in poppy seeds. Shallow fry the patties till golden brown and done. Serve with mayo or a dip of your choice.

Shallow Fried Potato, Lentil, And Onion Tikkis

SHALLOW FRIED POTATO, LENTIL AND ONION TIKKIS

Hello and welcome to my cooking corner again. Today I’ll be sharing a snack recipe of Lentil Tikkis with potato and onion which is really handy to make and is ready in a jiffy. It is tasty and requires no special ingredient to make. Tikkis are eaten all over in India and are a very popular snack with the people here. People generally enjoy and relax while having tikkis along with tea in the evening. We make potato tikkis, different kinds of lentil tikkis, chicken and fish tikkis, panir tikkis and mixed vegetable tikkis.  Today, I have made this tikki with chana dal, onion, and potatoes, mixed in mild spices which is tasty to eat and quite easy to prepare. I hope you guys will like it and give it a try sometime. So let’s start with the making:-

Ingredients:-

  1. Split Bengal Gram or Chana Dal-250 gms
  2. Potato-1(big)
  3. Onion-1(big)
  4. Red Chilly flakes-1 tsp
  5. Cumin-1/2 tsp
  6. Garam Masala-1 tsp
  7. Grated Ginger-A pinch
  8. Dry Mango Powder or Amchoor Powder-1 tsp
  9. Salt-According to taste
  10. Coriander-1 tbsp(chopped)
  11. Vegetable Oil-  For frying

STEPS

Step 1

Wash, soak the dal overnight. Grind it coarsely in a grinder. Chop the onions and keep aside. Boil the potatoes and grate them with a grater.

Step 2

20190925_053031_20190925053734405.jpgTake a bowl. Add the ground dal, grated potato, chopped onion and parsley, grated ginger, red chilly flakes,garam masala, cumin,amchoor powder, salt, and coriander and mix it well. Shape the patties as you want to. Keep aside.

Step 3

Now heat a non-stick pan and add some oil. When the pan is hot enough, place the patties in the pan and fry them till golden brown.

Our Shallow Fried Potato, Lentil, And Onion Tikki is ready. Serve it as an afternoon or evening snack with tea or coffee.

Steamed Panir And Carrot Balls

STEAMED PANIR AND CARROT BALLS

Hello, and welcome to my cooking corner again. Sorry for the late post because I was down with viral fever. Today I am going to share a simple, healthy, steamed dish of panir with carrot. It is a snack recipe and you can make it in a jiffy whenever you want. It goes well with salads or any dip. So let’s start with the recipe—

Ingredients:-

  1. Panir(cottage cheese)-100 gms
  2. Carrot(grated)-1
  3. Onion-1
  4. Coconut(grated)-2 tsp
  5. Green Chilly Paste-1/2 tsp
  6. Cornflour-2 tsp
  7. Asafoetida-A pinch
  8. Garam Masala-1/2 tsp
  9. Salt-According to taste
  10. Sugar-1/3 tsp
  11. Freshly chopped coriander-1 tsp
  12. Oil-For shallow frying

For the tempering:-

  1. Black Mustard-1/3tsp
  2. Green Chilly-3
  3. Curry Leaves-A few
  4. Oil-1 tsp

STEPS

Step 1

Wash, peel and grate the carrot. Grate the panir. Chop the onion finely. Now mix panir, carrot, onion and green chilly paste, cornflour, grated coconut, asafoetida,garam masala  salt, chopped coriander and a pinch of sugar in a bowl and knead to a dough.

Step 2

Make balls from the dough and steam it in a steamer. When its done transfer to a plate and heat a pan. Shallow fry the balls till brown. Now, heat the pan again and add the tempering ingredients in it. When it splutters, add the panir balls.

Our Steamed Panir And Carrot Balls are done. Serve with a sauce or dip of your choice. Here I have done so with mustard sauce.

Shallow Fried Macaroni And Potato Tikkis

SHALLOW FRIED MACARONI AND POTATO TIKKI

Hello, and welcome everyone to my cozy cooking corner again. It is the rainy season and a well suited time to have ‘baarish wale pakore with ginger tea’.Generally, I don’t encourage eating fried dishes but yes, sometimes you can try to bend the rules a bit. We make pakoras of many types and today I am making a pakora of macaroni with potatoes and some mild spices. I think some of you guys will be knowing the recipe. You can have it at breakfast or at brunch. So let’s enjoy making macaroni and potato tikkis and celebrate the goodness and onset of pleasant monsoons in India—

Ingredients:-

  1. Macaroni-200 gms
  2. Potato-1 1/2
  3. Onion-1
  4. Green Chillies-2
  5. Ginger-Garlic Paste-1 tsp
  6. Refined Flour-1/2 cup
  7. Turmeric Powder-1/2 tsp
  8. Red Chilly Powder-1/2 tsp
  9. Cumin Powder- 1/2 tsp
  10. Garam Masala- 1 tsp
  11. Mint Leaves-1/2 cup
  12. Chat Masala-1/2 tsp
  13. Salt-According to taste
  14. Vegetable oil for shallow frying

STEPS

Step 1

20190709_232332.jpgBoil the macaroni till done. Boil potatoes and chop the onions and green chilies finely. Chop the mint leaves too.

Step 2

Take a mixing bowl. Add in the boiled macaroni, mashed potato, onions, green chilies,ginger-garlic paste, turmeric powder, red chilly powder, cumin powder,garam masala, mint leaves, chat masala and salt and mix well.

20190709_232234.jpgHeat 1 tbsp oil in a frying pan. Make out medium-sized patties from the batter and dust it in some flour. Shallow fry the patties out in batches. Drain excess oil on tissue papers.

Our Shallow Fried Macaroni And Potato Tikkis are done. Serve with mustard or tomato sauce or with any dip of your choice.

Buttery Prawns With Garlic And Amaranth Stem

BUTTERY PRAWNS WITH GARLIC AND AMARANTH STEM

Hello and welcome everyone to my cooking corner once again. Today I will be sharing a very easy and simple dish of Prawns With Garlic And Amaranth Stem with you. It is tastier, healthier and can be prepared in minutes. The dish is flavourful with a garlicky touch and the lemon juice adding the much needed satisfying touch to it. I liked this simple preparation very well hoping that you will too. So let’s start with the making—

Ingredients:-

  1. Prawns(medium sized)-100 gms
  2. Amaranth Stems-50 gms
  3. Garlic-4 pods
  4. Red Chilly Flakes-1/2 tsp
  5. Pepper Powder-1/2 tsp
  6. Turmeric Powder-1/2 tsp
  7. Salt-According to taste
  8. Butter-2 tbsp
  9. Lemon Juice-1 tsp(For garnish)

DSC04013_20190423081757315.jpgWash and clean the prawns. Marinate it with salt, turmeric powder, and chilly flakes and keep aside for twenty minutes. Cut the amaranth stems into small pieces.

Step 2

Take a pan. Add butter and 4 pods of garlic. Fry it for a minute. Add the chilly flakes. Now add the cut amaranth stems and fry for a minute again before adding some water to boil.

DSC04024_20190423091836848When the water dries up and the stem is tender, add the marinated prawns, pepper powder and fry it for ten minutes. Cover and cook everything together till the spices are evenly mixed.

Our Buttery Prawns With Garlic And Amaranth Stem is done. Garnish by squeezing some lime juice over the dish. Serve it with buttered toasts and tea.

Chicken And Lentil Calzone

CHICKEN AND LENTIL CALZONE

Hello guys, welcome to my cozy corner again. Today I am going to share a recipe of Chicken And Lentil Calzone which is my version of Calzones that I came across reading in some magazine. A Calzone is an oven-baked, folded pizza which originated in Naples in the 18th century. It is generally prepared from a salted dough, filled with ham, chicken, vegetables, lots of cheese and also an egg. And my idea of making it is a bit simpler which has some lentil and minced meat fried in light spices and onions. It is an easy recipe which you can try as a snack. I hope you will like it. So, here is the recipe—

  1. Chicken Keema – 200 gms
  2. Chana Dal – 100 gms
  3. Onion – 2
  4. Ginger-Garlic Paste – 1/2 tsp
  5. Turmeric Powder – 1/2 tsp
  6. Cumin Powder – 1/2 tsp
  7. Red Chilly Powder – 1/2 tsp
  8. Fennel Powder – 1/2 tsp
  9. Dry Mango Powder – 1/2 tsp
  10. Garam Masala – 1 tsp
  11. Salt – According to taste
  12. Sugar – A pinch

For the calzone wrappers:

  1. Refined Flour – 400 gms
  2. Baking Powder – 1/4 tsp
  3. Vegetable Oil – 2 tsp
  4. Water – for making the dough

STEPS

Step 1

Take refined flour in a bowl. Add baking powder and oil in it. Make a pliable dough from it. Chop the onions finely. Boil the chana dal.

Step 2

DSC03585_20190126045946019.jpgTake a pan, add oil. Now add the finely chopped onions. Add ginger garlic paste and saute. Now add spices, salt, turmeric powder, red chilly powder, cumin powder, fennel seed powder,garam masala, dry mango powder, sugar and saute it. Now add the chicken keema and saute for two minutes. Add some water and let the keema cook. Dry it up.

Step 3

Next, add the boiled chana dal and saute everything together for a minute. Cool it.

Step 4

To make the calzones, take one portion of the dough and make a small chapati from it. Fill some of the keema batter in the middle of the chapati, fold it from the middle and stick it to the other end of the chapati using some water. Do so for all of them.

dsc03579_20190126050153193Take a pan again. Add vegetable oil. Drop the prepared calzones one by one in it and shallow fry them till crisp, browned and done. Soak any extra oil using a tissue paper.

Our Chicken And Lentil Calzone are ready. Serve it with mayonnaise or a dip of your choice.

Mixed Veg And Panir Mini Parantha with Onion And Garlic Chutney

 MIXED VEG AND PANIR MINI PARANTHA WITH ONION AND GARLIC CHUTNEY

Hello and welcome to my cooking corner again. Hope you all are doing fine. Today I am going to make mini paranthas with vegetable and panir stuffing and I will serve it with onion and garlic chutney. I tried this idea for my kids and they liked it. I hope you too will try to make it sometime. So let’s start with it—

Ingredients:-For the parantha dough:-

  1. Refined Flour-400 gms
  2. Vegetable Oil-2 tbsp
  3. Water-For making dough

For the veggie filling:-

  1. Cauliflower-1/2 of 1
  2. French Beans-25 gms
  3. Carrot-25 gms
  4. Peas-25 gms
  5. Onion-1
  6. Panir or Cottage Cheese-25 gms
  7. Green Chillies-2
  8. Ginger-Garlic Paste-1/2 tsp
  9. Cumin Powder-1/2 tsp
  10. Garam Masala-1/2 tsp
  11. Dry Mango Powder-1/2 tsp
  12. Salt-According to taste
  13. Vegetable oil- For shallow frying
  14. Chat Masala-A pinch
  15. Grated Cheese-For garnish(optional)

STEPS

Step 1

To make the parantha dough take refined flour in a bowl. Add vegetable oil and using water make a pliable dough of it. Keep aside.

Step 2

dsc03474_20190105074053631For the stuffing, chop all the vegetables very finely and blanch them. Chop the onions and green chilies too very finely along with panir. Take a pan and add 2 tsp of oil in. Now add chopped onions, green chilies, ginger garlic paste and fry it. Now add the blanched veggies and remaining spices, cumin powder,garam masala, dry mango powder, salt, chat masala and fry for 1 more minute. Lastly, mix in the cubed panir. Let the veggie mix cool.

Step 3

To make the paranthas, take one portion of the dough and make out a chapati from it. Make another chapati. Now cut the two chapatis in four equal portions.

Step 4

To make the mini paranthas, take one part of the chapati and put 2 tbsp of filling on it. Now take the other chapati and place it on top of the first one. Seal it by pressing from the top and bottom sides and then make small curves on the edges with your fingers. Do so for all the remaining ones.

Step 5

Now take a pan for shallow frying of the paranthas. And brush it with some oil. Place the mini paranthas on it and shallow fry them till browned and crisp.

Note point-You can add some grated cheese on top of the veggie filling at the time of sealing the parantha.

OurMixed Veg And Panir Mini Paranthas are ready. Serve it with onion and garlic chutney.

Onion And Garlic Chutney

Ingredients:-

  1. Onion -1
  2. Ginger-A small piece
  3. Garlic Pods-2
  4. Red Chilly -2
  5. Peanuts- 1 tbsp
  6. Salt – According to taste
  7. Vegetable Oil-1 tbsp

STEPS

Step 1

Take a pan and roast all the ingredients except the last two. Let them cool.

Step 2

Take a chutney jar and add all the above-roasted ingredients in it. Add some water and grind it to a smooth paste.

Step 3

Our Onion And Garlic Chutney is ready.

Shallow Fried White Yam

SHALLOW FRIED WHITE YAM

Hello and welcome to my cooking corner again. Today I will be making a very simple, tasty, snack idea called Shallow Fried White Yam. It is very healthy and a great way to pass time. There are many varieties of yam available in the market like purple yam, Chinese yam, water yam. I have chosen white yam here. I make it frequently and I hope you too will like it. So let’s start—

Ingredients:-

  1. White Yam-250 gms
  2. Gram or Wheat Flour-150 gms
  3. Salt-According to taste
  4. Turmeric Powder-1/2 tsp
  5. Red Chilly Powder-1/2 tsp
  6. Coriander Powder-1/2 tsp
  7. Asafoetida-A pinch
  8. Garam Masala-1 tsp
  9. Dry Mango Powder-1 tsp
  10. Vegetable Oil-For shallow frying

STEPS

Step 1

Wash, scrape and cut the yam into slightly thick roundels.

Step 2

Mix the yam pieces with gram or wheat flour, salt, turmeric powder, red chilly powder, asafoetida,garam masala, coriander powder, dry mango powder. Toss everything so that the spice mix is well mixed with the yam pieces. In coating, you can use rice flour too.

DSC03311.jpgTake a pan. Smear it with oil and shallow fry the yam roundels till cooked, slightly crisp and browned. If need be, cook the yam covered with a lid. Cook it on a medium flame for five minutes. Then increase the flame on high and cook for two minutes. Add some chat masala before serving.

Our Shallow Fried White Yam is done. Serve it with sweet onion dip or any other dip of your choice. Serve it as an accompaniment to lunch or dinner platters or have it as a snack with some tea.
